Time 1h20m

Yield 6 servings

Number Of Ingredients 13

4 boxes (9 ounces each) frozen artichoke hearts, defrosted
Good olive oil
Kosher salt and freshly ground black pepper
1 shallot, minced
3 tablespoons freshly squeezed lemon juice
1 teaspoon Dijon mustard
5 tablespoons white wine vinegar or champagne vinegar, divided
1/2 cup chopped fresh basil leaves
6 tablespoons capers, drained
2 roasted red peppers, sliced thin
1/2 cup minced red onion
1/2 cup chopped fresh parsley leaves
2 pinches hot red pepper flakes, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the artichoke hearts in a bowl with 1/4 cup olive oil, 1 teaspoon salt and 1/2 teaspoon pepper and toss until the artichoke hearts are coated. Dump the artichoke hearts onto a sheet pan and spread out into 1 layer; roast in the oven for 20 minutes.
  • Meanwhile, make the vinaigrette. Place the minced shallot, lemon juice, mustard, 1 tablespoon vinegar, 1 teaspoon salt, and 1/2 teaspoon pepper in the bowl of a food processor fitted with the steel blade. Process for 5 seconds. Add the basil leaves and process into a green puree. With the processor running, slowly pour 1/2 cup olive oil into the bowl through the feed tube until the ingredients are finely pureed. Set aside.
  • Place the roasted artichoke hearts in a bowl and toss with enough vinaigrette to moisten. Add the capers, red peppers, red onion, parsley, 4 tablespoons vinegar and red pepper flakes, if using, and toss gently. Sprinkle generously with salt and pepper and let stand for 30 minutes for the flavors to blend. Serve at room temperature.

Are you looking for a delightful and healthy salad recipe for your next meal? An artichoke roasted red pepper salad is something that will tick all the boxes for your taste buds and your well-being. This salad is not only delicious but also easy to make, and you can add your own spin to it depending on your preferences. Here are some valuable tips to keep in mind when making an artichoke roasted red pepper salad with roasted red pepper recipes.

Tip 1: Choose The Right Artichokes

One of the main ingredients of this salad is artichokes. You can either use canned or freshly cooked artichokes, but make sure to choose the right ones to keep your salad tasty and nutrient-packed. Frozen or canned artichokes are a good option if they are not packed with extra sauces or oils that could add unnecessary calories. If you decide to cook artichokes from scratch, be sure to clean them properly by cutting off the top and bottom, removing the outermost leaves, and scooping out the fuzzy choke.

Tip 2: Use Fresh Ingredients

Another important aspect of making a delicious artichoke roasted red pepper salad is using fresh ingredients. Roasting fresh red peppers instead of canned ones can bring an added flavor to your salad, making it a more authentic and delightful experience. You should also choose fresh ingredients when it comes to herbs like parsley, oregano, and basil. Fresh herbs retain their flavor and aroma, and they also contain more beneficial nutrients than dried herbs.

Tip 3: Get Creative With Proteins

The artichoke roasted red pepper salad is a versatile dish that can be paired with different proteins to suit your dietary preferences. You can add grilled chicken, shrimp, or tofu to your salad for an extra nutrient and protein boost. If you're a vegetarian, adding beans or legumes such as lentils or chickpeas to your salad can provide you with all the protein you need while keeping the dish plant-based and healthy.

Tip 4: Don't Overdo The Dressing

A good dressing can elevate your salad and bring out its flavors. However, it's important not to overdo your dressing, as it can add unnecessary calories and make your salad soggy. A simple dressing with olive oil, lemon juice, and a pinch of salt and pepper can do the trick. You can also add vinegar, mustard, or honey to your dressing to add a twist of flavor.

Tip 5: Choose The Right Cheese

Cheese is another ingredient that can add flavor to your salad. If you're a fan of cheese, consider using options like feta, goat cheese, or parmesan. These cheeses have a distinctive taste that can pair well with the artichoke roasted red pepper salad. However, be mindful of the portion size, as cheese can also add calories to your dish.

Tip 6: Make It Colorful

A good-looking salad can increase the appetite and make the meal more enjoyable. When you're making your salad, try to incorporate different colors as much as possible. Adding cherry tomatoes, olives, or cucumber can add a pop of color and nutritional value to your dish.

Tip 7: Get Creative With Your Herbs

Spices and herbs can add an enormous amount of flavor and interest to a dish. To make your artichoke roasted red pepper salad stand out, try using herbs that you don't normally use. For example, fresh mint or cilantro can bring a unique twist to your salad and make it more exciting.

Tip 8: Add Crunchiness

Adding a bit of crunch to your salad can make it more interesting and fun to eat. You can add toasted nuts like almonds, walnuts, or pecans to your salad for an extra crunch. Seeds like sunflower or pumpkin can also provide some crunch and texture to your salad.

Tip 9: Prepare In Advance

Finally, preparing your artichoke roasted red pepper salad in advance can save you time and hassle. You can pre-cut your vegetables, roast your peppers, and cook your artichokes ahead of time. You can also make your dressing in advance and store it in the refrigerator until you're ready to serve. This way, you can assemble your salad quickly and enjoy your meal stress-free.

Conclusion

An artichoke roasted red pepper salad is a delicious and healthy meal that can be easily customized to suit your preferences. By choosing the right ingredients, protein, herbs, and cheese, you can make a salad that's both flavorful and nutritious. Don't forget to add a bit of crunchiness and color to make your dish more aesthetically pleasing. With these valuable tips, you can create a meal that you can enjoy any time of the day.
