1 pound top sirloin, cut crosswise into thin strips
2 teaspoons Thai red curry paste
4 tablespoons Asian stir-fry oil or peanut oil
12 ounces asparagus, trimmed, cut into 1 1/2-inch lengths (3 1/2 cups)
1 1/2 cups canned unsweetened coconut milk
1/3 cup chopped fresh basil
Lime wedges

Steps:

  • Place beef and curry paste in medium bowl. Stir to coat beef thoroughly. (Can be made 8 hours ahead. Cover; chill.)
  • Heat 2 tablespoons oil in large skillet over high heat. Add asparagus and sauté until crisp-tender and beginning to char slightly, about 3 minutes. Using slotted spoon, transfer asparagus to bowl.
  • Add remaining 2 tablespoons oil to skillet. Add curry-coated beef in single layer. Cook over high heat without stirring until bottom of beef begins to char slightly, about 2 minutes. Add coconut milk and cook, stirring often, until sauce is bubbling and slightly reduced, about 2 minutes. Add asparagus and heat through. Stir in basil. Squeeze lime wedges over mixture and serve.

¾ cup mayonnaise
¼ cup sour cream
2 tablespoons curry powder

Steps:

  • Bring a pot of lightly salted water to a boil. Add asparagus, and cook for about 7 minutes, until bright green. Remove to a bowl of ice water to cool. Drain and set aside.
  • In a medium bowl, stir together the mayonnaise, sour cream and curry powder. Transfer to a nice serving dish, and serve with chilled asparagus.

2 teaspoons extra-virgin olive oil
1 pound asparagus spears, trimmed
Salt and pepper
2 tablespoons cashews (recommended: Planters) plus roughly chopped cashews, for garnish
1/2 cup light mayonnaise (recommended: Best Foods)
1 teaspoon curry powder (recommended: McCormick's)
1/2 teaspoon lemon juice (recommended: ReaLemon)
Pinch salt

Steps:

  • Preheat oven to 425 degrees F. Line baking sheet with aluminum foil.
  • On baking sheet, drizzle oil over trimmed asparagus. Season with salt and pepper, to taste. Toss together to evenly distribute oil and seasoning. Roast in oven for 8 to 10 minutes depending on the size of the asparagus. While asparagus is roasting, prepare mayonnaise.
  • Process 2 tablespoons of cashews in a blender until finely ground. In a small bowl, stir to combine ground cashews, mayonnaise, curry powder, lemon juice, and salt. Set aside.
  • To serve, divide asparagus among 4 plates and top with a dollop of mayonnaise mixture. Garnish with a few chopped cashews.

1 (3 to 4 pound) whole chicken, cut up into 8 pieces
Salt and freshly ground black pepper
2 cups flour
1 tablespoon good quality curry powder
1 teaspoon cayenne pepper
Mango-Yogurt Sauce, recipe follows
Asparagus with Red Chile Oil, recipe follows
2 tablespoons olive oil
1 small yellow onion, finely diced
2 cloves garlic, finely chopped
2 tablespoons good quality curry powder
1/4 cup water
2 cups plain yogurt
1 ripe mango, peeled, seeded and coarsely chopped
2 tablespoons fresh lime juice
Salt and freshly ground pepper
1 pound asparagus, trimmed
1/4 cup red chile oil, recipe follows
Salt
1 cup pure olive oil
2 dried New Mexico chile peppers (available at specialty markets), stemmed and seeded
1/2 teaspoon dried chile de arbol (available at specialty markets)
1 teaspoon ancho chile powder (available at specialty markets)

Steps:

  • Heat 1 inch of oil in a large, deep cast iron skillet over high heat to 350 degrees F.
  • Season chicken well on both sides with salt and pepper. Place the flour in a brown paper bag, add 1 tablespoon of salt, 2 teaspoons black pepper, curry powder, and cayenne pepper, and shake to combine.
  • Add the chicken 3 pieces at a time to the bag, and shake well to coat each piece with the flour. Put them on a rack when you have finished.
  • Slowly add the chicken pieces to the hot pan skin-side down. Cover the skillet and reduce the heat to medium high and cook for 7 minutes, remove the cover, turn the chicken over and continue to cook for 6 to 7 minutes, or until golden brown and cooked through. Drain on paper towels and transfer to a platter and drizzle with Mango-Yogurt sauce or serve alongside. Serve with Asparagus with Red Chile Oil.
  • Heat olive oil in a small saute pan over medium-high heat. Add the onions and cook until soft. Add the garlic and cook 1 minute longer. Add the curry powder and water and cook for 5 minutes. Remove from the heat and let cool to room temperature.
  • Place the yogurt, mango, onion mixture and lime juice in a food processor and process until smooth. Season with salt and pepper.
  • Preheat oven to 400 degrees F. Toss asparagus with oil and season with salt. Roast for 8 to 10 minutes or until just cooked through.
  • Place all ingredients in a blender and puree. Strain through a fine strainer. May be refrigerated up to 3 days. Serve at room temperature.

