CRISPY SESAME CHICKEN

Level up a take-out favorite by making this crispy sesame chicken in easy sticky sauce at home. Add rice or noodles for a delicious family dinner.

Number Of Ingredients 15

500 g (1lb) chicken breasts (cubed into bite-size pieces )
1 egg (beaten)
2 tbsp soy sauce
1 cup flour
½ cup cornstarch / cornflour
oil (for frying)
1 tbsp canola / vegetable oil
3 garlic cloves (crushed )
1/3 cup soy sauce
1/3 cup water
¼ cup brown sugar (You could add up to one third cup sugar if you prefer the sauce to be sweeter.)
2 tbsp rice vinegar / lemon juice
2 tsp sesame oil
2 tbsp sesame seeds
1 tbsp cornstarch / cornflour (mixed with 2 tbsp water )

Steps:

  • Place the chicken in a bowl then add the egg and soy sauce. Massage the egg and soy into the chicken well then allow to sit for a few minutes while you make the sauce.
  • To make the sauce, heat the oil in a large pan then cook for garlic for 30 seconds until fragrant.
  • Pour in the soy sauce, water, sugar, vinegar and sesame oil. Bring to a simmer then pour in the cornstarch slurry. Reduce the heat then simmer until the sauce is thick and glossy. Remove from the heat and set aside.
  • Heat enough oil to fry the chicken in a deep pan or pot. Place a wire rack over a sheetpan.
  • Combine the flour and cornstarch in a separate bowl then coat the chicken in the flour mixture, making sure each piece is completely covered.
  • Carefully add the chicken to the hot oil, cooking in batches to avoid over-crowding the pan, until the chicken is golden brown and crisp. Remove with a slotted spoon and allow to drain on the wire rack while you cook the remaining chicken.
  • Place the pan with the sauce back on the heat and bring to a simmer. Add the fried chicken and sesame seeds to the pan then toss to coat the chicken in the sauce. Season to taste with more soy, vinegar or sesame oil as necessary then serve over rice or noodles.

Each herb or pulses has their own medicinal qualities and hence enhance the food value and taste of the particular dish. Poultry and fish items are staple in cuisines of India's north east and there are numerous recipes of chicken cooked with various ingredients. Today's recipe is such a chicken dish cooked with minimal spices and sesame seeds. It is to be noted that this recipe is an easy recipe and can be cooked ahead in batches to serve a large number of guests. 1 ib chicken
4 onions, mediumly sliced
2 tablespoons ginger-garlic paste
1 tea spoon cumin powder
1/2 cup sesame seeds, washed and soaked for 15 minutes
50 ml mustard oil
3 green chilies
salt
turmeric

Steps:

  • Wash the chicken.
  • Heat a deep bottomed vessel and put the oil.
  • saute the onions and chillies till they turn golden brown.
  • Add the chickens.
  • Add salt and turmeric according to taste.
  • Saute and cover with the lid.
  • Keep the heat minimum.
  • After 5 minutes, add the cumin powder and ginger garlic paste.
  • Mix well and cover with the lid again.
  • Cook for 15 minutes or till the chicken is almost done on low heat.
  • Stir occasionally.
  • Meanwhile, make paste of the soaked sesame seeds.
  • As the chicken is almost done, add the sesame paste and mix well.
  • Add One glass of water and bring it to boil.
  • Cover with the lid.
  • Cook till the water dries up.
  • Adjust the salt and voila! Your exotic chicken dish is ready.

Another interesting dish from India. This is a favorite of my son and his fiends. I have to cook this for them nearly every week. With just a few steps to follow it's easy.

3 lbs skinless chicken, and jointed
2 ounces ghee (clarified butter)
1 teaspoon ground black pepper
3 bay leaves, crumpled
1 tablespoon turmeric
1 pinch chili powder
1/2 teaspoon clove
1 teaspoon cardamoms, split open
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
6 garlic cloves, crushed and chopped
2 onions, chopped
1 cup chicken stock

Steps:

  • Heat the ghee and fry all of the spiceswith the garlic.
  • Add the chicken and brown all over. Add the onion and cook over low heat for 20 minutes.
  • Stir in the stock and simmer 1 hour or till meat is tender.
  • Serve.
