I grew up eating fennel, but I've noticed it's not very common in the US. For all the fennel lovers like me, here is a delicious and good looking recipe. For the non fennel lovers, you can easily substitute celery.

Salt and pepper
1 teaspoon fennel pollen
1 teaspoon granulated garlic
1 teaspoon granulated onion
2 teaspoons lemon or orange zest
6 to 8 tablespoons EVOO
8 spears asparagus, trimmed

Fine sea salt to taste
Freshly ground pepper to taste

CRISPY BACON-WRAPPED CHICKEN WITH THREE CHEESE CREAMY RISOTTO AND ARUGULA FENNEL SALAD

Crispy Bacon-Wrapped Chicken with Three Cheese Creamy Risotto and Arugula Fennel Salad image

Provided by Brad Sorenson

Categories     main-dish

Time 1h30m

Yield 4 servings

Number Of Ingredients 31

1 bottle light-bodied dry red wine, such as Pinot Noir or Beaujolais
2 shallots, sliced
2 cloves garlic, roughly chopped
Small bunch fresh basil
2 cloves
1 dry bay leaf
1 cup chicken stock
2 tablespoons cold butter, diced
Salt and freshly ground black pepper
4 boneless, skinless chicken breast halves, about 1 pound, preferably organic, trimmed and squared off a bit
Kosher salt and freshly ground black pepper
16 slices bacon, not thick cut, from 16-ounce package
2 tablespoons olive oil
2 tablespoons freshly squeezed Meyer lemon juice
1 tablespoon extra-virgin olive oil
Salt and freshly ground black pepper
2 cups baby arugula, 2 ounces, trimmed and washed
1 small fennel bulb, thinly sliced, 1 1/2 cups
1 tablespoon olive oil
2 (1/4-inch) thick slices pancetta, 4 3/4-ounces, diced, 1 cup
3 cloves garlic, minced
1 shallot, finely chopped
1 1/3 cups Arborio rice, 9-ounces
1/2 cup white wine
3 cups chicken stock, heated
1/4 cup grated Parmesan cheese, 1-ounce
2 tablespoons mascarpone cheese, 1 1/2-ounces
1-ounce goat cheese
1/4 cup fresh basil leaves, thinly sliced
1 tablespoon butter
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Sauce:
  • In a medium saucepot, over medium heat, combine the wine, shallots, and garlic and bring to a simmer. Add the basil, cloves, and bay leaf, and let simmer until the liquid is reduced to about 1 cup. When reduced, add the chicken stock, and continue to simmer until reduced by half. Strain into another sauce pan and stir in the butter. Season the mixture with salt, and pepper, to taste. Keep warm.
  • Chicken:
  • Season the chicken lightly with salt, and pepper, to taste. Lay 4 slices of bacon crosswise on a cutting board with the slices slightly overlapping. Put a chicken breast on top of the bacon. Bring the bacon slices up and around the chicken so the entire breast is wrapped. Repeat with the remaining chicken breasts and bacon.
  • In a large oven-proof skillet, heat 2 tablespoons olive oil over medium heat. Get the pan and oil hot, and then add the bacon-wrapped chicken and cook until the bacon is crispy on both sides, about 8 minutes per side. Transfer the pan to the oven and bake, until the chicken is cooked through, about 15 to 18 minutes.
  • Salad:
  • Whisk together the lemon juice and olive oil. Season the salad with salt, and pepper, to taste. Put the arugula and fennel into a large bowl and toss until well coated.
  • Scoop some risotto nicely into the center or each plate, making sure it has some height so the chicken can stand up. Cut the chicken on a bias and put on top of the risotto. Drizzle some of the red wine sauce around the plate and directly over the chicken. Top each plate with some arugula salad and serve.
  • Serving suggestion: Three Cheese Creamy Risotto, recipe follows.
  • Heat a large pot (wider is better than taller) over medium heat and add the olive oil and pancetta. Cook the pancetta until it begins to crisp, and then add the garlic and shallots. Cook the shallots and garlic until they begin to brown in color. Add the rice and stir well to coat. Cook the rice for 1 minute.
  • Add wine and stir well. Stir the rice until the wine is almost completely absorbed. Add in some chicken stock until rice is just covered and stir again until the stock is absorbed into the rice. Continue to gradually add the stock, stirring well after each addition, until the rice is cooked through, but still has a bite. You may not use all of the stock.
  • When rice is cooked, stir in the cheeses and basil. Remove from heat and stir in the butter. Season with salt, and pepper, to taste. The risotto should be smooth, creamy, rich, and delicious.

