Arroz Con Pollo Valenciana - Columbia Restaurant (Chicken & image

This is a recipe from the famous Cuban "Columbia Restuarant" site. There are several restaurants here in the Tampa area and a few other major Florida cities. My DS's girlfriend just loves this restaurant, so I looked online for their recipes and found them on their own site. Serve this along with the "Columbia Salad" recipe I posted, recipe#473755 for a true experience.

Rice with chicken is one of the most popular dishes in Colombia and South America, but every country has their own variation. This is my mom's Arroz con Pollo recipe. Enjoy!

ARROZ CON POLLO

Arroz Con Pollo image

The bold flavors of saffron, bay leaves, and garlic infuse Valencia rice, a Spanish variety perfect for slow-cooked dishes and the traditional base for paella. Here, the grains are cooked up with golden-brown chicken thighs and garnished with pimiento-stuffed olives. Saffron gives the rice its warm yellow hue.

Number Of Ingredients 12

1 cup dry white wine
Pinch of saffron
6 chicken thighs (6 ounces each)
Coarse salt and freshly ground pepper
1/3 cup extra-virgin olive oil
1 large onion, finely chopped
2 tablespoons minced garlic (2 to 3 cloves)
1 large tomato, diced
2 dried bay leaves
4 1/2 cups homemade or store-bought low-sodium chicken stock, plus more if needed
3 cups short-grain rice, preferably Valencia
1 cup pimiento-stuffed green olives

Steps:

  • Combine wine and saffron; let stand until ready to use. Season chicken on both sides with salt and pepper. Heat oil in a large braiser or heavy-bottomed, straight-sided saute pan over medium-high heat. Cook chicken, skin side down, until browned, 4 to 5 minutes. Flip, and cook until golden brown, 2 minutes; transfer to a plate.
  • Reduce heat to medium, and cook onion and garlic, stirring often, until tender, 10 to 15 minutes. Add tomato, and cook, stirring often, for 15 minutes. Stir in wine-saffron mixture, 1 tablespoon salt, 1/2 teaspoon pepper, and the bay leaves. Cook until wine is almost completely evaporated, 10 to 15 minutes. Add chicken, stock, rice, and olives; bring to a simmer.
  • Reduce heat to low. Cook, covered, stirring halfway through, until rice is tender, about 45 minutes. (If rice is not done, add more stock, 1/4 cup at a time.) Remove from heat and let stand, covered, for 10 minutes. Discard bay leaves. Season with salt and pepper.

COLOMBIAN ARROZ CON POLLO

Colombian Arroz Con Pollo image

This is a pretty chicken and rice casserole that is made from chicken wing pieces. You can buy them already separated or cut them up yourself. This is how my husband remembers his Grandma made it back in Bogota (with a little tweaking from me, heh heh heh). DH likes it served with maduros and patacones. Feel free to substitute with brown rice, but it will need to cook about 10 minutes longer, or more.

Time 55m

Yield 4 serving(s)

Number Of Ingredients 17

1 lb chicken wings
salt and freshly ground black pepper
1 teaspoon dried oregano
4 cups chicken broth
1 teaspoon saffron thread
1 tablespoon olive oil
1 cup onion, chopped
1/2 cubanelle pepper, chopped
1 garlic clove, minced
1/4 cup dry white wine or 1/4 cup beer
1 bay leaf
1/4 teaspoon crushed red pepper flakes
2 cups rice
8 ounces frozen peas and carrots
1/2 cup pimento-stuffed green olives, sliced
1 tablespoon capers
4 ounces roasted red peppers, cut into strips

Steps:

  • Preheat oven to 350 degrees F.
  • Prepare chicken wings by cutting off the tips (either toss or use to make broth later); separate wings into two pieces at the joint.
  • Season generously with salt, pepper, and oregano; set aside while preparing the other ingredients.
  • Heat broth and saffron, over low heat, in a small covered saucepan (this releases the yellow color from the saffron which will color the rice beautifully).
  • Heat the oil in a Dutch oven, over medium heat, and brown chicken pieces on all sides, about 8 - 10 minutes; remove, cover, and set aside (they may not be cooked through).
  • Add onions and peppers to Dutch oven and cook until softened, about 5 minutes.
  • Add garlic; cook about 1 minute.
  • Add wine or beer and scrape bottom of pan to remove the brown bits that have stuck onto the pan's bottom.
  • Add bay leaf, red pepper flakes, rice, and broth with saffron; stir to combine.
  • Bring mixture almost to a boil, then cover and put in oven (or pour into a pretty oven-safe covered casserole).
  • Cook in oven until rice is almost tender, about 25 minutes.
  • Nestle chicken pieces into the rice; rinse peas and carrots, green olives, and capers in a large strainer and distribute over chicken and rice.
  • Arrange red pepper strips over all, cover, and return to oven until chicken is cooked through and rice is tender, about 10 minutes.

