APRIL FOOLS SPAGHETTI AND MEATBALLS CUPCAKES
There's nothing like delicious spaghetti and meatballs... cupcakes? Spoof someone you love with these fun and tasty April Fools Cupcakes! They may look like spaghetti, but they don't taste like it! Cupcake recipes like these are a must-make.

- For Cupcakes:
- Preheat oven to 350 degrees F. Set foil baking cups on baking sheet.
- Mix ingredients in a large bowl on medium speed until moistened for 30 seconds. Increase speed to high and beat for two minutes longer until thick.
- Fill baking cups two thirds full with batter. Large cups yield about 15, small cups about 24 cupcakes.
- Bake until golden brown and a toothpick inserted in the center comes out clean, about 15-20 minutes; depending on size of cups.
- Remove cupcakes from oven and baking pan, place on cooling racks, and allow to cool completely. Set aside for decorating. Cupcakes can be baked the day before decorating. Store covered in a cool dry place.
- Decorating the Cupcakes:
- Place frosting in a small bowl, add cocoa powder and yellow food coloring and mix well.
- Frost cupcakes with a thin coating of frosting and place cupcakes on serving platter.
- Fill decorator bag (use medium round tip) with frosting and pipe frosting all over cupcakes as if they were one big plate of spaghetti.
- Unwrap chocolates and place in small bowl. Cover chocolates with strawberry preserves and mix gently. Place one chocolate "meatball" on each cupcake and drizzle strawberry preserves over the top.
- Use remainder of strawberry preserves to cover areas of the frosting. Serve as one giant platter of "spaghetti and meatballs."

- Preheat oven to 375°. In a bowl, combine the pizza sauce, sausage and pepperoni; set aside. In another bowl, combine the biscuit mix, milk, eggs, butter and garlic salt. Spread half of the batter on the bottom and up the sides of a greased 10-in. fluted tube pan. Spoon meat mixture over batter; cover with remaining batter., Bake for 35-40 minutes or until browned and a toothpick comes out clean. Invert onto a baking sheet. Arrange cheese over cake. Return to the oven for 5 minutes or until cheese is melted. Using two large metal spatulas, transfer cake to a serving platter; serve immediately.

- Make two 8-inch-round chocolate cakes as the cake mix label directs; cool completely. Crumble 1 cake into a bowl. Squeeze a handful of crumbs into a 2-inch ball; roll between your hands until smooth. Repeat to make 2 more cake balls.
- Sprinkle some of the remaining cake crumbs on a clean surface. One at a time, roll the cake balls in the crumbs, pressing lightly to coat. If necessary, moisten the cake balls with water to help the crumbs stick.
- Assemble the cake: Put the remaining whole cake on a serving plate or cake board. Spread about 1 1/2 cups vanilla frosting on the cake with an offset spatula; run the spatula around the sides to make it smooth.
- Arrange the cake balls on the cake. Mix the remaining frosting, the yellow food coloring and cocoa in a bowl; transfer to a pastry bag with a small round tip. Pipe the yellow frosting around the cake balls in a figure-eight motion to look like spaghetti.
- Make the strawberry sauce: Puree the strawberries in a food processor until slightly smooth with a few chunks. Spoon 1/2 cup strawberry puree around the meatballs to look like sauce.
- Grate white chocolate on top of the cake to look like parmesan cheese. Serve the cake with the remaining strawberry puree on the side.

- Heat oven to 350°F. Grease and flour 2 1/2-quart ovenproof glass or metal bowl. Prepare cake mix batter as directed on package, using water, oil and eggs. Pour batter into greased and floured bowl.
- Bake at 350°F. for 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool in bowl on wire rack for 30 minutes. Run thin knife around edge of cake; invert cake onto serving plate. Cool 1 hour or until completely cooled.
- Frost cooled cake with thin layer of frosting. Spoon remaining frosting into resealable plastic bag; seal bag. Cut small hole in bottom corner of bag. Squeeze bag to pipe frosting onto cake to resemble spaghetti. Stir strawberry topping to soften; spoon topping onto top of cake to resemble spaghetti sauce, allowing some to drip down sides.
- Unwrap candies; microwave on HIGH for 10 to 15 seconds to soften. Break each candy into thirds; roll into "meatballs" and arrange on cake. Sprinkle grated candy coating over top of cake to resemble cheese.