2 large leeks (white and pale green parts only), halved, thinly sliced
1 1/2 teaspoons curry powder
2 1/2 pounds asparagus, trimmed, cut into 1-inch pieces (about 6 cups)
1 8-ounce container crème fraîche or sour cream
6 tablespoons chopped fresh dill
1 tablespoon whole pink peppercorns (optional)

Steps:

  • Bring 4 1/2 cups water, sliced leeks, and 3/4 teaspoon curry powder to boil in medium pot over medium-high heat. Boil 5 minutes. Add asparagus. Reduce heat to medium; cover and simmer until asparagus is tender, about 15 minutes. Cool slightly. Set aside 2 tablespoons crème fraîche; stir remaining crème fraîche, 4 tablespoons chopped dill, and 3/4 teaspoon curry powder into soup. Puree in batches in blender until smooth. Strain soup into large bowl. Season soup to taste with salt and pepper. Refrigerate until cold, about 4 hours, or up to 1 day.
  • Divide chilled asparagus bisque among 6 bowls. Top each with 1 teaspoon crème fraîche. Sprinkle with remaining chopped fresh dill and whole pink peppercorns, if desired.

1 tablespoon freeze-dried chives
1/4 cup bread crumbs, plus more to coat
2 tablespoons olive oil, for frying

1 Recipe white and green asparagus, (recipe follows)
1 recipe coconut curry sauce, (recipe follows)
6 ounces unsweetend coconut milk
2 ounces soy milk
2 tablespoons curry powder
Salt and freshly ground black powder
Olive oil, to saute
1 can green asparagus
1 can white asparagus
1 teaspoon dried minced onion
Salt and freshly ground black pepper, to taste

Steps:

  • In a medium bowl, mix together ingredients. Season with salt and pepper. Roll the patties in extra breadcrumbs and transfer to a hot saute pan with the olive oil. Pan fry until golden, about 2 minutes for each side. Plate the patties with white and green asparagus and coconut curry sauce.
  • In a small saucepan over medium heat, add all ingredients. Reduce until the sauce coats the back of a spoon, about 5 minutes. Season to taste with salt and freshly ground black pepper. Add 1-ounce water if the sauce is too thick.;
  • In a large saute pan over high heat, heat enough olive oil to coat the pan. Add the asparagus and minced onion. Saute until glazed, about 2 minutes. Season with salt and pepper.
  • PROCEDURE: Plate salmon patties in center of plate and nap with curry sauce, surround with asparagus and serve warm.

1 tsp Thai fish sauce
zest and juice 1/2 lime
½ tsp green peppercorns in brine, rinsed and chopped
3 garlic cloves , chopped
1 tbsp rapeseed oil
1 large banana shallot , chopped
10 asparagus spears , sliced at an angle
4 handfuls sugar snap peas
4 broccoli florets (about 275g/10oz), cut into smaller pieces
175ml reduced-fat coconut milk
2-3 tsp green Thai curry paste (if you like it spicy, use a yellow paste)
good handful basil leaves (about 25)

Steps:

  • Stir the beef with the fish sauce, lime zest, peppercorns and garlic, then set aside. Heat half the oil in a large non-stick wok and pile in the shallot, asparagus, sugar snaps and broccoli. Stir-fry over a high heat for 5 mins. (There are a lot of vegetables, so you can speed up the process by adding a dash of water to the wok every now and then to steam them at the same time.)
  • Stir the coconut milk, curry paste and lime juice together, pour into the pan and stir well. Simmer for 2 mins, adding a few tbsp water until the vegetables are tender but still have a lot of bite. Tip into bowls and keep warm.
  • Add the remaining oil to the pan, tip in the beef and stir-fry for 1-2 mins until just cooked. Stir through the basil leaves and serve on top of the vegetables.

3 tablespoons roasted chana dal powder (ground dried chickpeas)
2 tablespoons dry coconut powder

1/2 tablespoon Urad Dal
1 tablespoon jeera powder (ground cumin)

Steps:

  • Chop asparagus, carrots and potato into 1/2 inch pieces.
  • Take a non-stick pan and put it on medium flame.
  • Add oil and other seasonings like mustard seeds and jeera and curry leaves.
  • Now add carrots and potatoes first.
  • Add turmeric and mix them all properly and close the lid.
  • After few minutes stir by adding salt and put the lid on again for a minute.
  • Add chopped asparagus and stir them all and close the lid to allow them cook.
  • After a few minutes check if all ingredients are cooked.
  • Then reduce stove to low and add roasted chana dal powder and dry coconut powder and chili powder.
  • Stir them all and close lid for a few minutes and switch off the stove.

