1 1/2 lbs ground beef
1/2 lb ground pork
3 slices bread, broken up into small pieces
2 eggs, lightly beaten
1 small onion, finely chopped
2 stalks celery, finely chopped
3 tablespoons soy sauce
1 tablespoon minced fresh ginger
2 tablespoons hoisin sauce
1/2 cup hoisin sauce
2 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees In a large bowl mix together the beef, pork, bread crumbs, eggs, onion, and celery.
  • Season with 3 tbsp soy sauce, ginger, and 2 tbsp hoisin sauce.
  • Pat mixture into a shallow 2 quart baking pan.
  • Bake in preheated oven for 40 minutes.
  • Drain grease from pan.
  • In a small bowl mix 1/2 cup hoisin with 2 tbsp ketchup.
  • Spread over top of meatloaf.
  • Continue baking for 20 minutes.
  • Remove from oven and let rest for 5 minutes.

This is the most moist, fabulous tasting meatloaf--everyone loves it! The Hoisin sauce is available in the Oriental Food Section of the grocery store... it is like cross between soy and ketchup, and makes a wonderful glaze for this moist meatloaf. We love this dish. Very moist. Serve with rice and steamed broccoli. A wonderful dinner. Leftovers make great sandwiches.

1 lb ground beef
1/2 lb ground pork
1/2 cup chopped yellow onion
1/2 cup finely chopped celery
1 garlic clove, minced
1 large egg, beaten
2 tablespoons soy sauce
1 tablespoon hoisin sauce
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
3 cups cooked long-grain rice, divided
wasabi, for serving
1/4 cup soy sauce
1 tablespoon hoisin sauce
1 tablespoon ketchup

Steps:

  • Preheat oven to 350°.
  • In a big bowl, combine all the ingredients EXCEPT 2 cups of rice, the glaze, and the
  • wasabi; mix well.
  • Turn the mixture into a lightly oiled 9 x 5 inch loaf pan; gently pat down.
  • Bake for 45 minutes; meanwhile make the glaze-in a small bowl, whisk the glaze ingredients together.
  • Spread the glaze on top of the loaf and bake 15 more minutes, until the loaf is firm and the top is lightly browned and the sauce is bubbly.
  • Let stand in the pan for 5-10 minutes before serving.
  • Remove the loaf from the pan and slice to serve.
  • Serve with the remaining rice and wasabi.
