FILLET OF BEEF WITH ASIAN SPICE RUB
Steps:
- Preheat oven to 425°F.
- Toast peppercorns and anise seeds in a dry large heavy skillet over moderate heat, stirring, until fragrant, about 1 minute. Finely grind toasted mixture in an electric coffee/spice grinder or with a mortar and pestle. Sift mixture through a coarse sieve into a bowl and stir in salt, five-spice powder, and ginger.
- Halve beef crosswise and sprinkle rub all over both pieces, pressing to adhere.
- Heat 2 tablespoons oil in skillet over moderately high heat until just smoking, then brown 1 piece of beef on all sides, about 1 minute. Transfer to a large roasting pan. Wipe skillet clean with paper towels and brown remaining beef in same manner. Arrange beef pieces 2 inches apart in roasting pan.
- Roast in middle of oven 25 to 35 minutes, or until a thermometer inserted diagonally 2 inches into centers of pieces registers 120°F. Let beef stand in pan on a rack 25 minutes. Beef will continue to cook as it stands, reaching 130°F (medium-rare). Discard string and slice beef.
- Serve at room temperature.
ASIAN DRY RUB BABY BACK PORK RIBS
Steps:
- 1. Cut the ribs into individual ribs and place them on a flat work surface covered with wax paper. Coat with a bit of olive oil (about 1 tablespoon) and season both sides with sea salt and pepper to taste. Mix all of the remaining spices together in a small bowl and rub the spice blend on all sides of the ribs until evenly covered. Place the ribs in a well-sealed plastic bag and refrigerate for at least 2 to 3 hours (overnight is best). 2. Remove the ribs from the fridge about 15 to 20 minutes before you want to roast them, and bring to room temperature. Line a metal baking sheet with aluminum foil and place the ribs on the foil. 3. Set oven to anywhere between 400 to 425° F and roast the ribs until golden brown and cooked through (the time will vary depending on the heat of your oven and the thickness of the ribs, but start checking around 40 minutes). For crispier ribs, place them under the broiler a minute or two before they're finished. Remove from oven to cool and serve.

- To make the dressing: Put mayonnaise, sour cream, ginger, garlic, sesame oil and rice vinegar in a blender or food processor mix until combined.
- Scrape down the sides of the blender or work bowl with a rubber spatula, mix for another 15 seconds.
- Transfer to a bowl, add the cilantro and mix well with whisk.
- Set aside.

- Roast in middle of oven 25 to 35 minutes.
- Let beef stand in pan on a rack for 25 minutes.
- Beef will continue to cook as it stands.
- Throw away string and slice beef.
- Serve with dressing at room temperature.

- Preheat oven to 425 degrees F. Line a medium baking pan with foil. Stir together brown sugar, ginger, cinnamon, salt, black pepper, cloves, and cayenne pepper in small bowl. Rub pork with brown sugar mixture. Place pork in prepared pan and roast for 15-18 minutes or until the pork's internal temperature reaches 145 degrees F. Remove from oven, cover loosely with foil, and let stand for 3 minutes. Cut into slices. Serving Suggestion: Serve the sliced pork tenderloin with brown rice tossed with thinly sliced scallions and fresh chopped cilantro. Steamed bok choy or broccoli drizzled with a tiny bit of Asian sesame oil.
ASIAN RIB RUB
Steps:
- Combine all dry ingredients in a bowl. Rub on meaty side of ribs. Light one side of a gas grill and put ribs on other side. Keep heat very low. Cover and grill for 30 minutes. Spray the ribs with sherry. Grill 30 minutes more and spray again. Shift ribs around if heat is uneven, but do not turn. Grill 1 1/2 hours to 2 hours total, spraying every 30 minutes. Remove from heat and cut between ribs into 2-rib pieces.
