BEEF STIR FRY - ASIAN STYLE

Beef Stir Fry - Asian Style image

Preparation time does include marinade time, just to allow the marinade to soak into the beef. To get neat thin slices of beef I freeze the beef for 45 mins and then slice thinly, giving me the perfect cut. I don't eat red meat but Hubby and Little Miss (DD) love beef and they enjoyed this quick recipe. Original recipe comes from Annette Sym's which was featured on Channel Nine's Extra but I have twinkled with it

ASIAN BEEF AND BROWN RICE STIR-FRY

Asian Beef and Brown Rice Stir-Fry image

Lean ground beef and lots of vegetables, seasoned with peppers, garlic, gingerroot, and green onions, make a flavorful one-dish meal the whole family will enjoy.

Yield serves 4, 1 1/2 cups beef and vegetable mixture and 1/2 cup rice per serving

Number Of Ingredients 17

1 1/2 cups uncooked instant brown rice
1 pound extra-lean ground beef
2 teaspoons grated peeled gingerroot
1 teaspoon bottled minced garlic or 2 medium garlic cloves, minced
Cooking spray
3 medium carrots, thinly sliced crosswise
2 medium ribs of celery, thinly sliced crosswise
1 small red bell pepper, cut into 1-inch squares
1 tablespoon water
2 teaspoons sesame seeds
8 ounces fresh bean sprouts
3 medium green onions (green and white parts), sliced crosswise into 1/4-inch pieces
1 cup fat-free, no-salt-added beef broth
1 tablespoon soy sauce (lowest sodium available)
2 teaspoons cornstarch
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper

Steps:

  • Prepare the rice using the package directions, omitting the salt and oil.
  • Meanwhile, in a large skillet, cook the ground beef, gingerroot, and garlic over medium-high heat for about 5 minutes, or until the beef is browned, stirring frequently to turn and crumble the beef. Drain and discard any liquid. Transfer the beef to a plate. Set aside.
  • Before returning the skillet to the heat, wipe it with a paper towel and lightly spray with cooking spray. With the skillet over medium-high heat, cook the carrots, celery, and bell pepper for 2 minutes, stirring frequently. Stir in the water. Cook, covered, for 2 minutes.
  • While the vegetables cook, dry-roast the sesame seeds in a small skillet over low heat for about 2 minutes, or just until fragrant and golden, stirring frequently. Watch carefully so they do not get too brown. Pour onto a small plate.
  • Stir the bean sprouts and green onions into the carrot mixture. Cook, covered, for 2 minutes. Stir in the beef.
  • In a small bowl, whisk together the remaining ingredients until the cornstarch is dissolved. Pour over the beef. Cook for about 2 minutes, or until bubbly and slightly thickened, stirring constantly. Serve over the rice. Sprinkle with the sesame seeds.

ASIAN GROUND BEEF STIR FRY

Asian Ground Beef Stir Fry image

This is my first ever recipe submission! I actually totally improvised this recipe today and thought it turned out well enough to share. I named it "Asian" because of the soy sauce, sesame oil and ginger. I highly recommend using a cast iron skillet because it holds heat much better than a standard pan which is important for a stir fry. It also helps to add a hint of toasty, smoky flavor. Use any standard cooking potatoes. I actually used 3 small red potatoes. You can also try adding green pepper, peas or chopped tomatoes for more flavor. Feel free to use regular soy sauce but it's saltier, so watch the salt you add during cooking. I always use low sodium due to dietary restrictions. If you like things spicy, add more cayenne.

Provided by Chef MoJoey

Categories     Meat

Time 35m

Yield 4 serving(s)

Number Of Ingredients 14

1 lb ground beef (preferably 80% lean)
1 medium russet potato, peeled and diced
1 medium onion, chopped
4 garlic cloves, minced
3 -4 tablespoons low sodium soy sauce
2 tablespoons rice wine vinegar
2 teaspoons ground ginger
1 tablespoon paprika
1/2 teaspoon cayenne pepper
1 teaspoon sesame oil
salt
ground pepper
olive oil
1 bunch cilantro, small bunch, roughly chopped

Steps:

