5 pounds beef short ribs, cut into 4-ounce portions
1 cup soy sauce
1/4 cup rice wine vinegar
3 cloves garlic, peeled and smashed
1 (5-inch) stalk lemongrass, halved and smashed
1 tablespoon peeled and minced ginger
1/2 cup light brown sugar
1 quart water
1/2 cup sliced green onion bottoms, white part only
3/4 teaspoon crushed red pepper
1/4 cup fresh orange juice
1/4 cup hoisin sauce
2 tablespoons fresh lemon juice
Jasmine Rice, for serving
2 teaspoons finely grated orange rind, for serving
Sliced green onion tops, optional for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a wide stockpot or Dutch oven, combine the short ribs, soy sauce, vinegar, garlic, lemongrass, ginger, brown sugar, water, green onion bottoms, crushed red pepper, and 2 tablespoons of the orange juice. Make sure that the stockpot is deep enough so that the short ribs are submerged in the liquid.
  • Bake the short ribs, covered, for about 3 hours, or until the meat is tender and falling off the bones. Remove the short ribs from the braising liquid and cover to keep warm. Increase the oven temperature to 425 degrees F.

Reduce the liquid until only about 1 1/4 cups remain. Strain through a fine-meshed strainer, discarding the solids. Stir in the remaining 2 tablespoons of orange juice and the lemon juice.
  • Return the short ribs and the reduced sauce to the stockpot or Dutch oven, coating the short ribs well with the sauce. Bake for 10 minutes, until the short ribs are heated through and slightly glazed. Serve hot over jasmine rice. Season each portion with the orange zest and garnish with the green onions if desired.

Teriyaki-Glazed Pork Spare Ribs image

Provided by Tyler Florence

Categories     main-dish

Time 5h

Yield 4 to 6 servings

Number Of Ingredients 14

Salt and freshly ground black pepper
1/2 cup Chinese five-spice powder
1 rack pork spareribs, trimmed of excess fat, cut in 1/2 through the bone so you have 2-inch length riblets
2 tablespoons white sesame seeds, for garnish
Cilantro leaves, chopped, for garnish
Green onion, thinly sliced, for garnish
1 cup low-sodium soy sauce
1 cup fresh grapefruit juice
1/4 cup hoisin sauce
3 tablespoons ketchup
3 tablespoons rice vinegar
1 fresh red chile, split
2 garlic cloves, smashed
2 -inch piece fresh ginger, cut into 1-inch coins

Steps:

  • Preheat the oven to 300 degrees F.
  • Mix the salt and pepper in a small bowl with the five-spice powder. Rub some of the mixture all over the ribs, and then store remaining rub in an airtight container for another use. Arrange the ribs in a single layer in a roasting pan and slow-roast for 2 hours.
  • To make Teriyaki Glaze: In a pot, combine the soy sauce, grapefruit juice, hoisin sauce, ketchup, rice wine vinegar, chile, garlic, and ginger over medium heat. Bring to a slow simmer and cook, stirring, until thickened, about 20 minutes. Reserve 1 cup of Teriyaki Glaze in a small bowl and set aside.
  • In the last 30 minutes of cooking, baste the ribs with the Teriyaki Glaze. When they are done, the meat will start to pull away from the bone. Just before you're ready to eat, baste the ribs with the Teriyaki Glaze again and stick them under the broiler for 5 to 8 minutes to make the spareribs a nice crusty brown. Separate the ribs with a cleaver or sharp knife, cutting at every second rib so there are 2 bones per piece. Pile them on a platter, and pour on the reserved Glaze. Sprinkle with sesame seeds and chopped cilantro.

