Time 1h10m

Yield 4 appetizer servings

Number Of Ingredients 18

2 dozen littleneck clams (we used large ones whose shells were about 2-inches in diameter)
6 ounces andouille sausage
1 tablespoon vegetable oil
1 stick unsalted butter, at room temperature
2 tablespoons finely minced garlic
1 tablespoon minced parsley leaves, plus more for garnishing
1 teaspoon Essence, recipe follows
1/2 lemon, juiced
1/2 cup bread crumbs
2 slices thick-cut bacon, each cut into 12 pieces
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Hold the clams in a cloth and insert a knife between the shells. Pry the shells apart, then sever the hinge muscle and discard the top shell. Loosen the muscle in the lower shell. Put clams on a baking sheet and cover with plastic wrap; refrigerate until topping is prepared.
  • Put the andouille in a food processor and process until finely chopped. Heat the vegetable oil in a small saute pan and, when hot, add the sausage. Cook, stirring frequently, until browned and the fat is rendered. Transfer to a mixing bowl and allow to cool.
  • In a small bowl combine the butter with the garlic, parsley, the Essence, lemon juice and cooled andouille. Stir to blend thoroughly, then transfer to plastic wrap or waxed paper and roll into a tight cylinder about 1-inch in diameter. Refrigerate until firm.
  • Heat the broiler.
  • Remove the clams from the refrigerator and remove the plastic wrap. Top each clam with a pat of the garlic butter, then divide the bread crumbs evenly among the clams. Top each clam with 1 piece of the bacon and broil until the bacon is crispy and the clams are cooked through, about 5 to 6 minutes.
  • Remove from the oven. Arrange the clams on a platter and garnish with more parsley. Serve hot or warm.
  • Combine all ingredients thoroughly.

4 strips bacon, cut into bite-size pieces
2 cloves garlic, minced
2 medium shallots, minced
One 1-inch knob fresh ginger, minced
1/4 cup Italian flavored breadcrumbs
3 tablespoons finely grated Parmesan
2 cups chicken stock
1/4 cup dry white wine
1 pound Manila clams, scrubbed
Two 4-ounce packages instant ramen noodles
Fresh basil and red pepper flakes, for garnish, optional

Push the clams to one side and add the ramen noodles, then cook, stirring occasionally, until tender, about 3 minutes.
  • Turn the broiler on.

Categories     appetizer

Time 55m

Yield 6 to 8 servings

Number Of Ingredients 10

24 to 26 littleneck clams
1/2 cup dry white wine
3 slices center-cut bacon, cut into 1/4-inch dice
1/2 cup finely diced shallot (2 to 3 shallots)
1/4 cup finely diced red bell pepper (from 1 pepper)
3 cloves garlic, finely grated
1/2 cup panko breadcrumbs
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 tablespoon chopped fresh chives, for garnish

Steps:

  • Soak the clams in cold water to purge any sand, about 20 minutes. Then scrub them clean to remove any dirt or barnacles from the outer shells and then drain.
  • Add the white wine and cleaned clams to a large saucepan. Cover and heat over medium. After a few minutes, check to see if any of the clams have opened. Once they start opening, remove the opened clams to a large bowl to cool. Cover the pot and wait another minute or so before checking to see if any more clams have opened. Discard any clams that don't open after 5 minutes. Once all the clams have been removed, turn the heat down to low and let the white wine and clam juice mixture reduce until there is about 1/3 cup of liquid left.
  • In the meantime, heat a large skillet over medium heat. Add the bacon and cook, stirring occasionally, until it begins to render its fat and slightly browns, about 2 minutes. Next, add the shallots and bell pepper. Cook, stirring, until slightly softened, 2 to 3 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Use a small fine-mesh sieve to strain the 1/3 cup of white wine-clam juice mixture into the skillet. Stir to combine and cook until the mixture is slightly reduced and cohesive, about 2 minutes. Turn off the heat and let cool slightly.
  • Line a rimmed baking sheet with foil and preheat the oven to broil.
  • Mix the panko, olive oil, 1/4 teaspoon salt and 1/4 teaspoon pepper together in a small bowl. Set aside.
  • Carefully remove the top shell from each clam and use a spoon to loosen the meat from the bottom shell. Place the meat back into the bottom shell and then onto the prepared baking sheet.
  • Divide the bacon mixture evenly among the clams, using a spoon to pack the mixture tightly into the shell. Top each of the clams with about 1 teaspoon of the panko mixture.
  • Transfer the clams to the broiler and cook until the breadcrumbs are just golden brown, 30 seconds to a 1 minute. Keep an eye on them as the browning can happen quite quickly.
  • Remove the clams from the oven and use tongs to transfer them to a serving plate. Garnish with chopped chives. Serve immediately.

