FLAMBEED VANILLA-POACHED PEARS WITH APRICOT SAUCE

Flambeed Vanilla-Poached Pears with Apricot Sauce image

This is a great dessert for a fancy party or a girl's night in! I love pears, and I love this recipe, because lighting the rum on fire caramelizes the sugar, and pulls out the flavor of the pears. I served this dish to a rich couple and got a hefty tip back, so I figured it must have been good!

Yield Serves 4

Number Of Ingredients 10

For sauce
1/4 cup minced shallot
1 tablespoon plus 1 teaspoon cold unsalted butter
1/2 cup Tawny Port
1 tablespoon brandy
1 cup duck-and-veal demiglace (a 6 1/2-ounce container stirred together with 3 tablespoons water)
1/3 cup julienne strips dried apricot
1 tablespoon balsamic vinegar
2 whole 1-pound boneless duck breasts with skin (preferably Long Island, or Pekin, halved
1 teaspoon vegetable oil

Steps:

  • Make sauce:
  • In a 1 1/2-quart heavy saucepan cook shallot in 1 teaspoon butter over moderately low heat, stirring, until softened. Carefully add Port and brandy and boil until reduced by half. Add demiglace and simmer 5 minutes, or until reduced to about 2/3 cup. Pour sauce through a fine sieve into a small bowl and return to pan. Stir in apricot, vinegar, and salt and pepper to taste. Simmer sauce until apricot is just heated through and stir in remaining tablespoon butter.

Put duck, skin sides down, in skillet. Reduce heat to moderate and cook duck until skin is deep golden, about 3 minutes. Turn duck over and cook 2 minutes more. Remove duck from skillet and pour off fat. Return duck, skin sides down, to skillet and roast in middle of oven 5 minutes for medium-rare. Keep duck warm and reheat sauce over low heat.
  • Slice duck on the diagonal and serve with sauce.

COCONUT SHRIMP LOLLYPOPS WITH APRICOT-GINGER DIPPING SAUCE

Coconut Shrimp Lollypops with Apricot-Ginger Dipping Sauce image

Provided by Bob Blumer - Host of Surreal Gourmet and Glutton for Punishment

Categories     appetizer

Time 55m

Yield 4 servings

Number Of Ingredients 15

1/2 cup apricot jam
1 tablespoon freshly grated ginger
1 tablespoon Dijon mustard
1 jalepeno pepper, seeds discarded, minced
2 tablespoons seasoned rice wine vinegar or freshly squeezed lime juice
1 coconut, or 2 cups sweetened shredded coconut
1 cup all-purpose flour
1/2 cup beer
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cayenne pepper
1 egg
12 shrimp (16 to 20 count) shelled and deveined
12 bamboo skewers, approximately 5 inches
3 to 5 cups peanut oil, or vegetable oil

Steps:

  • Place all apricot dipping sauce ingredients in a blender or food processor. Blend until smooth. Reserve.
  • Pierce the soft eye of the coconut and drain the coconut water. Reserve.
  • Crack coconut in 1/2 using the back of a cleaver.
  • Separate the coconut meat from the shell. Use a pairing knife to remove the brown skin from the meat. Using the finest part of your grater, grate 2 cups of coconut .
  • Pour coconut water in a measuring cup and if necessary top off with beer until you have 3/4 cup of liquid. Reserve. If you are using store-bought shredded coconut (and consequently do not have any coconut water) replace mixture with 3/4 cup of beer.
  • In a large bowl, combine flour, coconut water/beer mixture, baking soda, salt, cayenne, and egg. Beat until it is smooth. Add a bit more flour or beer, if necessary, so that the batter has the consistency of thick pancake batter.
  • Tightly wrap each shrimp like a pinwheel (with the tail end of the shrimp on the outside) and skewer 1 shrimp on the end of each skewer. Use a paper towel to pat the shrimp dry.
  • Pour oil into a small, tall pot until it is 3 inches deep. Heat oil until it reaches 350 degrees F (see oil dissertation below).
  • While oil is heating, dip each shrimp into the batter, then dredge into the coconut shreds so that the entire "lollypop" is covered in coconut shreds.
  • When oil is ready, submerge 4 shrimp at a time into oil (with the skewers sticking out of the pot). Fry for approximately 1 minute, or until coconut is a golden brown, rotating the top of the skewer once or twice. Remove and place lollypops on paper towel to absorb excess oil.
  • Skim any wayward coconut shreds from the oil. Adjust heat so that it is 350 degrees F again and continue with next batch. Serve with apricot dipping sauce. For a creative presentation, stick skewers into an upturned pineapple or melon 1/2 and/or serve the dip in a coconut 1/2 (the side without the hole!)

