1 cup all-purpose flour
1 cup old-fashioned oats
¾ cup light brown sugar, firmly packed
¼ teaspoon salt
8 tablespoons butter
2 cups sweetened, flaked coconut
2 cups sliced almonds
2 cups dried cherries
2 cups dried apricots, coarsely chopped
1 ½ (14 ounce) cans sweetened condensed milk

Steps:

  • Adjust oven rack to lower-middle position; heat oven to 325 degrees. Spray a 13-by-9-inch Pyrex baking pan with vegetable cooking spray. Set aside.
  • In a medium bowl, mix flour, oats, brown sugar and salt. Stir in butter with a fork until well mixed and clumps have formed. Spread 1 1/2 packed cups of oat mixture over the bottom of the pan, pressing to form a thin crust.
  • Mix coconut, almonds, cherries, apricots and milk in a large bowl. Pour over crust, using a rubber spatula to evenly distribute and press down. Sprinkle remaining oat mixture over dried fruit filling.
  • Bake until lightly golden, about 30 minutes. Cool to room temperature. (You can cover and store at room temperature up to 2 days.)
  • To serve, cut into generous 1 1/2-inch squares.

2 1/2 cups dried apricots, chopped (about 15 to 16 ounces)
4 cups flour
3 1/2 cups quick-cooking oats
2 cups packed light brown sugar
4 teaspoons baking soda
1/2 teaspoon salt
2 cups unsalted butter, room temperature

Steps:

  • Preheat oven to 350 degrees. Spray bottom of a 9-by-13-inch rectangular pan with non-stick cooking spray. Set aside.
  • Place the apricots in saucepan and cover with water. Bring to boil, then reduce heat and simmer 10 minutes. Remove from heat and drain. Set aside.
  • In work bowl of electric mixer, combine flour, oats, sugar, baking soda and salt.
  • Add butter and beat on low speed until a crumbly mixture is formed, about 1 minute. Place half the mixture into the pan and press firmly into an even layer.
  • Spread apricots evenly over surface, then sprinkle remaining crumbs over the top. The pan will be almost full.
  • Bake in center of oven until light golden brown, about 50 minutes. Remove to a rack and cool completely (do not cut while warm or bars will be too crumbly). Gently cut into 24 pieces with a small, sharp knife.
  • Store in airtight container or cookie tin between layers of parchment or waxed paper.

CRUMB MIXTURE:
1 1/4 c all-purpose flour
1 1/4 c quick-cooking oats
1/2 c sugar
3/4 c butter, melted
1/2 tsp baking soda
1/4 tsp salt
2 tsp vanilla extract
FILLING:
1 jar(s) apricot preserves (10 oz.)
1/2 c flaked coconut

Steps:

  • 1. Heat oven to 350 degrees.
  • 2. CRUMB MIXTURE:
  • 3. In a large mixer bowl, combine all crumb mixture ingredients. Beat at low speed, scraping bowl often, until mixture is crumbly, 1 to 2 minutes.
  • 4. Reserve one cup of the crumb mixture.
  • 5. Press the remaining crumb mixture onto the bottom of a greased 9 x 13 inch baking pan.
  • 6. FILLING:
  • 7. Spread apricot preserves to within 1/2 inch from the edge of the crumb mixture.
  • 8. Sprinkle with reserved crumb mixture and coconut.
  • 9. Bake for 22 to 27 minutes or until edges are lightly browned.
  • 10. Remove from the oven onto a wire rack and let cool completely.
  • 11. Cut into bars. Makes 3 dozen bars.

2/3 c chopped dried apricots
2/3 c water
1/2 c apricot preserves
1 Tbsp sugar
1/2 tsp almond extract
1 c butter
1 c brown sugar, firmly packed
1/2 c honey
1 1/2 c all purpose flour
1 1/2 c quick oats
1 tsp baking powder
1/2 tsp salt

Steps:

  • 1. Combine apricots and water and cook in a small covered pan for 10 minutes at medium heat. Remove the lid and continue to cook until apricots are tender and almost all of the water has evaporated. Add preserves, 1 tablespoon sugar, and almond extract. Stir and cook until preserves are melted and everything is well mixed. Remove from heat and cool.
  • 2. Preheat oven to 350 degrees. Combine butter, brown sugar, honey, flour, oats, baking powder and salt. Mix together well. Press 1/2 of this mixture in the bottom of a 9 by 13 inch baking pan. Spread cooled filling over crust spreading evenly. Top with remaining oatmeal-flour mixture. Press down on top gently to get air gaps out.
  • 3. Bake for 30 minutes or until golden brown. Do not over-bake. Remove from oven. Cool slightly. Run a knife around the edges of pan to loosen and then cut in bars. After cutting, leave in pan to cool completely.

1/2 cup water
1/4 cup apricot jam
1 cup large flake oats
1 cup all-purpose flour
2/3 cup brown sugar
3/4 teaspoon baking powder
1/2 teaspoon salt
1/3 cup peanut butter
1/3 cup unsalted butter, cut into small cubes
1/4 cup peanuts, coarsely chopped

Steps:

  • Preheat oven to 350°F (180°C). Line an 8x8-inch (2 L) baking pan with parchment paper. Place apricots and water in a large saucepan. Bring to a simmer, cover, stirring occasionally until apricots have absorbed water, about 7 minutes. Stir in jam. Remove from heat, then puree in a food processor. It doesn't need to be perfectly smooth.
