ASIAN-STYLE KALE

Asian-Style Kale image

I love all kinds of kale. The article from The Washington Post mentions black kale (aka - dino, Tuscan kale) as a nice choice but I suspect curly blue-green Scotch kale would be fine as well. Oh, did I mention how incredibly nutritious & economical kale is? Or how unbelievably easy kale is to grow in anyone's garden.... even in the winter? More about kale - www.motherearthnews.com/Organic-Gardening/2003-08-01/The-Best-Kales.aspx Article mentioned the recipe was adapted from Northern Virginia cooking instructor Robyn Webb.

Tip 1: Choosing the Right Kale

When making Asian Kale with Noodles, it is important to choose the right type of kale. There are a few different varieties available, but Tuscan kale is the best choice for this dish. Tuscan kale, also known as Lacinato kale or dinosaur kale, has a tender texture and a slightly sweet flavor. It is also easier to chop and work with than other types of kale. If Tuscan kale is not available, you can use curly kale or Russian kale, but be aware that they may have a slightly bitter taste.

Tip 2: Preparing the Kale

When preparing the kale for your Asian Kale with Noodles recipe, it is important to remove the tough stems and ribs. The easiest way to do this is to hold the stem with one hand and use the other hand to pull the leaves off. You can also use a sharp knife to cut the leaves away from the stem. Once you have removed the stems, rinse the kale thoroughly in cold water and dry it with a paper towel or a salad spinner.

Tip 3: Cooking the Kale

When cooking the kale for your Asian Kale with Noodles recipe, do not overcook it. Kale is a delicate green and can become bitter and tough if it is overcooked. The best way to cook kale is to sauté it quickly in a hot pan with a little bit of oil. You can also blanch it in boiling water for a few seconds to help soften it up.
Sautéed Kale:
To sauté kale, heat a large skillet over medium-high heat. Add a tablespoon of olive oil or coconut oil to the pan and swirl to coat the bottom. Once the oil is hot, add the chopped kale and stir for a minute or two until the leaves are wilted and tender. Season with salt and pepper, and set aside.
Blanched Kale:
To blanch kale, bring a large pot of salted water to a boil. Add the kale leaves and cook for 10-15 seconds until it turns bright green. Remove the kale from the pot using a slotted spoon or tongs and immediately transfer it to a bowl of ice water to stop the cooking process. Drain and pat dry once cooled.

Tip 4: Choosing the Right Noodles

When making Asian Kale with Noodles, the type of noodles you use will affect the overall taste and texture of the dish. For this recipe, udon noodles or soba noodles are the best choice. Udon noodles are thick, white noodles made from wheat flour and are similar to Italian pasta. Soba noodles are thin, brown noodles made from buckwheat flour and have a nutty flavor. Both types of noodles are available at most Asian grocery stores and can also be found in the international aisle of some supermarkets.

Tip 5: Preparing the Noodles

When preparing the noodles for your Asian Kale with Noodles recipe, it is important to follow the package instructions carefully. Overcooking the noodles will make them mushy and unappetizing, while undercooking them will leave them chewy and tough. Generally, udon noodles take about 8-10 minutes to cook, while soba noodles take about 3-5 minutes.
Preparing Udon Noodles:
Bring a large pot of salted water to a rolling boil. Add the udon noodles and cook for 8-10 minutes or until tender. Drain and rinse under cold water to stop the cooking process. Set aside.
Preparing Soba Noodles:
Bring a large pot of salted water to a rolling boil. Add the soba noodles and cook for 3-5 minutes or until tender. Drain and rinse under cold water to stop the cooking process. Set aside.

Tip 6: Making the Sauce

The sauce is a crucial component of the dish, and it is important to get it right. When making the sauce for your Asian Kale with Noodles recipe, use a combination of soy sauce, rice vinegar, sesame oil, and honey or brown sugar.