Apricot sauce is a versatile condiment that can be used for various purposes in cooking. It can be a perfect accompaniment to meat dishes, salads, and desserts. Apricot sauce recipes vary depending on the desired flavor and texture one is looking to achieve.

History of Apricot Sauce

Apricot sauce has been used in various European and Middle Eastern cuisines for centuries. Valuable Tips When Making Apricot Sauce Recipes

Apricot sauce is a versatile ingredient that can be used in a variety of dishes, from sweet to savory, and can add a touch of luxury to any meal. Whether you are an accomplished chef or a beginner in the kitchen, getting the perfect texture and flavor of your apricot sauce can be a challenge. In this article, we will explore some valuable tips to help you create delicious apricot sauce recipes that will elevate your dishes, and impress your guests.
Choose the Right Apricots
The first step in making a great apricot sauce is selecting the right apricots. You can choose fresh, canned, or frozen apricots, depending on your preference and availability. Fresh apricots are the best option, as they have a better flavor and texture, but they are not always in season. Canned and frozen apricots are great substitutes, and they are available all year round. When buying apricots, look for those that are ripe but firm, with a bright orange color and a slightly soft texture. Avoid apricots that are too soft or bruised, as they will not hold up well during the cooking process. If you are using canned or frozen apricots, make sure to read the label carefully and choose those that are packed in natural juice or water, without added sugar or preservatives.
Cut and Prepare the Apricots
Once you have selected your apricots, the next step is to cut and prepare them for the sauce. Remove the pits and stems from the fresh apricots, and cut them into small pieces. If you are using canned or frozen apricots, drain them well and cut them into small pieces as well. You can choose to peel the apricots or leave the skin on, depending on your preference. Some people prefer the texture and the flavor of the skin, while others find it too tough and bitter. If you choose to peel the apricots, blanch them for a few seconds in boiling water, then plunge them into cold water. The skin will come off easily, and you will be left with a smooth and juicy flesh.
Add Flavor and Sweeteness
Apricots have a natural sweetness that is perfect for making sauces, but it may not be enough to achieve the desired flavor. To enhance the flavor of your apricot sauce, you can add some spices, herbs, or other fruits. Some popular flavor combinations include: - Cinnamon and nutmeg: for a warm and spicy flavor. - Ginger and honey: for a zesty and sweet flavor. - Vanilla and almond extract: for a rich and nutty flavor. - Lemon or orange zest: for a bright and citrusy flavor. - Berries or peaches: for a fruity and sweet flavor. You can also add some sweetness to your apricot sauce, depending on your taste. You can use sugar, honey, maple syrup, agave nectar, or other sweeteners. Start with a small amount, and adjust according to your taste. Remember that the sweetness of the apricots and the added sweeteners will intensify during the cooking process.
Cook the Apricot Sauce
Cooking the apricot sauce is the most critical step in getting the perfect texture and consistency. The cooking time and technique will depend on the type of apricots you are using, and whether you are making a smooth or chunky sauce. For fresh apricots, you can simmer them on the stove with your chosen spices, sweeteners, and a splash of water or juice, until they are soft and fragrant. This usually takes about 15-20 minutes, depending on the ripeness of the fruit. For canned or frozen apricots, you can heat them up in a saucepan with your chosen spices and sweeteners, until they are softened and the liquid has reduced by half. This usually takes about 10-15 minutes. To make a smooth sauce, use an immersion blender or a regular blender to puree the apricots until smooth and creamy. If you prefer a chunky sauce, leave the apricots as they are, or mash them with a fork or a potato masher.
Store and Use the Apricot Sauce
Once you have made your apricot sauce, you can store it in the refrigerator for up to a week, or freeze it for up to three months. To freeze the sauce, transfer it to airtight containers or freezer bags, and label them with the date and the contents. You can use apricot sauce in a variety of dishes, such as: - Pancakes or waffles: drizzle the sauce on top for a sweet and fruity breakfast. - Yogurt or oatmeal: spoon the sauce over for a healthy and nutritious snack. - Ice cream or cakes: pour the sauce on top for a decadent dessert. - Grilled meats or vegetables: brush the sauce on top for a sweet and savory glaze. In conclusion, making apricot sauce recipes can be a fun and creative way to add some variety and richness to your dishes. With the right apricots, cutting and preparing them, adding flavor and sweetness, and cooking the sauce, you can create delicious and versatile sauces that will impress your guests and satisfy your cravings.
