½ pound asparagus spears, trimmed and bottom thirds thinly peeled
3 tablespoons unsalted butter
¼ cup chopped pecans
2 (4 ounce) fillets salmon
salt and ground black pepper to taste
2 tablespoons olive oil
½ lemon, halved (juice only)
⅓ (8 ounce) package angel hair pasta
2 tablespoons butter
1 tablespoon minced parsley
1 tablespoon chopped fresh basil
2 tablespoons butter
1 tablespoon Dijon mustard
½ lemon, halved (juice only)

Steps:

  • Place asparagus spears into a large skillet, and pour in enough water to cover the bottom of the skillet about 1/2 inch deep. Place skillet over medium heat, bring to a boil, and reduce heat to medium-low. Simmer until the water has evaporated, about 5 minutes.
  • Stir unsalted butter and pecans into the skillet with asparagus, and let simmer until asparagus are beginning to brown and pecans are fragrant, about 2 more minutes. Remove from heat.
  • Season salmon fillets with salt and black pepper and set aside for about 5 minutes; pat off any excess moisture with paper towels.
  • Heat olive oil in a skillet over medium-high heat, and pan-fry the salmon fillets in the hot oil until browned and the flesh flakes easily and is nearly opaque in the center, 4 to 5 minutes per side. Squeeze half a lemon over the salmon fillets as they cook.
  • Fill a large pot with lightly salted water and bring to a boil; stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through but still slightly firm, 4 to 5 minutes. Drain well and return to saucepan.
  • Stir 2 tablespoons butter, parsley, and basil into the cooked pasta until coated; sprinkle with salt and black pepper to taste.
  • To make sauce, melt 2 more tablespoons of butter in a small saucepan over low heat until melted; stir in Dijon mustard, and squeeze remaining lemon half into the sauce. Allow to simmer for about 3 minutes to blend flavors.
  • To serve, divide angel hair pasta between two plates, top each serving of pasta with half the asparagus and pecans, and arrange a fillet over the asparagus. Spoon Dijon dressing over fillets to serve.

1/2 lb asparagus

1/2 cup chopped green onion
3 large garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
1 cup heavy cream
1 cup parmesan cheese, grated
1 tablespoon lemon juice
1/2 teaspoon black pepper

Steps:

  • Boil asparagus in water for 5 mins, then drain and cool down quickly with cold water.Cut asparagus into 1 inch pieces,set aside.
  • In a small skillet melt the butter over med heat and add the onions, garlic and pepper flakes, saute for 5 mins until soft.
  • Add the cream, parmesan cheese and lemon juice and simmer for 5 mins until sauce thickens slightly. Add the asparagus and black pepper to the sauce. keep warm.
  • Cook the pasta until al dente, drain and serve imediately with the asparagus sauce on top.
  • Serve with extra parmesan and red pepper flakes.

I whipped this up one evening for dinner and was amazed how delicious it turned out! Somewhat unusual combination, but you will LOVE it...I know my kids and I sure did!

1 (16 ounce) package angel hair pasta
¼ cup extra virgin olive oil, divided
2 cloves garlic, minced
1 pound fresh asparagus spears, trimmed and chopped
2 cups grape tomatoes, halved
1 (14.5 ounce) can chicken broth
1 teaspoon dried dill weed
freshly ground black pepper to taste
2 avocados - peeled, pitted, and mashed
½ lime, juiced
½ teaspoon garlic powder
1 cup shredded queso asadero (white Mexican cheese)

Steps:

  • Bring a large pot of lightly salted water to a boil. Add angel hair pasta, cook for 5 to 6 minutes, until al dente; drain and toss with 1 tablespoon of olive oil to prevent stickiness.,
  • Heat the remaining 3 tablespoons olive oil in a skillet over medium heat, and cook the garlic for 1 to 2 minutes. Add the asparagus and tomatoes, stirring to coat. Pour in the broth, and continue cooking uncovered 10 minutes, or until the asparagus is tender, but still bright green.
  • Place the pasta in a large bowl, and toss with the asparagus and tomato mixture. Season with dill and pepper. In a separate bowl, mix the avocados, lime juice, and garlic powder together until blended.
  • Serve pasta with a dollop of the avocado mixture, and top with shredded cheese.

