Steps:

  • Toss arugula and cilantro together in a large salad bowl. Drizzle arugula mixture with lemon juice, olive oil, and balsamic vinegar. This is just so simple and easy to do but is full of flavour as well. I did use pine nuts when I made this and they worked out quite well. I would suggest a good robust blue for this or Gorgonzola.

3 tablespoons white wine vinegar
1 tablespoon palm sugar (can use brown sugar)
2 firm brown pears (quartered and cored)
1/2 cup walnuts
100 g rocket (arugula)
150 g soft blue cheese, sliced

Steps:

  • Place the butter, vinegar and sugar in a frying pan over medium heat.
  • When butter is melted add the pear and walnuts and cook for 4-6 minutes until the pear is just soft.
  • Place the rocket on serving plates and top with the pear and walnuts.
  • Spoon over the pan juices and top with the blue cheese.

1/2 cup pine nuts, toasted
3 tablespoons extra virgin olive oil

3 ounces parmesan cheese, shaved with a vegetable peeler
salt and pepper

Steps:

  • Place salad greens and arugula in serving bowl; add tomatoes and pine nuts; toss well.

2 tablespoons red wine vinegar
2 tablespoons orange juice
3 tablespoons olive oil
coarse salt

1 (15 ounce) can sliced beets, drained
1/2 cup toasted walnuts, finely chopped
6 ounces soft fresh goat cheese
8 ounces arugula, stemmed and washed
4 cups baby romaine lettuce

Steps:

  • In a small bowl, whisk together shallot, vinegar, orange juice, and oil; season with salt and pepper. Place beets in a small bowl. Pour 1/3 of the dressing over beets; toss to coat.
  • Place walnuts in a shallow dish. With your hands, form goat cheese into 12 equal balls. Roll balls in walnuts, turning to coat completely, then flatten into disks.
  • Place arugula and romain lettuce in a large bowl. Drizzle greens with remaining dressing, and toss to combine. Divide among plates, and top each serving with some of the sliced beets and 3 goat-cheese disks.

1 large fennel bulbs or 2 small baby fennel