Arroz con pollo Valenciana is a traditional Spanish rice dish that has become popular all over the world. This classic recipe combines chicken, rice, and vegetables in a flavorful and satisfying one-pot meal. Columbia Restaurant Chicken Recipes are especially renowned for their Arroz con Pollo Valenciana due to the perfect mix of colors, aromas, and flavors that they deliver. This dish is not only delicious but also healthy and easy to make. If you are planning to make Arroz con Pollo Valenciana at home, here are some valuable tips that you should keep in mind: 1. Use Quality Ingredients: One of the most important things when it comes to making a delicious dish is good quality ingredients. Make sure you get fresh chicken, high-quality rice (preferably long-grain), and fresh vegetables as they will all contribute to the final taste of your dish. Use Valencia or Arborio rice for the best results. 2. Marinate the Chicken: Marinating the chicken before cooking can add an extra layer of flavor to your dish. So, it is recommended to marinate the chicken in a mixture of spices, herbs, and vinegar or lemon juice for at least an hour before cooking. 3. Saute the Vegetables: The vegetables you use in your Arroz con Pollo Valenciana should be sautéed separately until they are tender and slightly browned. This not only enhances their flavor but also gives your dish a nice texture. Vegetables like onions, bell pepper, and garlic are must-haves but you can also add your own favorites to the mix. 4. Use Chicken Broth: Instead of using plain water, it is recommended to use chicken broth to cook your rice. This will give your dish an extra layer of flavor and richness. You can use store-bought or homemade chicken broth, but it is important to make sure it is low in sodium. 5. Don't Overcook the Rice: Overcooking the rice can make it mushy and ruin the texture of your dish. Keep an eye on your rice while it’s cooking and make sure you don't overcook it. Remove the lid and fluff the rice with a fork after the cooking time has ended, then let it rest for 10-15 minutes before serving. 6. Use Smoked Paprika: Smoked paprika is a secret ingredient that adds a smoky, earthy flavor to the dish. It is widely used in Spanish cuisine and particularly in Columbia Restaurant Chicken Recipes. You can use sweet or spicy smoked paprika depending on your preference. 7. Add Saffron: Saffron is a popular spice in Spanish cuisine and it can add a beautiful color and aroma to your dish. It is a bit expensive, but a little goes a long way. To get the most out of saffron, soak it in warm water for 15-20 minutes before adding it to your dish. 8. Mix in Some Peas: Peas are a common ingredient in Arroz con Pollo Valenciana and they add a burst of sweetness to the dish. Frozen or fresh peas can be used, but it is important to add them towards the end of the cooking time. This is to avoid overcooking them and turning them mushy. 9. Let the Flavors Develop: This is a dish that gets better with time. After cooking, it is important to let the dish sit for 10-15 minutes to allow the flavors to develop. This also helps the rice absorb any remaining liquid and ensures that the dish is evenly distributed. 10. Garnish with Fresh Herbs: Fresh herbs like cilantro or parsley can be used as a finishing touch to your dish. They not only add a pop of color but also enhance the overall flavor. Add them just before serving for the best results. Conclusion: Arroz con Pollo Valenciana is a delicious and satisfying meal that can be enjoyed by the whole family. With these valuable tips, you can make your own authentic version of this classic dish. Remember, good quality ingredients, marinating the chicken, sautéing the vegetables, using chicken broth, and being mindful of cooking time are all integral to the perfect Arroz Con Pollo dish. Mix in smoked paprika, saffron, and peas, and let the dish sit to let the flavors develop. Don’t forget to garnish with fresh herbs, and enjoy your Columbia Restaurant Chicken Recipes inspired meal!
