- In a small bowl, mix seasonings; sprinkle over both sides of chicken. In a large nonstick skillet, heat oil over medium heat. Brown chicken on both sides., Add beans, corn and salsa to skillet; cook, covered, 10-15 minutes or until a thermometer inserted in chicken reads 165°. Remove chicken from pan; cut into slices. Serve with bean mixture and rice.

APRIE'S CUBAN BLACK BEAN, SAUTEED CHICKEN BREAST OVER A BED OF YELLOW RICE.
This is a recipe your family will truly adore and want to come back for more. It reminds me of the times when mom and I use to spend quality girl time together. I remember when we use go on our shopping sprees, we use to attend these Cuban style restaurants. She and I use to go to this particular restaurant located on Burnside Ave. in The Bronx, in New York City. You can always receive great service, good food and great Cuban music. These are the times I miss so much now that she's gone. But, now I get to do the same things with my daughter and she loves it too. This recipe translation is as follow: Haba negra cubano de Aprie, pecho de pollo salteado sobre una cama del arroz amarillo. Thanks Mom for great fun, good food, music, and fantastic times together.

- Cut one half onions and green peppers into wedges, place to the side, and dice the rest into a small bowl. put the bean into a medium pot and add the diced onions and green peppers, 1 pack of Sazon, salt and pepper and brown sugar. Let it cook on a slow heat for about 30 minutes.
- Chicken breast season to taste, add 1 pack of Sazon, in medium sauce pan melt butter and add the chicken breast along with the onions, green peppers and allow it to simmer for tenderness.
- Jasmine Rice in a pot add 1 1/2 cup of water, with Sofrtio, Recaito Cilantro Cooking Base and 2 packs of Sazon. Let it cook for about 35 minutes, for fluffier rice leave on heat for 40 minutes.

- Place chicken breasts in a gallon sized zip bag or a large bowl with lid.
- In a medium bowl, combine all other ingredients for the marinade. Pour the marinade over the chicken and place in the refrigerator for several hours or overnight.
- Heat a large skillet over medium high heat. Saute the chicken until it is cooked through and no longer pink, and nicely browned outside.
- Garnish with lime wedges; serve with yellow rice and black beans.

- Pour 1 tbsp olive oil in a skillet. Heat the skillet over medium-high heat. Starting skin side down, brown chicken about 10 minutes, turning once. Remove chicken from skillet.
- Add pepper, onion, and garlic; cook, stirring, 3 minutes. Stir in beans, water, oregano, cumin, cayenne pepper, and salt. Heat to boiling, stirring.
- Return chicken to skillet, cover and simmer 20 minutes, or until chicken is tender, turning pieces occasionally. Stir in lime juice.

- Preheat oven to 375 degrees. In a large straight-sided ovenproof skillet, brown bacon over medium-high, about 7 minutes. Transfer to a plate. Season chicken with 1/4 teaspoon cumin, salt, and pepper. Brown in skillet, turning once, about 10 minutes; transfer to plate.
- Remove fat from skillet. Add oil, onion, bell pepper, and garlic. Cook, stirring, until translucent, 3 minutes.
