1 bag packaged coleslaw mix
2 cups thinly sliced red cabbage
1 red bell pepper (thinly sliced)
1 cup shredded carrots
1 bunch green onions (chopped)
1/2 cup cilantro (chopped)
6 Tablespoons rice wine vinegar
3 Tablespoons vegetable oil
1 Tablespoon sesame oil
5 Tablespoons creamy peanut butter
3 Tablespoons soy sauce
3 Tablespoons brown sugar
2 Tablespoons fresh ginger root (peeled and minced)
3-4 garlic cloves (minced)

Steps:

  • In a medium bowl, whisk together the rice vinegar, oils, peanut butter, soy sauce, brown sugar, ginger, and garlic.
  • In a large bowl, combine the coleslaw mix, red cabbage, red bell pepper, carrots, green onions, and cilantro. Toss with the dressing just before serving.

Asian Peanut Slaw with Pork image

This slaw is delicious on its own, but we went a step further, topping it with a boneless pork chop for an easy weeknight dinner.

Number Of Ingredients 14

1/4 cup canola oil
1/4 cup fresh lime juice
2 tablespoons soy sauce
2 tablespoons sugar
1 teaspoon crushed red chile flakes
4 boneless pork chops (about 6 oz. each)
2 cups thinly shredded savoy cabbage
2 cups thinly shredded red cabbage
1/2 cup chopped fresh cilantro
1/2 cup thinly sliced red bell pepper
1/4 cup sliced green onions
1/2 cup roasted unsalted peanuts
About 1/4 tsp. salt
About 1/4 tsp. freshly ground black pepper

Steps:

  • Preheat broiler. In a small bowl, mix oil, lime juice, soy sauce, sugar, and chile flakes. Put pork in a medium bowl and coat with 3 tbsp. dressing.
  • Broil pork chops, turning once, until done the way you like, 7 minutes for medium. Let rest 10 minutes before slicing 1/4 in. thick.
  • Meanwhile, in a medium bowl, combine cabbages, cilantro, bell pepper, and green onions. Add remaining dressing and peanuts to slaw mixture and stir to combine. Season with salt and pepper to taste. Divide slaw among 4 plates and top with pork.

1 (3-inch) piece ginger, grated fine
1/2 cup rice wine vinegar
1 tablespoon soy sauce
1 lime, juiced
2 tablespoons sesame oil
1/2 cup peanut butter
1 head Napa cabbage, sliced thin
1 red bell pepper, julienne fine
1 yellow bell pepper, julienne fine
2 serrano chiles, minced fine
1 large carrot, grated fine with a peeler
3 green onions, cut on the bias, all of white part and half of the green
2 tablespoons chiffonade cilantro
2 tablespoons chiffonade mint
1/2 teaspoon ground black pepper

Steps:

  • In a small bowl, or food processor combine ginger, vinegar, soy sauce, lime juice, oil, and peanut butter. In a large bowl, combine all other ingredients and then toss with dressing. You can save some of the dressing to dress noodles that can be added to this dish along with stir fried pork to make an entire meal.

Spice Rubbed Pork Tenderloin with Asian Cole Slaw image

2 pork tenderloins, each about 12 ounces, silver skin removed
1 tablespoon peanut oil
2 teaspoons Chinese five-spice powder
Kosher salt and freshly ground pepper
1 1/2 tablespoons rice vinegar
1 1/2 teaspoons soy sauce
1 1/2 teaspoons mirin
1 lime, juiced
1 1/2 teaspoons finely grated peeled fresh ginger
1 1/2 teaspoons peanut oil
1 1/2 teaspoons toasted sesame oil
1/4 head Napa cabbage, (about 1/2 pound,) thinly sliced crosswise
1/2 large head radicchio, thinly sliced, (about 2 cups)
4 scallions (white and green parts), thinly sliced
1 orange or yellow bell pepper, stemmed, seeded, and thinly sliced
1 red apple, such as Macoun, Cortland, or Pink Lady
Kosher salt and freshly ground black pepper

Steps:

  • Position a rack closest to the broiler and preheat to high.
  • Brush the tenderloins with the oil and rub all over with the five-spice powder. Season with salt and pepper, to taste. Lay the pork on a broiler pan and, broil turning once, until golden, about 5 to 7 minutes per side. (An instant-read thermometer should register between 140 and 150 degrees F when inserted into the thickest part of the meat.) Set meat aside for at least for 5 minutes before slicing.
  • Meanwhile, whisk the vinegar with the soy sauce, mirin, lime juice, and ginger in a glass measuring cup. Gradually whisk in the peanut and sesame oils. Toss the cabbage, radicchio, scallions, and bell pepper in a large bowl with 1/4 cup of the vinaigrette. Grate the apple (with the skin but not the seeds) directly into the slaw, and toss again. Season, to taste, with salt and pepper.
  • Slice the pork and divide among 4 plates. Garnish with some of the slaw and drizzle with remaining vinaigrette. Serve.

4 cups cole slaw mix (red and green cabbage and shredded carrots)
1 red bell pepper, sliced
1 cup shelled edamame
1/2 cup jicama, diced
3 green onions, chopped
1/4 cup chopped cilantro
2 tbsp peanuts, chopped (for garnish)
1/4 cup peanut butter (or PB2 combined with water)
2 tbsp low sodium soy sauce
1 tbsp pure maple syrup
1 1/2 tsp fresh lime juice
1 1/2 tsp rice vinegar
1 tsp Asian garlic chili paste (sambal olek)
1/8 tsp ground ginger
1.5 tbsp warm water (more if needed)

Steps:

  • Making the dressing: Warm the peanut butter in the microwave until slightly melted. This step can be skipped but makes it a bit easier to stir. Add the soy sauce, maple syrup, lime juice, rice vinegar, garlic chili paste, and ground ginger to a small bowl. Whisk together, adding water a little at a time until it reaches a smooth consistency. It should be thick but still pourable. Taste and adjust seasoning as needed - more soy sauce for salt, more lime juice for tang, more chili paste for heat, etc.
  • In a large bowl, mix together all of the ingredients. Add the dressing. Mix well and enjoy. I like to let it sit for at least 15 minutes for the flavors to combine.

2 cups thinly sliced red cabbage
2 cups shredded napa cabbage
