AMBER GLOW DIP (CREAM CHEESE, APRICOT AND HORSERADISH PLUS)
From the Holy Trinity Lutheran Church Cookbook that I acquired at a book sale. This was submitted by Helen Brockman. The name caught my eye. This has cream cheese, apricot preserves, mustard and some zip!

Steps:
- In a small bowl, mix everything but the cream cheese and the nuts.
- Place the cheese on a plate and top with the apricot mixture.
- Sprinkle with chopped peanuts, if you like, and serve with crackers.
SAGE SAUSAGE BITES WITH BALSAMIC APRICOT DIP

- Preheat a small pot over medium heat and the oven to 425 degrees F.
- To the pot, add oil and onion. Saute the onion for 1 minute.
- In a mixing bowl, combine sweet sausage and chopped sage.
- Next, add balsamic vinegar to onion and reduce by half, 1 minute. Remove vinegar from heat and combine with apricot all-fruit spread or preserves and spicy mustard. Stir until mustard is fully incorporated. Dip will be glossy and brown in color.
- Add 2 tablespoonfuls of apricot dip to bulk sausage and mix. Form meat into bite size nuggets, coat in bread crumbs then place on nonstick cookie sheet. Recipe will make 20 to 24 pieces. Bake 15 to 17 minutes, until evenly browned, turning occasionally. Drain, then serve with party picks for dipping with remaining balsamic apricot mustard dip.

- Soften creamed cheese.

SHRIMP SPRING ROLLS WITH SPICY APRICOT MUSTARD DIP

- For the dip: In a small bowl, stir together the marinade, preserves, mustard and hot sauce.
- For the spring rolls: In a bowl, mix together the shrimp, slaw and marinade. Place a spring roll wrapper on your work surface with 1 of the corners facing you so it looks like a diamond. (Keep the spring roll wrappers covered with a damp towel so they don't dry out). Place 2 tablespoons filling on the lower third of the wrapper. Spread the filling out in a line from side to side. Roll the bottom corner up over the filling, and then fold in the sides. Moisten the top corner with some water, using your finger or a brush, and roll the filling over it so it sticks to itself and forms a seal. Place seam-side down on a plate and keep covered with a damp towel while you make the remaining rolls.
- When you are ready to cook, fill a large, heavy-bottomed pot with enough oil to come up about 3 inches from the bottom. Place over medium-high heat and bring to 360 degrees F. Add the spring rolls, a few at a time, and cook until they are golden brown, 2 to 3 minutes. Drain on paper towels and keep warm while you fry the rest. Serve with the spicy apricot mustard dip.

APRICOT BRIE DIP

- Lay half of the crescent rolls in the pie dish.Spread them out a bit. Put 2 TBS. of apricot preserves and spread that all around. Put the chunk of brie on top of that and some more preserves all over the brie. Crumble some pecans on top of that and than encase the brie with the rest of the crescent rolls. Coat the top of the crescent rolls with a thin layer of preserves and top with a handfull of pecans. Press them into the rolls a little bit. Put in the oven. Bake at 350 degrees for approx. 30 minutes. Keep on checking to make sure the rolls don't burn, but make sure that the brie has melted inside. If you see the top browning too much just put a piece of tin foil on top and secure it so it doesn't burn. Put 2 spoons in so your company can either put some on a plate and eat it or serve with crackers and enjoy!

I've been making this for about 6 years now, and I've always been asked to bring it again the next year This is a delicately flavored dip, requiring the crackers to be very mild and not overpowering. Club crackers work best.

- In a large skillet, saute mushrooms in butter. Add green onions, raisins, chicken and spices. Heat through. Let cool for 5 minutes. In a large bowl, combine mushroom-chicken mixture with cream cheese and Feta. Gently fold together until well combined. Set aside. Carefully work with the Philo dough, you will need to have a damp paper towel or cloth to keep the dough you are not working with from drying out.
- Melt butter, Cut Philo dough into 2-1/2 inch strips, Take 2 thin sheets and brush with butter. Place one hearty teaspoon scoop of chicken-mushroom mixture onto the end of the buttered strip. Carefully, fold dough in a triangle pattern, like folding a flag. Place on a cookie sheet. Repeat until the cookie sheet is full. Coat triangles with butter and bake for 15-20 minutes.