Asian clams casino is an elegant twist on the classic clam casino appetizer. These delectable finger foods are perfect for any formal or informal occasion. They are simple to make and pack an exquisite flavor that will leave any gathering wanting more. In this article, we guide you through valuable tips that will make your Asian clams casino your new signature dish.

Ingredients

Before even thinking about making the clam casinos, think about the ingredients you will need. As the saying goes, "garbage in, garbage out". The quantity and quality of your ingredients must be optimized for a successful outcome.
Clams
The type of clam you use for your casino is crucial as it will determine the final taste of the dish. The casino clams are traditionally quahogs or cherrystone clams that have a slightly salty flavor. However, for the Asian twist, you may want to consider using littleneck clams, which are smaller and sweeter. The key is to ensure that they are fresh and cleaned properly.
Bacon
Bacon is a crucial ingredient in clam casinos. It adds a smoky and salty flavor that enhances the clams' taste. Be sure to use thick-cut bacon as it holds its shape and does not shrink too much. Chop the bacon into small pieces to add to the minced garlic.
Vegetables
While the traditional clam casino includes green peppers, Asian clam casinos can feature more colorful veggies such as red and yellow pepper, red onions, and cilantro. You may also add in jalapenos for that extra kick. Be sure to chop these veggies into small and uniform sizes for a consistent texture.
Cheese
The cheese you choose must complement the casino's flavor but not overpower it. Parmesan cheese is popularly used in clam casinos, but for an Asian twist, you could try using a mix of cheddar and mozzarella cheese. These two types will not clump together when melted, and they will add a mild and creamy flavor.

Preparation

Now that your ingredients are in place, it's time to get to work. The preparation process of an Asian clam casino involves several steps that, if followed correctly, will result in an unforgettable dish.
Shucking the Clams
Shucking clams can be a daunting task. Begin by rinsing the clams in a bowl of water to remove sand, grit, or mud. Then, holding the clam in your hand, insert the tip of a clam knife between the clamshell's edges, and wiggle it slightly to loosen its muscle. Slide the knife around the clam edge to cut the muscle and open the shell. Discard the top shell, but keep the bottom shell that still holds the clam meat.
Cleaning the Clams
Before stuffing the clams, rinse them with cold water and pat them dry using a clean towel. If you notice any sand or grit on the clam meat, remove it by gently rubbing it with a brush or your fingers.
Preparing the Stuffing
The secret to a perfect stuffing is to let your imagination run wild. However, to make an Asian twist, begin by cooking the bacon and garlic in a pan, stirring occasionally, until the bacon is crispy. Remove the crispy bacon from the pan and leave the oil in the pan. Add in the vegetables to this oil and sauté until they are tender. Then, combine the bacon, garlic, and vegetables to make the stuffing. Crumble the cheese into the mixture and stir until it blends evenly.
Stuffing the Clams
After making the stuffing, take a spoonful of it and put it into each clam shell. You don't want to overstuff the clam or leave large pockets of air, as this will result in an uneven cook. The mixture should be level and well spread. Preheat your oven to 375°F, and then place the stuffed clams side by side on a baking sheet.

Cooking

The key to cooking clams is to ensure they are cooked all through but not overcooked. Clams that are cooked too long become rubbery and unpalatable. Here are a few tips to keep in mind when cooking your Asian clam casino.
Cooking Time
The cooking time for Asian clam casinos varies depending on the size of the clam. However, a general rule is that they cook for about 10-15 minutes. You will know they are ready when the cheese is melted, and the stuffing turns golden brown.
Cooking Temperature
The ideal temperature for cooking Asian clam casinos is 375°F. This temperature is high enough to cook the clams through but not too high to overcook them. Additionally, the temperature does not burn the stuffing, leaving your clams unappealing.
Doneness
Determining the doneness of clam casinos can be a tricky business. The best way to determine if they are ready is to look for a golden brown color on the stuffing. You may also try to move the stuffing with a spoon to check if the clams firmly hold it in place. When serving, ensure the clams are between warm and hot, making them pleasant to bite into.

Conclusion

In conclusion, the tricks outlined in this article will give your Asian clam casinos that extra kick above the traditional clams casino. You want to make sure to use fresh and high-quality ingredients, and follow the steps carefully. Most importantly, do not be afraid to experiment with flavors to make your unique signature stir-fry. Serve your Asian clams casino appetizers, and watch your guests marvel at the explosion of flavors emanating from their palettes.