10 shoulder lamb chops
1 medium vidalia onion, thinly sliced
5 fresh roma tomatoes, skinned and halved
1 cup olive oil (you might not use it all)
2 tablespoons butter
1 1/2 cups dry breadcrumbs, finely grated
2 tablespoons grated parmesan cheese or 2 tablespoons romano cheese
1 -2 cup all-purpose flour (for dredging, you may not use it all)
2 eggs, well beaten
1 tablespoon cold water
1 1/4 cups milk
1 tablespoon olive oil
1 cup white wine
1 teaspoon crushed garlic
1/4 teaspoon sea salt
1/8 teaspoon crushed black pepper
1 teaspoon masala curry powder
1/8 teaspoon cayenne powder
1 cup ricotta cheese
8 -10 asparagus spears
1/2 cup 35% cream (or whipping cream)
1 1/2 tablespoons cornstarch

Steps:

  • Prepare MARINADE the night before your dinner party.
  • Of the MARINADE and SAUCE ingredients mix ONLY first seven in your Processor, or Blender.
  • Reserve last four ingredients for future use.
  • Remember to use only the first seven ingredients.
  • Remove excess fat from around the outside of shoulder chops.
  • Leave the bone in, if there is one.
  • Place chops in a covered container large enough to accommodate all, even if you have to"double-row" them.
  • Pour MARINADE over shoulder chops, cover and place in refrigerator.
  • Allow to marinate 24 hours; be sure the chops are all well covered with the MARINADE.
  • Baste chops periodically to ensure good saturation.
  • Keep covered during the marinating process.
  • Next day, when you are ready for cooking: Remove shoulder chops from MARINADE; pat dry with paper toweling and set aside.
  • Reserve the MARINADE for later use in the sauce preparation.
  • In a saucepan and 1/2 cup water, over medium heat,cook asparagus spears for 5-7 minutes.
  • Because of the quantity, you may have to do this in a couple of batches.
  • Remove asparagus spears from water and reserve for use in SAUCE preparation.
  • Discard the water.
  • Skin the Roma tomatoes by dipping in very hot water for a few minutes; the skin should slide off easily.
  • Slice off the tops and discard; cut skinned tomatoes in half, lengthwise.
  • Cover and set aside for later use.
  • In a large skillet, heat 1 Tbsp of the olive oil; add the butter. (Watch it does not burn).
  • Saute all the onions, stirring frequently; transfer to a small bowl.
  • Mix in 1/2 Tbsp grated parmesan or Romano cheese. Cover and set aside for later use.
  • In the same skillet, add a little more olive oil for browning.
  • Lightly cook tomato halves, flat side only, until just brown.
  • Transfer to a plate and sprinkle balance of grated parmesan or Romano cheese on the tomatoes; Cover and set aside for later use.
  • Add water to two eggs and beat well with a hand mixer or rotary beater.
  • At this point you should take out your shallow oven pan or a shallow pan large enough to accommodate all the chops at one time.
  • PREHEAT OVEN TO 325°F.
  • In four separate containers, place the milk, flour, well-beaten eggs, bread crumbs, Add more olive oil to the skillet, as needed.
  • Prepare the chops in the following order: Soak in milk, dredge in flour, dip in beaten eggs, finally in bread crumbs.
  • Brown both sides of chops quickly in skillet; remove to shallow oven pan.
  • Give the onions and grated cheese an additional toss to coat well.
  • Spoon onions over the breaded chops, dividing equally.
  • Top-off with one tomato half, flat side down, on each chop.
  • Use up all of the grated cheese bits, as well.
  • Bake uncovered, in preheated oven for 35 minutes.
  • Turn down oven to 275°F and continue cooking for an additional 10 minutes.
  • While the meat is baking, prepare the Creamy, Asparagus/Ricotta/Curry Sauce SAUCE PREPARATION: In a saucepan, over medium heat, bring MARINADE/SAUCE mixture to a boil.
  • Turn heat down and continue to simmer for about 10 minutes, mixing occasionally.
  • Remove from heat and allow to cool for about 10 minutes.
  • Add cooked asparagus, ricotta cheese and a little of the cooked MARINADE/SAUCE mixture to your food processor.
  • Process on "pulse cycle" for a few minutes or until ricotta cheese and asparagus are well blended.
  • Continue to gradually add all of the MARINADE/SAUCE mixture, through feed tube, until smooth.
  • You now have the basis for the SAUCE.
  • Transfer SAUCE to saucepan; bring to a boil, then simmer over low heat for about 5 minutes.
  • Remove from heat and set aside.
  • Put all of the cornstarch into a medium-sized bowl.
  • Make a roux by gradually whisking 35% cream (or whipping cream) into the cornstarch, whisking continuously, until all of the cream has been used, and roux is very smooth.
  • Gradually,and gently transfer about 1/4 cup of the SAUCE mixture to the roux.
  • Continue whisking as you gradually add additional SAUCE to the roux.
  • Remember you are working with very hot ingredients; please be careful; do not burn yourself.
  • Pour the mixture back into the saucepan, whisking continuously.
  • Turn down heat as low as possible.
  • Allow to thicken while whisking.
  • Whisk again, just before spooning onto chops.
  • Turn off the oven.
  • Transfer Lamb Chops from oven pan to dinner plates.
  • Spoon the CREAMY ASPARAGUS RICOTTA/CURRY SAUCE over the Lamb Chops, and serve while still hot.

