Quick and Easy Asian Sesame Cucumber Salad image

A chilled sesame salad of spiralized cucumber. It reminds me of the seaweed salad you get at Japanese restaurants, but just cucumbers.

2 English cucumbers, peeled
1 teaspoon salt, divided, or to taste
2 tablespoons garlic-seasoned rice wine vinegar
1 tablespoon toasted sesame oil
1 tablespoon soy sauce
1 teaspoon white sugar
¼ teaspoon toasted sesame seeds

Steps:

  • Cut cucumbers into long, thin noodle shapes using a spiralizer set to the thinnest setting.
  • Place cucumber noodles in a fine-mesh strainer set over a bowl. Sprinkle with 1/2 teaspoon salt and toss until combined. Let cucumber stand until moisture is drawn out, about 30 minutes.
  • Whisk rice vinegar, sesame oil, soy sauce, and sugar together in a bowl until sugar is dissolved. Add cucumber; toss gently until coated. Season with remaining 1/2 teaspoon salt; sprinkle with sesame seeds.

I am still trying to find a recipe that comes close to the Shanghai Cucumber dish at PF Chang's. I just found this on another website and here is what the chef had to say: "I am experimenting with cucumbers since I ate this cucumber thing at PF Chang's. This one is better than the first one and as close as I have gotten to PF Chang's cucumber appetizer. When you have drained the sauce that they are marinating in, try to pour some of the sauce over brown rice. It is really good!"

1 English cucumber
2 tablespoons sesame seeds, toasted
3 tablespoons soy sauce
4 teaspoons mirin
2 teaspoons rice vinegar
1 teaspoon sugar

Steps:

  • Cut the cucumber lengthwise into 1/4-inch pieces and cut each piece in half then cut the halves lengthwise into thin strips.
  • Place them into a bowl and set aside.
  • Place the soy sauce, mirin, rice vinegar and sugar into a small container with a secure lid.
  • Put the lid on and shake to create the vinaigrette dressing.
  • Pour the dressing over the cucumber and toss to coat.
  • Cover and marinate for 1 hour, stirring once or twice.
  • Just before serving, sprinkle the toasted sesame seeds on top.

3 cucumbers, peeled and seeded
1 tablespoon kosher salt
2 tablespoons white sesame seeds
2 tablespoons rice wine vinegar
1 -2 tablespoon toasted sesame oil
1/2 teaspoon sugar
1/4 teaspoon crushed red pepper flakes

Steps:

  • Peel and seed cucumbers and cut on the diagonal into thin slices.
  • Toss the cucumber pieces with kosher salt, transfer to a colander, and let drain for 1 hour.
  • Toast white sesame seeds in a dry skillet until they're golden brown.
  • Whisk together rice wine vinegar, toasted sesame oil, sugar, and crushed red pepper flakes.
  • Rinse the cucumber slices thoroughly under cold running water and pat dry with paper towels.
  • Toss the cucumbers with the dressing and toasted sesame seeds and serve.
