BRAISED GREEK ARTICHOKE BOTTOMS WITH LEMON AND OLIVE OIL

Braised Greek Artichoke Bottoms with Lemon and Olive Oil image

Because artichokes appear in early spring in Greece, they were traditionally part of the Passover meal. The recipe that inspired this, from Nicholas Stavroulakis' delightful "Cookbook of the Jews of Greece," also included honey (2 tablespoons), but I prefer the dish without. I don't like throwing away the leaves that I break off, especially with large, meaty artichokes, so I steam them separately and serve them as an appetizer, with vinaigrette.

Provided by Martha Rose Shulman

Time 45m

Yield 4 servings

Number Of Ingredients 5

8 medium artichokes, or 4 large
Juice of 4 lemons
1/3 cup extra virgin olive oil
Salt to taste
2 tablespoons chopped fresh dill, plus additional for garnish if desired

Steps:

  • Fill a bowl with water and add the juice of 1 lemon. Cut away the end of the stems of the artichokes, leaving about an inch. Break off the tough leaves around the bottom, and using a large, sharp chef's knife, cut away the tops about an inch above the widest part of the artichoke. Then trim the base by holding a paring knife at a 45-degree angle and turning the artichoke against the knife. You should end up with bare artichoke bottoms with no leaves and smooth sides. Peel the stems. Cut the artichoke bottom in half, scoop out the spiny inner leaves and the choke, and immediately plunge it into the bowl of acidulated water.
  • Oil a large casserole. Drain the artichokes, take two halves and press them together to make a single artichoke, and place in the casserole, stem up. Repeat with the remaining artichokes, squeezing them into the pot with their stems facing up.
  • Add enough water to the casserole to come a third of the way up the sides of the artichoke bottoms. Drizzle in the remaining lemon juice and the olive oil. Add salt to taste and sprinkle on the dill. Bring to a simmer, cover tightly and simmer over low heat for about 30 minutes, or until the artichokes are tender. Remove from the heat and allow to cool, then transfer to a platter. Discard the liquid in the pot. Serve cold or room temperature, garnished, if desired, with fresh dill.

BRAISED CHICKEN WITH ARTICHOKES AND OLIVES

Braised Chicken With Artichokes and Olives image

Imbued with the classic Mediterranean flavors of artichokes, garlic, mint and olives, this braised chicken is complex and highly satisfying, with a white wine sauce brightened with lemon. Fresh artichokes have the most pronounced character and meatiest texture, but if you can't get them or don't want to go to the trouble of cleaning them, you can substitute frozen artichoke hearts (you'll need a 9- or 10-once package). Serve this with crusty bread for sauce-mopping.

Categories     one pot, main course

Time 1h15m

Yield 4 servings

Number Of Ingredients 15

1 1/2 lemons
3 medium artichokes, about 1 1/2 pounds
3 1/2 pounds bone-in chicken pieces
2 teaspoons kosher salt
2 teaspoons black pepper
2 tablespoons extra-virgin olive oil, more as needed
4 garlic cloves, smashed and peeled
1 1/2 cups cherry tomatoes, halved
Pinch red pepper flakes
3/4 cup dry white wine
1/3 cup pitted olives, halved (use black, green or a mix)
2 large rosemary branches
1 tablespoon unsalted butter
Grated Parmigiano-Reggiano, as needed
Chives or mint leaves, for garnish (optional)

Steps:

  • Squeeze the juice of 1 lemon into a large bowl of water. Discard the outer leaves of each artichoke. As you do so, and as you continue cleaning the artichokes, dip them into the lemon water to stop the cut sides from browning. Use a paring knife to peel the base and stems. Slice off the top third of each artichoke. Slice the artichokes in half lengthwise. Using a teaspoon or grapefruit spoon, scoop out the hairy chokes inside, pulling out any prickly purple leaves as well. Slice each half into three pieces. Put trimmed artichoke pieces in lemon water until needed.
  • Heat oven to 375 degrees. Pat the chicken dry with paper towel and season with salt and pepper. In a large (12-inch) ovenproof skillet with a lid, heat oil over medium-high heat. Add chicken pieces and sear in batches until well browned, 5 to 7 minutes per side. Transfer chicken to a plate.
  • Add artichokes and garlic to pan, adding more oil if needed, and cook, turning occasionally, until golden brown, about 5 minutes. Stir in tomatoes and red pepper flakes; cook 1 minute more.
  • Pour in wine and stir in olives, rosemary branches and grated zest of 1/2 lemon. (Do not discard after zesting.) Return chicken to pan. Bring liquid to a simmer.
  • Cover pan and transfer to oven. Cook until chicken is tender, 30 to 35 minutes. (Check white meat after 25 minutes and remove from oven if done.) Transfer chicken to a plate and place skillet over medium-high heat. Simmer until pan juices thicken and become saucelike, about 3 to 5 minutes. Whisk in butter.
  • Return chicken to pan and sprinkle with cheese. Adjust oven heat to broil and place pan in the oven until cheese is melted and golden, 2 to 3 minutes. (Watch carefully to see that it does not burn.) Squeeze juice of remaining lemon half over pan and serve garnished with chives or mint if you like.