6 boneless chicken thighs cut into bite size
5 slice bacon
1 medium onion
1 bell pepper chopped
1/2 lb asparagus cut into 1"pieces
2 Tbsp tomato paste
2 tsp garlic, minced
2-3 Tbsp curry powder
1 tsp ginger powder
1 c chicken broth
1 can(s) coconut milk

Steps:

  • 1. In a heavy pan or skillet cook bacon to render fat. Add chicken pieces, salt, pepper and brown on all sides. Remove and set aside.
  • 2. In the same pan, add onion, bell pepper, and asparagus, and cook until softened. Moving the vegetables aside add tomatoe paste and garlic and cook for 1-2 minutes, stir in the curry powder and ginger and cook a minute more. Add chicken and stir all together.
  • 3. Stir in chicken broth and lower heat, cover and simmer for about 5 minutes or until chicken is done. Stir in coconut milk and simmer a few minutes more. Serve over Jasmine rice. I like to put the curry sauce on the bottom then the rice and top with meat and vegetables and then more sauce.

1 medium red bell pepper, thinly sliced
1 lb asparagus, tough ends removed, cut into 1-inch pieces
cooked rice or rice noodles
lime wedges
cilantro leaves

Steps:

  • Heat peanut oil in large wok or skillet over medium high heat. Add tofu triangles and cook for 5 minutes; flip tofu over and cook 5 minutes more on other side. Place tofu on a plate lined with paper towels (to soak up excess oil) and wipe out skillet (carefully!).
  • Return skillet to medium-high heat. Add 1/2 cup of coconut milk and cook, stirring constantly, until it thickens (about 2 minutes). Stir in red curry paste and cook until fragrant, about 1 minute.
  • Add remaining coconut milk, broth, soy sauce, and sugar. Once sauce comes to a simmer, add red pepper; cook for 2 minutes. Stir in asparagus and cook 3 minutes more.
  • Return tofu to skillet and stir until coated with curry sauce.
  • Remove from heat and serve over noodles or rice; garnish with lime wedges and cilantro.

1 tablespoon(s) oil
1 tablespoon(s) green curry paste more or less to taste
14 ounce(s) can coconut milk
2 tablespoon(s) fish sauce
1/4 cup(s) brown sugar
2 - limes juiced
2 - kaffir lime leaves (optional)
1/2 pound(s) firm fish, (halibut, salmon, cod, haddock) cut into bite size pieces
1/2 pound(s) asparagus trimmed and cut into bite size pieces
1/2 cup(s) peas
1 tablespoon(s) thai basil

Steps:

  • Heat the oil in pan over medium heat. Add the curry paste and cook 1 minute. Add the remaining ingredients and bring to a boil. Reduce to a simmer and cook 5 to 7 minutes. Until asparagus is tender. Remove Kaffir leaves before serving
  • Serve as a soup or over rice for a complete meal

2 Tbs honey
2 tsp curry
For the veggies:
2 artichokes, cooked 20-30 minutes, until tender, chokes removed
1/2 lb asparagus, cooked 3-5 minutes, until barely tender
1/2 lb snow peas, stems removed

Steps:

  • Presentation: Place one whole artichoke in the center of the serving plate. Fill center of artichoke with honey curry dip remove leaves from the second artichoke and arrange as a collar around the whole artichoke. Arrange asparagus and snow peas alternately on outer rim of plate.

1 (15 ounce) can chickpeas, rinsed and drained (or 1 1/2 cups cooked beans, from 1/2 cup dry)
1 pound zucchini, sliced
1 pound asparagus, trimmed and sliced
1 handful Thai basil or basil
2 birds eye chilies, sliced

Steps:

  • Heat the oil in a pan over medium heat.
  • Add the curry paste and saute until fragrant, about a minute.
  • Add the coconut milk, fish sauce, lime juice, sugar, lime leaves and chickpeas, bring to a boil and simmer for 5 minutes.
  • Add the zucchini and asparagus and simmer until tender, about 5 minutes.
  • Remove from heat an serve garnished with fresh basil and sliced chilies
