Steps:
- Heat oven to 400.
- Snap the tough ends off the asparagus and discard them.
- Cut the spears into 1 inch pieces.
- Put the aspargus on a baking sheet and toss with the olive oil and 1/4 tsp.

- Roast until tender, about 10 minutes.
- Meanwhile, put the vinegar in a small saucepan.

- Preheat outdoor grill or indoor grill pan to medium high.
- In a small saucepan, bring vinegar and honey to a boil and cook until reduced by half, whisking occasionally, about 3 minutes.
- Remove from heat, whisk in butter and season with salt and pepper.
- Toss the asparagus with 1 1/2 tablespoon olive oil and season with salt and pepper; grill, turning, until tender, about 9 minutes.
- Meanwhile, rub remaining oil on the salmon and season with salt and pepper; grill, turning once, about 6 minutes for medium rare.

This is a Donna Hay recipe. The combination of flavors and textures is wonderful. The sauce is really versatile, and could be easily be used for other veggies. It is quick and easy to make, and makes a great vegetarian meal served over brown rice.

Steps:
- Heat the oil in a pan over medium heat. Add garlic and cook 1 minute.
- Add butter, vinegar and water; cook another minute then add asparagus and pepper. Cook 4 more minutes, until tender.
- Place the asparagus in bowls.
- Put tofu slices in the pan with the sauce, add thyme, and cook until heated through.
- Place on the asparagus, and serve with the remaining sauce.

I've gotton so much asparagus and I don't do canning. So I needed to think of fresh ways to use it up and this was delicious!

Steps:
- 1. Snap off any tough ends of asparagus. In a large skillet, bring about 1 inch of water to a boil and add asparagus. Cook for about 4-5 mins., just until crisp-tender. Drain and place on serving plate.
- 2. Coat a large non-stick skillet with cooking spray. Place over medium heat. Sautee shallots/onions until soft, about 1 or 2 mins.
- 3. Remove from heat. Stir in balsamic vinegar and butter. Pour over asparagus. Sprinkle with salt and pepper.