Categories     main-dish

Time 1h30m

Yield 6 servings

Number Of Ingredients 26

1 pound fettuccine
1/4 cup olive oil
4 cloves garlic, sliced
2 teaspoons fresh oregano leaves
1/2 cup chicken broth or stock
4 cups spinach, stemmed and washed
Lemon Braised Artichoke Hearts, recipe follows
1/4 cup chopped Italian parsley leaves
1 tablespoon butter
Kosher salt
Freshly ground black pepper
Grated Parmesan, for serving
1/2 cup extra-virgin olive oil
1/2 cup freshly squeezed lemon juice
1 1/2 teaspoons finely chopped fresh thyme leaves, or Herbes de Napa, recipe follows
1 1/2 teaspoons minced garlic
1 1/2 teaspoons kosher salt
Small pinch freshly ground pepper
4 medium to large artichokes
1/2 lemon
6 tablespoons dried thyme leaves
3 tablespoons fennel seed
2 1/2 tablespoons dried summer savory leaves
1 1/2 tablespoons dried rosemary leaves
1 1/2 tablespoons crumbled bay leaves
1 1/2 tablespoons dried lavender flowers

Steps:

  • Cook fettuccine according to package directions. While pasta is cooking, heat olive oil in a large skillet over medium heat. Add garlic. When garlic is golden, add the oregano and broth. Bring to a simmer, stir in the spinach to wilt. Add the artichokes. Drain the pasta and place in a serving bowl. Pour over the artichoke mixture and toss with the parsley and butter and season with salt and pepper. Sprinkle with Parmesan and serve.
  • Preheat the oven to 375 degrees F.
  • Combine the olive oil, lemon juice, thyme, garlic, salt, and pepper in a medium nonreactive saucepan. Mix well and set aside while preparing the artichokes.
  • Snap outer leaves from an artichoke. Cut off the top half, and then use a paring knife to trim down to the heart, rubbing cut surfaces with the lemon half as you work to avoid discoloration. Cut the heart in half and scrape out the choke with a spoon. Cut each piece in half again.
  • As each artichoke heart quarter is completed, immediately turn it in the marinade to coat completely. When all the artichokes are trimmed, put the pan over high heat and bring to a boil. Pour the artichokes and marinade into a baking dish (or cook them in the saucepan if it is ovenproof), cover with foil, and cook until the artichokes are tender when pierced with a fork, about 45 minutes. Remove from the oven and let cool in the cooking liquid.
  • Combine all ingredients. Store in an airtight container away from light and heat for up to 4 months.

Tips for making Artichokes braised in lemon and olive oil recipes

Artichokes are a delicious and healthy vegetable that can be prepared in many different ways. One of the most popular methods of cooking artichokes is braising them in lemon and olive oil. This recipe is not only simple to make, but it also adds a burst of flavor to the artichokes. Here are some tips to help you make the best artichokes braised in lemon and olive oil recipes.
Choosing the right artichokes
Before you start preparing your artichokes, you need to make sure you have chosen the right ones. When selecting artichokes, look for ones that are firm and heavy for their size. The leaves should be tightly packed together and have a deep, rich green color. Avoid artichokes with brown or discolored leaves, as this may indicate that they are not fresh.
Preparing the artichokes
Once you have chosen your artichokes, you need to prepare them before you can start braising them. Begin by slicing off the top 1-2 inches of the artichoke with a sharp knife. Next, use kitchen shears to trim the tips of the remaining leaves. Be sure to also remove any small leaves on the stem and the bottom of the artichoke. After you have trimmed the artichokes, use a vegetable peeler to remove the tough outer layer of the stem. If the stem is thick, you may need to cut it in half lengthwise to ensure it cooks evenly. Finally, use a melon baller or spoon to remove the fuzzy choke from the center of the artichoke.
Lemon and olive oil
When it comes to braising artichokes, lemon and olive oil are two essential ingredients. The lemon adds a tangy flavor to the artichokes while the olive oil helps them cook evenly and gives them a rich, savory taste. When choosing your ingredients, be sure to use fresh lemons and high-quality olive oil. If possible, use extra-virgin olive oil for the best flavor. You may also want to add a pinch of salt and pepper to enhance the flavor of the dish.
Braising the artichokes
Once you have prepared your artichokes and gathered your ingredients, you can start braising them. Begin by heating your olive oil in a large skillet over medium heat. Add your artichokes to the skillet, making sure they are sitting in a single layer. Cook them for a few minutes on each side until they are lightly browned. After you have browned the artichokes, add the lemon juice to the skillet. Be sure to use enough lemon juice to cover the artichokes about halfway. Cover the skillet with a lid and allow the artichokes to simmer for 30-40 minutes until they are tender.
Serving suggestions
Once your artichokes are braised in lemon and olive oil, they are ready to serve. You can eat them as a side dish or as a main course with a salad or other vegetables. They also make a great addition to pasta dishes, risotto, and other recipes. To serve the artichokes, place them on a platter and sprinkle them with fresh herbs like parsley or thyme. You can also drizzle them with a little extra olive oil for added flavor. For a more decadent dish, grate some Parmesan cheese over the top of the artichokes.
Conclusion
Braised artichokes in lemon and olive oil are a delicious and healthy dish that is perfect for any occasion. By following these tips, you can make perfect artichokes every time. Whether you serve them as a side dish or a main course, they are sure to be a hit with your family and friends.
