APRICOT MUSTARD GLAZED PORK ROAST

Apricot Mustard Glazed Pork Roast image

An easy recipe that is great for a dinner party. I found it in a magazine (Women's Day? Family Circle?) while sitting in the waiting area of the hospital emergency room. My family now refers to it as "Emergency Room Roast." I served it with sweet potato casserole and creamed spinach. (BTW, my dad was in the ER but he's just fine now, thank you!)

I got this recipe from Weight Watchers, and just had to try it. I don't use the mustard in the recipe because I am highly allergic so I substitute balsamic vinegar for it. My family loves it.

Apricot mustard glazed pork roast recipes offer a unique and delicious way of preparing pork that is guaranteed to impress your guests. This recipe combines the sweetness of apricots with the tanginess of mustard to make a mouth-watering glaze that perfectly complements the tenderness of the pork. However, to make a perfect apricot mustard glazed pork roast, you need to follow specific steps that ensure the final product is not only delicious but also visually appealing. In this article, we'll share valuable tips when making apricot mustard glazed pork roast recipes.

Tip #1: Choose the right cut of pork

The first and most crucial tip is choosing the right cut of pork. Different pork cuts have varying levels of fat and can affect the overall flavor and texture of your roast. Ideally, you should go for a loin or tenderloin cut as they are known for having less fat and a mild flavor that allows the apricot mustard glaze to seep in and enhance the taste. Other cuts like the shoulder may have a lot of fat, which can be great for flavor but may compromise the texture.

Tip #2: Seasoning the Roast

Seasoning is crucial to achieve the perfect balance of flavors. Before cooking the pork roast, you should season it with salt and pepper to bring out its natural taste. Additionally, you can also add other seasonings like garlic, thyme, or rosemary to enhance its flavor. However, you should be careful not to overseason as this can mask the delicacy of the apricot mustard glaze.

Tip #3: Preparing the Apricot Mustard Glaze

The apricot mustard glaze is the main highlight of this recipe. To make a perfect glaze, you need to get the right balance of sweetness and tanginess. In this case, the sweet apricots should be paired with the pungent mustard to create a flavor explosion that will elevate the pork roast. You can choose to use fresh or canned apricots. However, if you choose the latter, ensure they are not drenched in syrup to avoid excessive sweetness.
Ingredients for the Apricot Mustard Glaze
  • 1 cup apricot preserves
  • 1/4 cup Dijon mustard
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 2 cloves of garlic, minced
  • Salt and pepper to taste

Tip #4: Preparing the Pork Roast

After seasoning and preparing the glaze, it's time to prepare the pork roast. Follow these steps to make sure you get a juicy and tender roast.
Ingredients for the Pork Roast
  • 1 3-pound pork loin or tenderloin roast, trimmed of excess fat
  • Salt and freshly ground black pepper
  • 2 tablespoons of olive oil
Instructions
  1. Preheat oven to 375°F.
  2. Season the pork roast with salt, pepper, and coat with 1 tablespoon of olive oil.
  3. Heat the remaining oil in a large skillet over medium-high heat.
  4. Place the pork roast in the skillet and sear for 2-3 minutes until browned on all sides.
  5. Remove the pork roast from the skillet and brush it with the apricot mustard glaze.
  6. Place the pork roast in a baking pan and roast for 25-30 minutes or until a meat thermometer inserted into the thickest part registers 145°F.
  7. Remove the pork roast from the oven and let it rest for 5-10 minutes before slicing.
  8. Serve with the remaining apricot mustard glaze.

Tip #5: Serving the Apricot Mustard Glazed Pork Roast

To make the presentation more appealing, you can top the apricot mustard glazed pork roast with some fresh herbs like thyme or rosemary. Grilled vegetables like asparagus or broccolini also make wonderful complements to the dish. If you want to add another layer of flavor, you can drizzle some balsamic reduction over the vegetables to make them tastier.

Conclusion

In conclusion, making an apricot mustard glazed pork roast is a simple yet heavenly dish that will leave all your guests impressed.
