2 lbs fresh asparagus, trimmed
kosher salt & freshly ground black pepper
1/4 cup part-skim ricotta cheese
2 tablespoons white wine vinegar
1 small tart apple, peeled and grated
1/4 cup low-fat Greek yogurt
2 teaspoons fresh dill, chopped and divided
2 teaspoons fresh horseradish, peeled and grated

Steps:

  • Preheat oven to 450 degrees F; spray a large rimmed baking pan with cooking spray.
  • Place asparagus, in a single layer, on pan and season with salt and pepper; roast in oven, shaking pan occasionally, until tender crisp, about 15 minutes total.
  • Transfer to a serving platter and let cool.
  • To make the sauce: Puree ricotta cheese and vinegar in a food processor or blender; transfer to a bowl.
  • Stir in grated apple, yogurt, 1 teaspoon chopped dill and grated horseradish; spoon over asparagus and garnish with remaining fresh dill.

2 lb small red potatoes, cut into 3/4-inch pieces (about 6 cups)
1 1/2 lb fresh asparagus, trimmed, cut into 1-inch pieces
1/2 cup sour cream
1/4 cup cream-style prepared horseradish
2/3 cup half-and-half
2 teaspoons salt
1/4 cup fresh dill sprigs

Steps:

  • In 4-quart saucepan, place potatoes and enough water to cover by 1 inch. Heat to boiling; reduce heat to medium. Cook uncovered 10 to 12 minutes. Add asparagus. Cover; cook 2 to 3 minutes longer or until potatoes are tender when pierced with fork and asparagus is crisp-tender. Drain; rinse with cold water.
  • In large bowl, mix sour cream, horseradish, half-and-half and salt with whisk until smooth. Add potatoes and asparagus; gently toss to coat. Fold in dill. Cover; refrigerate at least 2 hours before serving.

2 bunches asparagus (about 2 pounds), trimmed and halved lengthwise
1 tablespoon extra-virgin olive oil
2 1/2 tablespoons unsalted butter, softened
1 1/2 tablespoons drained bottled horseradish

Steps:

  • Preheat oven to 450°F with rack in middle.
  • Toss asparagus with oil and 1/4 teaspoon each of salt and pepper in a 4-sided sheet pan. Roast until just tender, about 10 minutes.

1 1/2 pounds very thin asparagus
2 tablespoons freshly grated horseradish
1 shallot, finely chopped
1/4 cup Champagne vinegar
Freshly ground black pepper
1 cup vegetable or canola oil
2 tablespoons mixed fresh herbs, roughly chopped
1 hard-boiled egg, finely chopped

Steps:

  • Bring a large pot of salted water to a boil. Add the asparagus and cook until just tender. Plunge into a bowl of ice water. Drain.
  • In a small bowl, whisk together the horseradish, shallot, Champagne vinegar and a little salt and pepper. Whisk in the oil. Taste and adjust seasoning.
  • Divide asparagus among 4 dishes and dress with horseradish vinaigrette. Sprinkle the herbs and chopped egg over asparagus.

1/4 cup extra-virgin olive oil
1 tablespoon whole-grain mustard
1 teaspoon prepared horseradish
Juice and zest of 1 lemon
Kosher salt and freshly ground black pepper
2 large bunches thick asparagus, trimmed
2 red endive, quartered
1 large yellow onion, cut into 1/2-inch-thick rings
Olive oil, for cooking
Fresh tarragon leaves, optional, for serving

Steps:

  • Set up a grill for even medium-high heat. If using a charcoal grill, build coals evenly along the bottom.
  • Whisk together the extra-virgin olive oil, mustard, horseradish, lemon juice and zest in a bowl. Season with salt and pepper. Set aside. Place the asparagus, endive and onions on a rimmed baking sheet and drizzle with the olive oil. Sprinkle with salt and pepper and toss to coat. Place on the grill and cook, turning once, until tender-crisp and lightly charred, 4 to 5 minutes. Serve drizzled with the dressing and topped with the tarragon leaves, if using.

Asparagus and Tomato Skewers with Honey Mustard-Horseradish Sauce image

1/4 cup Dijon mustard
1/4 cup clover honey
3 tablespoons prepared horseradish, drained
2 tablespoons finely chopped fresh mint leaves
Salt and freshly ground black pepper
1 pint cherry tomatoes on the vine
Wooden skewers soaked in water
1 pound asparagus, trimmed
Olive oil

Steps:

  • Preheat the grill. Whisk together the mustard, honey, horseradish and mint in a bowl and season with salt and pepper, to taste. Let sit at room temperature for at least 15 minutes to allow the flavors to meld.
  • Thread the tomatoes onto skewers and put them into a large bowl. Add the asparagus and drizzle with a little oil. Season with salt and pepper, to taste. Put the tomatoes on the grill and cook until charred on both sides. Grill the asparagus for about 2 minutes per side. Put the vegetables on a platter and drizzle them with the mustard sauce. Serve hot or at room temperature.
