MOM'S APRICOT NECTAR CAKE

Mom's Apricot Nectar Cake image

My mom made this for Easter one year, and I actually liked it! I was a tough critic as a kid, but I've always loved this cake. Now I can make it myself as a dessert-loving adult, but I love it more when my mom makes it! I've never been much of a fan of desserts containing fruit, but this one just gets me! It's just fruit juice, essentially, so it's made to please your toughest fruit dessert critic.

GOLDIE'S APRICOT NECTAR CAKE (SALLYE)

GOLDIE'S APRICOT NECTAR CAKE (SALLYE) image

This was one of my mothero-in-law Goldie's signature cakes. I haven't made this in years, but found the recipe tucked into one of my cookbooks so thought I would give it a whirl and see if it tasted as good as my memory thinks.

Provided by sallye bates

Categories     Cakes

Time 1h15m

Number Of Ingredients 9

1 box lemon flavored cake mix
1/2 c granulated sugar
1 c apricot nectar
1/3 c cooking oil
4 large eggs
GLAZE INGREDIENTS
2 Tbsp lemon juice
1 c confectioners (powdered) sugar
1/4 c apricot nectar

Steps:

  • 1. Preheat oven to 325º Butter and flour bundt or tube pan and set aside
  • 2. With electric mixer, beat together cake mix, sugar, oil and 1 cup apricot nectar in large bowl. Continue to mix with electric mixer, adding eggs one at a time, beating well after each addition.
  • 3. Pour into prepared bundt or tube pan and spread out evenly. Bake in 325º preheated oven for 1 hour. Test cake for doneness by inserting a toothpick into the thickest part. If it comes out clean, the cake is done. Let cool for about 5 minutes in pan, then gently run thin knife or spatula around edges and turn out onto serving plate
  • 4. While cake is still warm, drizzle glaze over it. To make glaze, Whisk together confectioners sugar, lemon juice and 1/4 cup apricot nectar until well blended. Optional you can punch small holes in cake to let the glaze penetrate down into the cake, but I never do that.

Before you start mixing your ingredients, you should preheat your oven to the right temperature. Most apricot nectar cake recipes require a temperature of 350 degrees Fahrenheit. Preheating your oven will ensure that your cake cooks evenly and that it rises properly.
Grease and Flour Your Cake Pans
To prevent your cake from sticking to the pan, you should grease and flour your cake pans before pouring in the batter. Use a pastry brush to spread a thin layer of cooking oil or melted butter over the sides and bottom of the pan. Then, sprinkle a small amount of flour over the oil to create a non-stick surface.
Measure Your Ingredients Carefully
When making apricot nectar cake, you should measure your ingredients carefully to ensure that your cake turns out perfectly. Use measuring cups and spoons to measure your flour, sugar, and other dry ingredients. For liquids, use a liquid measuring cup to get an accurate measurement.
Beat Your Eggs Properly
Eggs are a critical ingredient in apricot nectar cake, and how you beat them can make a difference in the final product. When beating eggs, use room temperature eggs, and beat them until they are light and frothy. This will help make your cake fluffy.
Sift Your Flour
Sifting your flour is an important step in making apricot nectar cake. Sifting your flour helps to remove lumps and make the flour lighter, leading to a well-textured cake. Use a sifter or a mesh strainer to sift your flour before mixing it into your other ingredients.
Use Real Butter
When making apricot nectar cake, it is essential to use real butter. Real butter has more flavor and richness than margarine or other substitutes. It also helps to provide a better texture and crumb in the cake.
Use High-Quality Apricot Nectar
The apricot nectar is a star ingredient in this cake, so it is crucial to use high-quality apricot nectar when making it. Look for a reputable brand that uses only natural ingredients and no added sugar, artificial color, or preservatives.
Add Flavors and Spices
To enhance the flavor of your apricot nectar cake, consider adding some additional flavors and spices. You can add vanilla extract, almond extract, cinnamon, nutmeg, or other flavors that pair well with apricot. Be careful not to add too much, as this can overpower the apricot flavor.
Let the Cake Cool Completely Before Frosting
After baking your apricot nectar cake, let it cool completely before frosting it. Cooling the cake allows it to set and ensures that the frosting doesn't melt or slide off the cake. You can speed up the cooling process by placing your cake on a wire rack or in the refrigerator.
Decorate the Cake with Apricots and Other Fruits
For a beautiful presentation, consider decorating your apricot nectar cake with fresh apricots or other fruits. You can slice the apricots and arrange them on top of the cake or use other fruits like berries, kiwi, or orange slices. This will add color and flavor to your cake and make it even more appealing.
Store the Cake Properly
Proper storage is essential to keeping your apricot nectar cake fresh and delicious. Store your cake in an airtight container at room temperature, away from direct sunlight or heat sources. Alternatively, you can store your cake in the refrigerator or freezer for longer shelf life. In conclusion, apricot nectar cake is a simple yet delicious dessert that everyone will enjoy. By following these valuable tips, you can make a perfect apricot nectar cake every time you bake it. Remember to use fresh ingredients, measure them carefully, and take your time with every step of the process. With patience and care, your efforts will surely pay off with a tasty and visually appealing cake.