8 ounces angel hair pasta
2 tablespoons olive oil
2 garlic cloves
1 small onion, diced
2 cups sliced mushrooms
4 ounces prosciutto, cut into strips
1 lb young tender asparagus, trimmed, cut into 1 inch pieces
1 1/4 cups heavy cream
1/3 cup grated parmesan cheese
salt and pepper
1/2 teaspoon red pepper flakes

Steps:

  • Cook pasta according to directions, drain and put pack into the warm pot.
  • Meanwhile, heat oil in a large frying pan over medium high heat. Cook onion, garlic and mushrooms until fragrant and semi done. Add Prosciutto and asparagus and cook until asparagus is bright green, about 3 minute
  • Add cream, 1/3 cup cheese, salt and pepper and red pepper flakes. Reduce heat to simmer and cook until sauce has thickened, about 4 minutes.
  • Pour sauce with vegetables over pasta and toss to coat.
  • Top with additional parmesan cheese and, if desired, prosciutto chips (see recipe description).

1 tablespoon olive oil
8 green shallots, chopped
4 cloves garlic, crushed
1/4 cup vermouth or 1/4 cup dry white wine
2 tablespoons fresh basil, chopped
2 tablespoons flat leaf parsley, chopped
2 teaspoons fresh oregano, chopped
600 ml cream
1 cup roasted sweet pepper, drained and sliced
1/2 cup parmesan cheese, freshly grated
500 g angel hair pasta
4 bunches asparagus, chopped

Steps:

  • Heat the oil in a pan and add the garlic and shallots.
  • Cook until tender.
  • Add vermouth and herbs.
  • Simmer uncovered for about 5 minutes until the liquid is almost all evaporated.
  • Add cream and peppers and simmer about 5 minutes.
  • Remove from the heat and stir in parmesan.
  • Steam the asparagus until just tender and add to the sauce.
  • Cook the angel hair pasta in a large pot of boiling water until al dente.
  • Drain the pasta and add it to the asparagus sauce.
  • Toss it through gently until well combined.
  • Place in a large serving dish to serve or on individual plates.

5-6 garlic cloves (sliced)
(you can use more or less garlic depending on your taste)
1/4 extra virgin olive oil (you can add more if you need to)
1 Tab. of butter
couple dashes of hot sauce (I use red hot)
couple dashes of red pepper flakes
Salt and Pepper to taste

Steps:

  • Put the olive oil and butter in the saute pan over medium heat, add the garlic slices, couple dashes of hot sauce, and add a dash of pepper flakes to the pan to season oil. Stirring Add chopped asparagus tips to pan and saute over medium heat Add salt and pepper to taste Saute until asapragus tips are tender Cook pasta in large pot of salted boiling water until cooked to aldente Put cooked drained pasta in a large serving bowl and pour sauce mixture on top Serve with freshly grated reggiano parmigiano on top. Mangia!! A fresh garden salad compliments this dish as well as a loaf of warm & fresh italian bread.

2 tablespoons olive oil

1/4 cup peeled seeded, diced tomatoes
1/2 cup slice shiitake mushroom caps (or your favorite mushrooms)

1/2 cup dry white wine

1/4 cup pine nuts
2 tablespoons olive oil
4 ounces diced onions
5 asparagus spears, rough ends removed and sliced into small bite size pieces
4 1/2 ounces canned mushrooms, rinsed
3 garlic cloves, minced
1 limes, juice of or 1 tablespoon lime juice
14 1/2 ounces diced tomatoes
1 tablespoon dried Italian herb seasoning
1/2 cup evaporated milk
2 cups baby arugula or 2 cups Baby Spinach, is good too
8 fresh basil leaves, rough chopped
1/3 cup parmesan-romano cheese mix, grated

Steps:

  • In a large pan toast pine nuts, remove from pan set aside.
  • Add olive oil to pan, when hot add the onions and saute 3 minutes.
  • Add garlic, asparagus, mushrooms, lime juice, diced tomatoes, and dried herbs. Simmer 20 minutes.
  • Stir in evaporated milk, arugula, basil. Toss in hot angel hair and grated cheese.
  • Add some Pasta water if needed.
  • Plate in a large serving bowl and top with pine nuts.

Another recipe for a not so local Farmers' Market here in our state. Wish I could go to it every Saturday. I've not tried this but don't want to misplace the recipe.