12 jumbo head-on shrimp or prawns (16-18 count)
2 tablespoons EVOO, plus more for liberal drizzling
1 fresh bay leaf
Chicken stock, to cover
Sea salt and black pepper
Zest and juice of 1 lemon
1 teaspoon chile flakes
2 to 3 cloves garlic, grated or minced
12 large fresh sage leaves
12 slices thinly sliced prosciutto
1/4 cup dry vermouth

A hunk of crusty bread, for serving
1 bulb fennel, thinly sliced
2 cups arugula
Juice of 1 lemon
Sea salt and black pepper
Olive Oil, to coat

ARUGULA SALAD WITH FENNEL, ORANGES AND PECORINO ROMANO

Arugula Salad With Fennel, Oranges and Pecorino Romano image

This sophisticated salad features fresh and vibrant flavors. Although it is quick and simple to make, it is elegant when plated artistically and perfectly worthy of a dinner party of a Valentine's Day dinner. Ironically, I grew up in an Italian household and we enjoyed orange slices drizzled with olive oil and a grinding of black pepper, as well as fennel dipped in oil and pepper, so these flavors seem normal and well balanced to my palate!

Provided by CookinDiva

Categories     European

Time 10m

Yield 4 serving(s)

Number Of Ingredients 7

5 ounces arugula
4 mandarin oranges, peeled and sectioned
1 fennel bulb, white part shaved
4 ounces pecorino romano cheese
4 tablespoons olive oil, high quality fruity flavored
3 tablespoons balsamic vinegar (or balsamic "glaze")
fresh ground black pepper

Steps:

  • Prepare fennel - using only the white bulb, shave thin slices on a mandolin or with a very sharp knife. Set aside.
  • Prepare pecorino-romano cheese - finely grated cheese does NOT have enough flavor "punch", so buy your cheese in bulk and create larger pieces, such as match-stick size or larger shavings.
  • On 4 cold plates, arrange arugula. Top with orange sections, shaved fennel and pieces of pecorino-romano cheese.
  • Drizzle with olive oil and balsamic vinegar or balsamic "glaze" (see note below). Finish with a grinding of fresh black pepper and serve.
  • NOTE: You can find balsamic "glaze" in gourmet or Italian stores. It is a thicker, more concentrated balsamic vinegar.

Ingredients of Arugula and Fennel Salad
Arugula and fennel salad can be made using a variety of ingredients, depending on your taste preferences and availability. Some of the common ingredients include: - Arugula: This is the main ingredient in the salad and provides a spicy, slightly bitter flavor that complements the sweetness of fennel. You can use either the bulb or the fronds, or a combination of both. - Citrus fruits: To add a burst of flavor and acidity, you can use various citrus fruits such as orange, grapefruit, or lemon. You can either juice the fruit and use it as a dressing, or slice it and use it as a garnish. - Nuts: To add crunch and texture to the salad, you can use various nuts such as almonds, walnuts, or pecans. You can either chop the nuts finely and sprinkle them on top of the salad, or use them to make a nut-based dressing. - Cheese: To add richness and flavor to the salad, you can use various types of cheese such as feta, goat cheese, or parmesan. Here are valuable tips to help you get the best out of your arugula and fennel salad recipe.

Tip 1: Choosing the right fennel

When making an arugula and fennel salad recipe, it is essential to choose the right fennel bulb. The fennel's texture and flavor will make or break your salad. Look for a fennel bulb that is firm and solid without any cracks or discolorations. If the fennel bulb is wilted or has wet areas, it is a sign that it is not fresh. Select a fennel bulb that has a sweet aroma and a bright green color on the fronds. The fennel bulb should also have a fresh root that is not dry or rotten.

Tip 2: Preparing the fennel

Once you have selected the right fennel bulb, the next step is to prepare it for the arugula and fennel salad recipe. First, trim off the stalks and fronds, leaving a small portion of the stalks for flavor. Cut the bulb in half and remove the tough core using a sharp paring knife. Use a mandoline or a sharp knife to slice the bulb into thin slices. Thin slices will make the fennel easy to eat and blend well with the arugula.

Tip 3: Choosing the right arugula

Arugula is a crucial ingredient in an arugula and fennel salad recipe. Choosing the right arugula will ensure that you have a flavorful, crunchy salad. When selecting arugula, look for leaves that are bright green with no signs of wilting or yellowing. The leaves should be firm and crisp. Avoid arugula that is overgrown or has tough stems. If possible, go for young arugula, which is sweeter and more tender than older leaves.

Tip 4: Dressing the salad

The dressing is a critical component of any salad recipe. When making an arugula and fennel salad, you can choose to go with a simple vinaigrette or a creamy dressing. A simple vinaigrette will let the arugula and fennel flavor shine through, while a creamy dressing will add richness and depth to the salad. If you choose to use a vinaigrette, you can use olive oil, vinegar, salt, and pepper. For creamy dressing, you can mix mayonnaise, Greek yogurt, lemon juice, and Dijon mustard. Whisk the ingredients together in a bowl and pour over the arugula and fennel. Toss the salad thoroughly to ensure that every ingredient is coated with the dressing.

Tip 5: Adding other ingredients

While arugula and fennel are the main ingredients in an arugula and fennel salad recipe, you can add other ingredients to make the salad more interesting and flavorful. Some of the ingredients you can add include:
Nuts and seeds:
Add some crunch to your arugula and fennel salad recipe by adding nuts and seeds. Walnuts, almonds, and pumpkin seeds are good options that will add texture and depth to your salad.
