BAKED ARTICHOKE PASTA WITH CREAMY GOAT CHEESE

Baked Artichoke Pasta With Creamy Goat Cheese image

This cheese-filled pasta bake gets its sweet and crunchy topping from a layer of canned fried onions and Parmesan cheese sprinkled on top. Canned artichokes give it a savory depth, while a combination of goat cheese, cream cheese and mozzarella make it wonderfully gooey. Make sure to use plain - not marinated - artichokes, which will be too sharp and acidic here. You're looking for a mellow richness in this comforting casserole.

Time 45m

Yield 6 servings

Number Of Ingredients 15

Salt, as needed
1 pound fusilli, farfalle or other short pasta
2 tablespoons extra-virgin olive oil, plus more for serving
1 large bunch scallions, thinly sliced, whites and greens separated
4 fat garlic cloves, thinly sliced
1/4 teaspoon red-pepper flakes, plus more for serving
8 ounces cream cheese (1 cup), cubed
6 ounces goat cheese, cubed
2 (14-ounce) cans artichoke hearts (not marinated), drained and cut into 1-inch pieces
2 cups canned fried onions
6 ounces shredded mozzarella cheese (1 1/2 cups)
1 cup chopped parsley
1 cup chopped fresh dill
1 teaspoon ground black pepper
1/2 cup grated Parmesan cheese

Steps:

  • Heat oven to 425 degrees and bring a large pot of heavily salted water to a boil. Cook fusilli according to package directions until 3 minutes shy of al dente. Reserve 3 cups pasta water, then drain.
  • Meanwhile, in a large oven-proof skillet, heat oil in a large skillet over medium heat. Cook scallion whites until softened, about 5 minutes, then add garlic and cook another 1 minute. Stir in red-pepper flakes, and cook another 30 seconds.
  • Whisk in 1 1/2 cups pasta water, cream cheese and goat cheese, and simmer, whisking, until smooth. Stir in artichokes, 1 cup fried onions, the mozzarella, the parsley, the dill and the reserved scallion greens, then stir in cooked pasta and black pepper. Add more pasta water if it seems too dry; you want this to be fairly liquid, because the pasta will soak up the sauce as it bakes. Taste and add some salt if needed.
  • Top pasta with remaining cup of fried onions and the Parmesan. Bake until filling is bubbly and onions are browned, about 10 to 20 minutes. Serve drizzled with olive oil, and with more red-pepper flakes on the side if you like.

Artichoke cream cheese pasta is a delicious and decadent dish that can easily become a family favorite. It combines the rich and creamy goodness of cream cheese with the unique and savory flavor of artichokes. This culinary delight can be prepared in a variety of ways and is versatile enough to suit both vegetarians and meat lovers alike. To achieve the perfect balance of flavors and textures, it is important to follow a few tips and tricks when making artichoke cream cheese pasta. In this article, we will discuss some of the most valuable tips to ensure that your pasta dish is nothing short of perfection.

Tip #1: Choose the Right Pasta

When it comes to making the perfect artichoke cream cheese pasta, the type of pasta you choose is critical. The best pasta choices for this dish are the ones with texture, such as fettuccine or linguine. These pasta shapes have a slight chewiness that contrasts beautifully with the creaminess of the sauce. When cooking your pasta, be sure to cook it al dente. This means that the pasta should be firm to the bite rather than mushy or overly soft.

Tip #2: Prepare the Artichokes Properly

The preparation of artichokes is crucial when making artichoke cream cheese pasta. To prepare the artichokes, you need to trim them of their tough leaves and remove the choke. This is the innermost part of the artichoke that is spiky and hairy. Removing this part will ensure that your artichokes are tender and delicious.
How to Prepare Artichokes?
1. Rinse under cold water to remove any dirt or debris. 2. Cut off the top third of the artichoke. 3. Use kitchen scissors to trim off the sharp leaf tips. 4. Peel the tough outer layers of the stem and base. 5. Cut off the stem flush with the base. 6. Slice the artichoke in half lengthwise. 7. Use a spoon to carefully remove the choke.

Tip #3: Use Fresh Ingredients

Using fresh and high-quality ingredients is key to making delicious and nutritious artichoke cream cheese pasta. Opt for fresh artichokes, garlic, and herbs instead of canned or powdered versions. Using fresh ingredients will enhance the flavor profile of your dish and bring out the natural sweetness of the artichokes. Similarly, use fresh cream cheese instead of processed or pre-packaged ones. Fresh cream cheese will give your pasta sauce a rich and creamy texture that cannot be beat by the processed version.

Tip #4: Enhance Flavor with Herbs and Spices

Herbs and spices are versatile ingredients that can add depth and complexity to your artichoke cream cheese pasta dish. These ingredients can be as simple as salt, black pepper, and lemon juice or as complex as oregano, basil, and parsley. Herbs and spices can be added to the pasta sauce, or you can use them to season the pasta before adding the sauce. A tip when using herbs and spices is to add them slowly and taste as you go along. This will ensure that you do not over or under season your dish.

Tip #5: Experiment with Different Meats and Proteins

Artichoke cream cheese pasta can be a hearty and satisfying vegetarian dish, or it can be enhanced with the addition of different meats and proteins. Add grilled chicken, shrimp, or bacon for a delicious and protein-packed meal. When adding meats and proteins to your dish, be sure to cook them separately and then add them at the end. This will ensure that they are cooked properly and do not overcook or undercook in the sauce.

Tip #6: Balance the Creaminess of the Sauce

The creaminess of the sauce is what makes artichoke cream cheese pasta so irresistible. However, it is important to balance the creaminess of the sauce with acidity to prevent the dish from becoming too heavy or rich. Add a splash of lemon juice or a few drops of balsamic vinegar to the sauce to add a tartness that will cut through the richness of the cream cheese. Do not add too much acid, as it can overpower the dish.

Tip #7: Serve with the Right Accompaniments

Serve your artichoke cream cheese pasta with the right accompaniments to enhance the flavor and texture of the dish. Artichoke cream cheese pasta pairs well with a simple green salad dressed with vinaigrette or a crusty bread for dipping in the sauce. Avoid serving the dish with heavy or overly rich sides such as garlic bread or loaded mashed potatoes. These sides will only add to the richness of the dish and can be overpowering.

Conclusion

Artichoke cream cheese pasta is a delicious and decadent dish that can be easily prepared and customized to suit your preferences. By following these tips and tricks, you can ensure that your dish is full of flavor, texture, and nutrition. Remember to choose the right pasta, prepare the artichokes properly, use fresh ingredients, enhance flavor with herbs and spices, experiment with different meats and proteins, balance the creaminess of the sauce, and serve with the right accompaniments. With these tips in mind, your artichoke cream cheese pasta will be a crowd-pleaser and a family favorite.
