This quick and delicious green bean and mushroom side dish has just the right amount of tang and sweetness to complement any meal.

Number Of Ingredients 9

1 tablespoon olive oil
3 cups chopped fresh mushrooms
3 cups chopped fresh green beans
2 tablespoons rice vinegar
1 tablespoon light soy sauce, or to taste
1 teaspoon honey
½ teaspoon sesame oil
2 dashes hot pepper sauce (such as Tabasco®)
salt and ground pepper to taste

Steps:

  • Heat olive oil in a skillet over medium-high heat. Add mushrooms and saute for 2 to 3 minutes. Add green beans and cook until bright green, about 3 minutes. Drain off excess water, if needed.
  • Add vinegar, soy sauce, honey, sesame oil, hot sauce, salt, and pepper; saute until mushrooms are soft and beans are well coated, about 3 more minutes. Serve.

2 cups green beans, trimmed and sliced into 1/2-inch pieces
1 shallot, sliced thin
1 garlic clove, minced
1 cup baby portabella mushrooms, sliced
2 tablespoons olive oil
2 tablespoons soy sauce
1/2 teaspoon fresh ginger, freshly grated
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground

Steps:

  • Preheat oven to 375°F.
  • Place all ingredients in a large roasting pan, toss to coat evenly and spread out onto pan in one layer.
  • Roast for 10-12 minutes, gently turn and toss with plastic spatula, spread out evenly once again and roast for another 10-12 minutes.