2 lbs asparagus
salt, for water
2 tablespoons olive oil
8 garlic cloves, shaved thin and julienned
1 cup shallot, peeled and julienned
1 pinch crushed red pepper flakes
2 lemons, juice of
3/4 cup fresh chives, chopped fine
1 lb angel hair pasta
salt and pepper
1/2 cup parmesan cheese, freshly grated

Steps:

  • Rinse the asparagus and remove the bottom inch of the stem.
  • Cut the tips into 2 inch pieces.
  • Cut the remaining piece julienned.
  • Set the asparagus aside.
  • Bring a large pot of water to a boil, add salt.
  • In a large nonstick skillet, saute the garlic, shallots and red pepper flakes in olive oil, until tender but not browned.
  • Add the lemon juice and reduce by half.
  • Drop the pasta and the asparagus tips into the boiling water.
  • Cook until the pasta is ala dente, about 3 - 4 minutes.
  • Drain for a few minutes and add to the pan.
  • While the pasta is cooking add the remaining asparagus to the pan with the shallots and saute until they begin to wilt.
  • Toss in the chives, the pasta and cook until the remaining water has evaporated.
  • Season with salt and freshly ground pepper.
  • Remove from heat and add the Parmesan cheese.
  • Serve immediately.
  • (When I make this a second time, I'm going to add a little lemon zest in step 7).

1 lb. Angel Hair Pasta, cooked al dente
1 lb. Shrimp, peeled
1 lb. Asperagus, peeled
2 clove Garlic, minced
2 tsp. Ginger, grated
1 Tbs. Sesame Oil
1 Jalapeno Chile, minced
1 Tbs. Sesame Seeds, toasted
2 Tbs. Canola Oil

Steps:

  • Over medium-high heat, bring a large pot of salted water to a boil. Add the Asparagus and cook until crisp-tender, about 4-5 minutes. Remove Asparagus and refresh with cold water. Keep pot of water boiling. Cut-off the Asparagus tips and reserve. Cut the Asparagus stalks into 1" pieces, diagonally. Reheat the Angel Hair in the boiling water, about 1-2 minutes. Drain the Angel Hair and transfer to a large bowl. Toss with 1 tablespoon of the Canola Oil. In a large saute pan over medium-high heat, heat the remaining Canola Oil. Add the Garlic and Ginger and, stirring constantly, cook until fragrant, about 30 seconds. Add the Shrimp and cook, stirring frequently, until pink, about 3 minutes. Add the Jalapeno and cut Asparagus. Saute until warmed, about 1 minute. Add the drained Angel Hair and cook, gently tossing the pasta, until warmed, about 2-3 minutes. Add the Sesame Oil and toss to combine. Transfer to a large serving bowl and garnish with the Asparagus tips and Sesame Seeds.

8 oz angel hair pasta
10 stalk(s) asparagus trimmed
1 c pineapple juice
1/2 c brown sugar
3 Tbsp sweet soy sauce
1 Tbsp lemongrass paste
1 Tbsp rice vinegar
4 clove garlic minced
2 Tbsp each oyster sauce and hoisin sauce
1 Tbsp sambal olek sauce
3 Tbsp cornstarch
5 Tbsp water

Steps:

  • 1. Cook the angel hair pasta in salted boiling water until al dente. About 5 minutes before it is done throw in the Asparagus. Drain.
  • 2. Mix all the ingredients for sauce except cornstarch and water together. Bring to a boil. Mix the cornstarch and water together and slowly whisk into the sauce.
  • 3. Serve the angel hair topped with asparagus and sauce overtop.

1 pound asparagus (sliced)
1 tablespoon unsalted butter
1/2 cup green onion (chopped)
zest of 1/2 lemon
3 tablespoons fresh lemon juice
3/4 cup milk
2 large eggs
1 tablespoon chopped fresh or 1 teaspoon dried dill
1/4 teaspoon salt
1/8 teaspoon ground nutmeg

Steps:

  • In a large sauce pan, such as a Dutch oven, cook pasta in boiling water 4 minutes. Add asparagus; cook 2 minutes or until tender. Drain.
  • While the pasta cooks, melt butter in a large skillet over medium heat. Add onions and lemon zest; sauté 1 minute. Add juice; cook 1 minute or until liquid almost evaporates.
  • Combine milk and eggs in a small bowl; stir well with a whisk. Add pasta mixture and milk mixture to skillet; stir well. Cook over low heat 3 minutes or until milk mixture is slightly thick, stirring constantly (do not boil). Stir in dill, salt, and nutmeg. Serve immediately.