CHINESE SPARERIBS WITH TERIYAKI GLAZE

Provided by Tyler Florence

Categories     appetizer

Time 2h28m

Yield 8 servings

Number Of Ingredients 14

2 (4-pound) racks pork spareribs, trimmed of excess fat
1/2 cup Chinese five-spice powder
Sea salt and freshly ground black pepper
1 cup low-sodium soy sauce
1 cup grapefruit juice
1/4 cup hoisin sauce
1/4 cup ketchup
3 tablespoons rice vinegar
1/4 cup brown sugar
1 fresh red chili, minced
2 garlic cloves, smashed
2-inch piece fresh ginger, whacked open with the flat side of a knife
2 tablespoons sesame seeds, for garnish
Chopped fresh cilantro and green onion, for garnish

Steps:

  • Preheat the oven to 300 degrees F.
  • Rub the ribs all over with the five-spice powder; then season generously with salt and pepper. Put the ribs in a single layer in a roasting pan and slow-roast until they are almost tender, about 2 hours.
  • Meanwhile make the glaze. In a large bowl combine the soy sauce, grapefruit juice, hoisin sauce, ketchup, vinegar, brown sugar, chili, garlic and ginger in a saucepan. Bring the sauce to a simmer over medium heat. Cook until the sauce reduces and thickens then remove from the heat. Strain the sauce and reserve.
  • When the ribs are about 30 minutes away from being done, baste them with the teriyaki sauce. Cook until the meat pulls easily from the bone (about 1/2-inch of bone will show).
  • Just before serving, preheat the broiler. Baste the ribs again with the teriyaki sauce and brown them under the broiler for 5 to 8 minutes. (Keep a close eye on these guys - ribs go from perfectly crisp to perfectly burnt in seconds.) Separate the ribs with a cleaver or sharp knife, pile them on a platter, and pour on the remaining sauce. Sprinkle with sesame seeds, chopped cilantro, and green onion before serving.

KOREAN BARBECUE SHORT RIBS TERIYAKI

Korean Barbecue Short Ribs Teriyaki image

We are doing Korean-style barbecue beef short ribs, except that we're going to use a classic Japanese teriyaki marinade, which aside from being super easy, works incredibly well on this cut of beef. I served mine with rice and coleslaw, and topped the ribs with green onion and cilantro or cilantro flowers.

Provided by Chef John

Time 4h15m

Yield 4

Number Of Ingredients 8

½ cup soy sauce
½ cup sake
⅓ cup mirin (Japanese sweet wine)
¼ cup packed brown sugar
2 teaspoons finely grated ginger
2 tablespoons finely minced green onions
1 teaspoon ground turmeric
2 pounds beef short ribs, cut flanken-style

Steps:

  • Combine soy sauce, sake, mirin, brown sugar, ginger, green onions, and turmeric in a large mixing bowl and whisk until combined. Add the short ribs and toss until thoroughly and evenly coated.
  • Cover with plastic wrap and marinate in the refrigerator for 4 to 12 hours, tossing occasionally.
  • Preheat a charcoal grill for high heat.
  • Remove meat from the refrigerator. Grill over very hot charcoal until slightly caramelized and just cooked through, 2 to 3 minutes per side. Any excess marinade can be used to baste the meat while it's grilling. Flip meat after basting to allow to caramelize, about 1 minute more per side.
  • Serve immediately, spooning or brushing on any accumulated juices from the plate.

Asian braised short ribs with cranberry teriyaki glaze is a delicious and flavorful combination of tender beef short ribs and a tangy, sweet and savory glaze. This recipe is a unique take on traditional beef short ribs, and the addition of cranberries gives it a festive touch.

Preparation

To make the Asian braised short ribs with cranberry teriyaki glaze, you will need a combination of savory ingredients such as soy sauce, garlic, ginger, and beef broth. You will also need a few sweet ingredients like honey and brown sugar, and to add tartness you should get some fresh cranberries. You can purchase fresh beef short ribs or ask your butcher to cut them for you.
Ingredients
  • 3-4 pounds beef short ribs
  • 1 cup soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons fresh ginger, minced
  • 1/2 cup beef broth
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1 cup fresh cranberries