  • Heat skillet to medium heat and add about 3 tbsp olive oil.
  • Add the onions and a little salt and pepper.
  • Cook a few minutes until onions are almost translucent.
  • Add garlic.
  • Add potatoes and about 1 tablespoons more olive oil.
  • Stir with onions and garlic.
  • Cover skillet and let cook 4-5 minutes, stirring a couple times. Potatoes should now be slightly fork tender.
  • Add ginger, paprika and cayenne and stir.
  • Make a "hole" in the mixture, exposing a small circle of the bottom of the skillet and add sesame oil to it.
  • Stir ingredients well and let cook another couple minutes.
  • Remove ingredients from skillet to a bowl and set aside.
  • Add a little more olive oil and brown the ground beef.
  • Mix in a dash of salt and pepper.
  • Drain liquid, leaving a little bit in the pan.
  • Add the onion/garlic/potato mixture back to pan and combine with beef.
  • Add soy sauce and rice wine vinegar and stir well.
  • Taste mixture and add whatever you think it needs. I usually add a little more ginger at this point. Soy sauce adds tangy/salty flavor, rice wine vinegar is sour, etc.
  • After cooking a couple more minutes, add cilantro and stir well.
  • Serve by itself or over steamed rice.
  • Enjoy!

As an Asian beef stir fry enthusiast, I have learned that making the perfect stir fry takes more than just assembling ingredients and cooking them in a wok or skillet. Preparation techniques, ingredient selection, and seasoning are all important factors to consider. In this article, I will share some valuable tips that I have learned to help you achieve a delicious and authentic Asian beef stir fry dish.

Tip 1: Cut your beef into thin slices

One of the most important aspects of an Asian beef stir fry dish is the texture of the beef. To achieve the perfect tender and juicy beef, it is important to cut your beef into thin slices against the grain. When you cut against the grain, you are cutting the fibers of the muscle, which makes it easier to chew and more tender.
Tip 1.1: Freeze your beef for easier slicing
If you find it difficult to cut your beef into thin slices, try placing your beef in the freezer for 15-20 minutes. This will make the beef slightly firmer, which makes it easier to slice thinly.

Tip 2: Use the right cut of beef

Different cuts of beef have different textures and flavors, so it is important to choose the right cut for your dish. Some good cuts for stir fry dishes are flank steak, sirloin, and ribeye. These cuts are tender and have good marbling, which adds flavor to the dish.
Tip 2.1: Marinate your beef
Marinating your beef can help tenderize the meat and add flavor to your dish. You can marinate your beef with a mixture of soy sauce, rice wine, garlic, ginger, and brown sugar for at least 30 minutes before cooking.

Tip 3: Use the right oil

Using the right oil is important when making a stir fry dish. It is recommended to use oils with a high smoke point, such as peanut oil or vegetable oil. These oils can withstand high heat without burning or smoking, which can ruin the flavor of your dish.
Tip 3.1: Use a little sesame oil
Adding a small amount of sesame oil to your stir fry can add a rich and nutty flavor to your dish. However, it is important to use sesame oil sparingly as it has a low smoke point and can burn easily.

Tip 4: Cook your vegetables first

When making a stir fry dish, it is recommended to cook your vegetables first before adding your beef. This allows your vegetables to cook evenly and retain their crunchiness. Once your vegetables are cooked, you can remove them from the pan and set them aside while you cook your beef.
Tip 4.1: Cut your vegetables into bite-sized pieces
To ensure that your vegetables cook evenly and quickly, it is important to cut them into bite-sized pieces. This also makes it easier to eat and enjoy your stir fry.

Tip 5: Season your dish with soy sauce and other Asian sauces

Soy sauce is a staple ingredient in Asian cuisine and is commonly used to season stir fry dishes. In addition, you can also use other sauces such as oyster sauce, hoisin sauce, and fish sauce to add more flavor to your dish.
Tip 5.1: Use a little cornstarch to thicken your sauce
If you find that your sauce is too watery, you can add a little cornstarch mixed with water to thicken it. This will also help your sauce cling to your beef and vegetables, making your dish tastier.

Tip 6: Add aromatics such as garlic and ginger

Garlic and ginger are commonly used in Asian stir fry dishes to add aroma and flavor. These ingredients can be chopped finely and added to the pan before cooking your beef and vegetables.
Tip 6.1: Crush your garlic and ginger
Crushing your garlic and ginger before adding them to your pan can help release their flavor more fully. You can do this by using a mortar and pestle or the flat side of a knife.

Conclusion

By following these valuable tips, you can elevate your Asian beef stir fry dishes and impress your family and friends with your cooking skills. Remember to cut your beef thinly, use the right oil, cook your vegetables first, season your dish with soy sauce and other Asian sauces, and add aromatics such as garlic and ginger. With these tips in mind, you can create delicious and authentic Asian-inspired dishes in your own kitchen.
