FRIED GERMAN POTATO SALAD

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 9

6 Yukon gold potatoes, medium size, cut into large dice
8 ounces thick sliced bacon, cut into pieces
Canola oil
Salt and freshly ground black pepper
1/2 red onion, diced
2 tablespoons capers, drained
3 tablespoons red wine vinegar
1 tablespoon Dijon mustard
3 tablespoons extra-virgin olive oil

Steps:

  • Put diced potatoes into a pot and fill with cold water (water should just cover the potatoes). Put pot on stove on medium flame and add salt. When water comes to a boil, and the potatoes are cooked, drain the potatoes and spread out on a side towel to dry.
  • While potatoes are doing their thing, add bacon to a large saute pan and cook over a low/medium flame. When the bacon is cooked remove with a slotted spoon and drain the bacon fat, reserving some if you want to add it later. Wipe out the pan with a wad of paper towels (and crank up the heat), add a decent amount of a neutral oil, like canola, and heat it until you get some smoke.
  • Once the oil is hot, carefully add the potatoes and shake the pan a couple of times to make sure nothing sticks. Lower the heat a little and let the potatoes brown. Season with salt and pepper.
  • After a few minutes, shake the pan and get the other sides going. When the potatoes are almost completely cooked, add the red onion and let everything cook together. Once the onions are caramelized, add the capers, red wine vinegar and deglaze. When the vinegar is mostly evaporated, add the extra-virgin olive oil, mustard and bacon (and reserved bacon fat if you want), re-season with lots of cracked black pepper. Serve warm.

ASIAN-GERMAN FUSION POTATO SALAD

Asian-German Fusion Potato Salad image

This is a creamy German-style potato salad with a tremendous flavor given from Asian ingredients! I made this up on a whim and everyone loved it. I add ham, but feel free to leave it out - it won't alter the flavor much, just the texture.

Asian German Fusion Potato Salad Recipes: Valuable Tips Potato salad is a dish that is loved by many, and various countries have their own versions of the dish. However, one cannot deny that German potato salad is among the most popular ones. While German potato salad is already delicious on its own, combining it with Asian ingredients brings a unique flavor profile that elevates the dish. If you're a fan of German potato salad and want to try something different, then making an Asian German fusion potato salad is worth a shot. Here are some valuable tips to make the perfect dish: 1. Choose the Right Potatoes Potatoes are the main ingredient in potato salad, and the type of potato you choose can affect the texture and flavor of your dish. When making German potato salad, it is recommended to use waxy potatoes as they hold their shape well after being cooked. Examples of waxy potatoes include red potatoes, Yukon Gold, and fingerling potatoes. However, when making Asian German fusion potato salad, you can use other varieties such as sweet potatoes or purple potatoes to give the dish a unique color and texture. 2. Mix and Match Ingredients The beauty of making Asian German fusion potato salad is that you can experiment with different ingredients to create a one-of-a-kind dish. For example, instead of using bacon like in traditional German potato salad, you can use crispy fried shallots or Chinese sausage for a more Asian flavor. Other ingredients you can add to your salad include pickled vegetables, sesame oil, soy sauce, and rice vinegar. The key is to balance the flavors so that no single ingredient overpowers the others. 3. Don't Overcook the Potatoes One of the biggest mistakes people make when making potato salad is overcooking the potatoes. This results in a mushy salad that lacks texture. To avoid this, cook your potatoes until they are just tender, but not falling apart. The cooking time will depend on the type and size of the potatoes you are using. To test if they are done, poke them with a fork. If the fork goes in easily and the potato slides off, then they are done. 4. Dress the Salad While the Potatoes are Still Warm One of the secrets to making a delicious potato salad is to dress it while the potatoes are still warm. This allows the dressing to soak into the potatoes, giving them more flavor. However, it is essential to let the potatoes cool down for a few minutes before adding any acidic ingredients such as vinegar or lemon juice. These ingredients can break down the starches in the potatoes, making them mushy. 5. Chill the Salad Before Serving Chilling the potato salad in the refrigerator for a few hours before serving allows the flavors to meld together. It also gives the potatoes time to absorb the dressing fully. When serving, make sure to let the salad sit at room temperature for 10 to 15 minutes. This allows the flavors to come alive. Conclusion Making an Asian German fusion potato salad is an excellent way to introduce new flavors to a classic dish. By following these valuable tips, you can create a potato salad that is both unique and delicious. Remember to choose the right potatoes, mix and match ingredients, avoid overcooking the potatoes, dress the salad while the potatoes are still warm, and chill the salad before serving. With these tips, you can make a potato salad that will have everyone talking about it for days!