Cooking

To cook the Asian braised short ribs with cranberry teriyaki glaze, you need to start by seasoning the short ribs with salt and pepper. Next, you should heat up your pot to medium-high heat and add a little oil. Then, sear the beef until it is brown on all sides. Once the short ribs are browned, transfer them to a plate and set them aside. In the same pot that you used to sear the short ribs, add minced ginger and garlic, stirring for a few minutes until fragrant. Add soy sauce, beef broth, honey, and brown sugar to the pot, and stir until the brown sugar and honey have dissolved. Then, add the browned short ribs back to the pot, and add enough water to the pot until the beef is mostly submerged. Turn the heat down to low, put the lid on, and let the beef simmer for 2-3 hours or until it is soft and tender. When the beef is cooked, remove it and set it aside. The sauce left in the pot should be thickened and reduced, and then you can add fresh cranberries to the pot. Simmer the cranberries in the sauce for 10-15 minutes until they have burst and the sauce is tangy and sweet.

Serving

To serve the Asian braised short ribs with cranberry teriyaki glaze, you should drizzle the sauce over the short ribs before serving. This dish can be served with your favorite side dishes such as mashed potatoes, rice, or roasted vegetables. Once you taste the dish, you will be amazed by the succulence of the beef mixed with the tang of the cranberries.

When it comes to braised short ribs, the Asian style is one of the most popular variants. This is because of the rich and exotic flavors of Asian seasonings and spices that give the beef short ribs a unique taste. If you crave for intense and flavorful meat, then you should definitely try making Asian braised short ribs with cranberry teriyaki glaze recipes. Here are some valuable tips that will help you create restaurant-quality beef short ribs at home:

1. Choose the Right Cut of Beef

One of the most important factors in cooking Asian braised short ribs with cranberry teriyaki glaze recipes is choosing the right cut of beef. You will need a well-marbled beef that has enough fat content. The fat will melt during the braising process, making the beef more tender and juicy. The recommended cut for this recipe is beef short ribs, which are also known as flanken style cuts. These cuts come from the rib area of the beef, and they are often cut into short lengths that are suitable for braising.

2. Marinate the Beef Overnight

Before cooking the beef short ribs, it is important to marinate them overnight to allow the flavors to penetrate the meat. You can use a mixture of Asian seasonings and spices such as garlic, ginger, soy sauce, hoisin sauce, rice vinegar, and brown sugar. You can also add some red pepper flakes or Chinese five-spice powder to give the beef more depth of flavor. It is recommended to marinate the beef short ribs in a large ziplock bag, making sure that the marinade covers all sides of the meat.

3. Use a Dutch Oven or Slow Cooker

Braised short ribs require slow cooking for several hours to make the beef tender and melt-in-your-mouth. You can use a Dutch oven or a slow cooker to cook the beef short ribs. A Dutch oven is a heavy pot with a tight-fitting lid that is perfect for braising. You can brown the beef short ribs on the stovetop and then transfer the pot to the oven to cook for several hours. A slow cooker is also convenient for making braised short ribs as you can leave it to cook overnight or while you are away at work.

4. Make the Cranberry Teriyaki Glaze

To add a unique twist to the Asian braised short ribs, you can make a cranberry teriyaki glaze to drizzle over the meat. This glaze is made using cranberry juice, soy sauce, brown sugar, ginger, garlic, and cornstarch. You can also add some apple cider vinegar or rice vinegar to balance the sweetness of the glaze. Simmer the glaze on medium heat until it thickens, then set it aside to cool.

5. Garnish with Asian Herbs and Vegetables

To give the Asian braised short ribs a pop of freshness, you can garnish them with Asian herbs and vegetables. Fresh cilantro, green onions, and sliced radishes are great options to add color and flavor to the dish. You can also serve the beef short ribs with steamed rice or noodles to make it a complete meal.

Conclusion

Making Asian braised short ribs with cranberry teriyaki glaze recipes can be a fun and rewarding experience. With these valuable tips, you can cook succulent and flavorful beef short ribs that rival those served in restaurants. Remember to choose the right cut of beef, marinate it overnight, use a Dutch oven or slow cooker, make the cranberry teriyaki glaze, and garnish with Asian herbs and vegetables. Happy cooking!
