ASIAN-STYLE GRILLED SWEET AND SOUR SCALLOPS

2 pounds scallops should give you 5-6 skewers, but the complete recipe can be doubled to 4 pounds, but each 2-pounds scallops will have to be marinated in two plastic bags using two rice wine/ginger mixtures.

2 lbs scallops (purchase the larger size scallops)
1 tablespoon grated fresh ginger
1/4 cup rice wine
1/4 cup brown sugar
1/4 cup ketchup
1/4 cup chicken broth
2 tablespoons rice vinegar
2 tablespoons soy sauce
1 teaspoon cornstarch
1 teaspoon sesame oil
1 tablespoon fresh minced garlic (or to taste)
1/2 teaspoon dried red pepper flakes (optional or to taste or use red pepper)
cooked rice
chopped green onion

Steps:

  • In a bowl stir together the rice wine with 1 tablespoon fresh ginger, then pour the mixture into a ziploc resealable plastic bag, add in the scallops seal bag then turn to coat with the mixture.
  • Chill scallops for 35 minutes (no longer than stated time or the rice wine will start to "cook" the scallops!).
  • Meanwhile soak 6 (12-inch) wooden skewers in cold water for 30 minutes minimum.
  • In a saucepan combine the brown sugar, ketchup, broth, rice vinegar, soy sauce, cornstarch, sesame oil, minced garlic and red pepper flakes (if using) bring to a boil over medium heat, stirring constantly, boil for 1 minute; set aside.
  • Remove scallops and discard the marinade.
  • Thread scallops leaving about 1/2-inch apart onto the soaked wooden skewers.
  • Grill over medium heat for 2-3 minutes on each side (time will vary depending on the size of your scallops).
  • Brush scallops with the prepared brown sugar sauce, then serve immediately with remaining sauce.
  • Serve with cooked rice and chopped green onions.

10 sea scallops (1 1/2 oz weight each at least)
olive oil
salt
pepper
6 large garlic cloves, sliced thin
2 tablespoons low sodium soy sauce
2 tablespoons rice vinegar
2 tablespoons sugar
1/2-1 teaspoon red pepper flakes
2 tablespoons lemon juice
1 teaspoon dried cilantro (or 1 bunch fresh)

Steps:

  • in a nonstick skillet over medium high heat heat oil in skillet and add scallops. season with salt and pepper cook about 3-5 minutes should be lightly browned then flip and do the same on other side.
  • mean while in sauce pan combine all the ingredients and bring to a boil then remove from heat.
  • serve scallops and sauce immediately.

I have not made this but it looks good and am posting it here for safe keeping. The recipe calls for using scallops with the roe removed but if you like that then I think it would not take away from the dish.

1 1/2 cups jasmine rice
3 cm piece fresh ginger (20g)
20 scallops, roe removed (800g)
2 tablespoons thinly sliced lemongrass
4 green onions, sliced thinly
1 tablespoon sesame oil
1/4 cup ketjap manis
1/4 cup soy sauce

Steps:

  • Cook rice in large pot of boiling water, until tender and drain.
  • Slice ginger into thin slices, then cut slices into thin strips.
  • Place scallops, in a single layer bamboo steamer, top with ginger, lemon grass and onion.
  • Cover and steam for about 5 Min's until tender or cooked as desired.
  • Divide scallops among plates and top with combined remaining ingredients and serve with the Jasmine rice.

600 g fresh scallops
2 tablespoons finely chopped lemongrass
1 Thai chile, finely chopped
60 ml lime juice
1 spring onion, finely chopped
1 garlic clove, finely chopped
1 teaspoon dried coriander
1 teaspoon ground cumin
60 g butter

Steps:

  • sauté the chilli, garlic, cumin and coriander in a hot skillet add the lemongrass and the spring onion until they have softened, but not browned.
  • Add the scallops and sauté for one minute or until they turn from translucent to opaque.
  • Place one cup of cooked basmati rice in the centre of a plate and arrange the scallops around it, deglaze the pan with the lime juice and drizzle over the scallops.
  • Garnish with fresh coriander and serve.

3 tablespoons soy sauce
1 tablespoon mirin (Chinese rice wine)
1/4 teaspoon chili-garlic sauce (Hot Asian)
1 teaspoon fresh ginger, grated
1 teaspoon garlic, finely chopped
1 pinch sugar
1 teaspoon sesame oil
12 large sea scallops, halved
12 slices bacon (thin slice)
24 wooden toothpicks, soaked in water for 1 hour

Steps:

  • In a bowl, combine the soy sauce, Mirin, chili sauce, ginger, garlic, sugar and oil. Add scallops and toss well. Set aside to marinate for 1/2 hour under refrigeration.
  • Cook the bacon until lightly browned but only about half cooked. It must still be flexible enough to wrap around the scallops. Cut each piece in half.
  • Preheat your grill to a medium heat.
  • Remove the scallops from the marinade and pat dry. Wrap each scallop in a piece of bacon and secure it with a toothpick.
  • Place the wrapped scallops on the grill and cook for about 6 minutes until bacon is crispy and the scallops are firm. Watch for flare ups and turn them often. Serve immediately.
