2 tablespoons e.v. olive oil
1/2 teaspoon freshly grated black pepper
1 teaspoon dried oregano
1 cup 250 grams Greek fava (or hummus)
2-3 boiled eggs (quartered)
1/2 cup Kalamata olives or a mix of green and black olives
1 cup sliced cucumber
1 cup cherry tomatoes or sliced tomatoes
5 oz (140 grams) yellow cheese, cubed
1/4 cup nuts (like almonds, walnuts, pistachios)
2-3 roasted red bell peppers from a jar, sliced
2 pita bread (sliced)
8-12 breadsticks
1/4 cup anchovies (omit those for a vegetarian platter)
Extra olive oil, dried oregano, and freshly grated black pepper for serving
Optional: 1-2 tablespoons capers

Steps:

  • Mix the katiki with the olive oil, the oregano, and the black pepper.
  • Arrange everything on a platter and drizzle with e.v. olive oil. Sprinkle with dried oregano and black pepper.
  • Serve with ouzo, tsipouro, or cold white wine.

1 package (8 ounces) cream cheese, softened
1 cup sour cream
1/2 cup Greek vinaigrette
2 cans (2-1/4 ounces each) sliced ripe olives, drained
2 medium tomatoes, seeded and chopped
1 small red onion, chopped
1 large green pepper, chopped
1 large sweet red pepper, chopped
1 large cucumber, seeded and chopped
1 cup (4 ounces) crumbled feta cheese
Pita breads, cut into wedges or baked pita chips

Steps:

  • In a small bowl, beat the cream cheese, sour cream and vinaigrette until blended. Spread onto a large serving plate or two pie plates. Layer with olives, tomatoes, onion, peppers, cucumber and cheese. Serve with pita breads.

1 (4 ounce) package kasseri cheese
1 tablespoon water, or as needed
¼ cup all-purpose flour, or as needed
1 tablespoon olive oil
2 tablespoons brandy, at room temperature
½ lemon, or to taste
1 tablespoon freshly chopped Italian parsley

Steps:

  • Brush each side of the kasseri cheese with water. Dredge both sides in flour, making sure the surface is completely covered.
  • Preheat a well seasoned cast iron skillet on medium-high heat until smoking. Pour in olive oil. Carefully place the floured cheese in the hot oil. Cook until cheese begins to ooze and a golden brown crust forms, about 2 minutes. Quickly flip cheese over with a spatula. Fry until bottom is golden brown, about 30 seconds more.
  • Remove skillet from heat and transfer onto a napkin-lined plate. Pour brandy over the cheese. Light the brandy using a fireplace lighter. Now you can exclaim "Opa!" and marvel at the fire. Squeeze some lemon juice on top to extinguish the last few flames and garnish with parsley.

2 (4 ounce) packages feta cheese, crumbled
1 garlic clove, pressed
1 (10 ounce) package frozen spinach, thawed
1 (7 ounce) jar roasted red peppers, chopped
1/3 cup almonds, chopped
crackers or bread

Steps:

  • Combine cream cheese and feta cheese.
  • Add garlic and mix.
  • Drain and chop the spinach and add to the cheese mix.
  • Line a medium bowl with plastic wrap
  • Layer half of the cream cheese mixture
  • Add the chopped red pepper in the middle to give a layered effect.
  • Finish with the rest of the cream cheese mixture.
  • Cover with plastic wrap.
  • Refrigerate at least 6 hours.
