ASIAN CHICKEN AND BEAN THREAD NOODLES

Asian Chicken and Bean Thread Noodles image

This is a great, lite dish. It's also very filling. If you want a lite dinner with a great Asian flavor you will love this one. My husband isn't crazy about bean thread noodles so if you aren't crazy about bean thread noodles try substituting thin spaghetti noodles. It still has the same great flavor!

Time 1h25m

Yield 10

Number Of Ingredients 13

2 cups water
1 teaspoon salt
1 pound chicken legs
1 ounce dried shiitake mushrooms
8 ounces bean thread noodles (cellophane noodles)
3 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 ½ teaspoons achiote powder
1 tablespoon fish sauce
salt and pepper to taste
2 (14.5 ounce) cans chicken broth
2 green onions, chopped

Steps:

  • Bring 2 cups of water with 1 teaspoon salt to a boil in a pot; cook the chicken in the boiling water until until no longer pink in the center and the juices run clear, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Reserving the liquid, remove the chicken and allow to cool before removing the meat from the bones and shredding with two forks. Discard the skin and bones.
  • While the chicken cools place the shiitake mushrooms in a bowl and pour enough warm water over them to cover completely; allow to soak until pliable, about 30 minutes. Remove from the water, slice, and set aside. Place the bean thread noodles in the water and add more warm water if needed to cover; allow to soak until soft, about 10 minutes. Drain. Cut the noodles if desired.
  • Heat the olive oil in a skillet over medium heat; cook and stir the onion and garlic until softened, about 5 minutes. Add the achiote powder and continue to cook and stir until the mixture is well coated with the red-orange color. Stir the shredded chicken meat, sliced shiitake mushrooms, and fish sauce into the mixture; season with salt and pepper to taste. Allow the mixture to cook about 5 minutes before pouring the reserved liquid from cooking the chicken and the chicken broth into the mixture. Bring to a boil for 5 minutes. Add the noodles and cook another 5 minutes. Garnish with the green onion to serve.

However, preparing this meal can be daunting for first-time cooks, and that's why we have compiled a list of valuable tips that will help you perfect your Asian chicken and bean thread noodles recipe.

Tip #1: Use high-quality chicken

The quality of the chicken that you use in your Asian chicken and bean thread noodles recipe is crucial to the success of the dish. You should always use high-quality chicken that is fresh and free from any blemishes. Additionally, you can use either boneless skinless chicken breasts or thighs, or a combination of both for added flavor.

Tip #2: Marinate your chicken beforehand

Marinating your chicken is a crucial step that many cooks tend to skip. However, marinating your chicken beforehand helps to infuse it with flavor and ensures that it is juicy and tender when cooked. You can use a simple marinade of soy sauce, garlic, ginger, and honey to add flavor to your chicken.

Tip #3: Soak your bean thread noodles in warm water

Bean thread noodles are a popular ingredient in Asian cuisines, and they are a great alternative to traditional wheat noodles. However, when using bean thread noodles in your Asian chicken and bean thread noodles recipe, it is important to soak them in warm water beforehand. This helps to soften the noodles and allows them to cook evenly.

Tip #4: Get the right balance of vegetables

The vegetables that you use in your Asian chicken and bean thread noodles recipe play a significant role in the flavor and texture of the dish. You should aim to use a mix of different vegetables such as bell peppers, mushrooms, carrots, and onions to get the right balance of flavors and textures. Additionally, you can add leafy greens such as bok choy or spinach for added nutrition.

Tip #5: Use the right seasoning

Seasoning is crucial to any dish, and the same applies to the Asian chicken and bean thread noodles. You should aim to use the right seasoning such as soy sauce, oyster sauce, and sesame oil to create the perfect balance of flavors. Additionally, you can add spices such as garlic and ginger to add depth and complexity to the dish.

Tip #6: Cook your chicken separately from the rest of the ingredients

When preparing your Asian chicken and bean thread noodles recipe, it is important to cook your chicken separately from the rest of the ingredients. This helps to ensure that the chicken is cooked evenly and retains its juiciness. You can stir-fry the chicken in a separate pan before adding it to the vegetables and noodles.

Tip #7: Add your noodles at the end

Adding your cooked noodles at the end of the cooking process is crucial to ensure that they are not overcooked and become mushy. You can add the noodles to the vegetable and chicken stir-fry once the vegetables have softened, and the chicken is cooked through. This helps to ensure that the noodles are evenly coated in the sauce and absorb the flavors of the dish.

Tip #8: Garnish with fresh herbs

Garnishing your Asian chicken and bean thread noodles recipe with fresh herbs such as cilantro or green onions adds a burst of freshness and flavor to the dish. Additionally, you can add chopped peanuts or sesame seeds for added texture and crunch.
