Time 1h21m

Yield 6 to 8 servings

Number Of Ingredients 14

13 ounces (about 5) ripe apricots
1 prebaked 9 1/2-inch tart shell, recipe follows
1 cup granulated sugar
2 large egg yolks
3/4 cup heavy cream
2 tablespoons all-purpose flour
Pinch salt
1/4 cup (1 ounce) sliced almonds
1 large egg
1 1/2 tablespoons heavy whipping cream
2 cups all-purpose flour
1 1/2 tablespoons granulated sugar
Pinch salt
12 tablespoons (1 1/2 sticks) cold unsalted butter

Steps:

  • Preheat the oven to 325 degrees F.
  • Slice the apricots 3/4-inch thick, discarding the pits. Place the apricots in the prebaked tart shell in a decorative pattern. Set aside.
  • Combine the sugar, egg yolks, and cream in a medium mixing bowl. Whisk until combined. Stir in the flour and salt. Carefully pour the creamy mixture over the apricots.
  • Sprinkle the almonds over the top of the tart. Bake until the custard is almost completely set, about 35 to 40 minutes. Serve slightly warm or at room temperature.
  • In a small bowl, mix the egg and cream together. Set aside.
  • In the bowl of an electric mixer, combine the flour, sugar, salt, and butter. Using the paddle attachment on low speed, mix in the butter until it is the size of small peas. With the mixer on low speed, add the egg mixture. Mix the dough just until it is no longer dry looking. It will still be loose and crumbly at this point.
  • Place the dough on the work surface. With your hands, combine and form the dough into a single ball. Wrap the dough in plastic wrap and refrigerate until firm but still malleable.
  • Roll out dough and fit it into a 9 1/2-inch tart shell. Prebake the shell in a preheated 325 degree F oven until golden brown, about 15 minutes
  • Yield: 1 (9 1/2-inch) tart shell

APRICOT CUSTARD TART

Apricot Custard Tart image

This is a very light dessert and the recipe is very versatile in as much as being able to use a variety of different fruit, though stone fruit seems to work best - apricots, peaches, nectarines etc. And the glaze gives the fruit shine! The preparation time does not include the time it takes to make the pastry or flan case. The only cooking time is the time it takes for the flan case to bake and to make the custard and the glaze - so I've allowed 45 minutes in total.

APRICOT HAZELNUT CUSTARD TART

APRICOT HAZELNUT CUSTARD TART image

Categories     Fruit     Nut     Dessert     Bake

Yield 6-8 servings

Number Of Ingredients 17

PASTRY CRUST
¾ cup flour
½ cup ground hazelnuts
¼ cup spelt flour
8 tbsp butter, frozen
Pinch of salt
Cold water
FILLING
½ cup sugar
1 tbsp flour
½ cup + 3 tbsp ground hazelnuts
2 eggs
3 tbsp whipping cream
1 tsp vanilla extract
2 tbsp butter, melted
8-10 apricots, fresh or frozen, quartered
¼ cup whole hazelnuts, roughly chopped

Steps:

  • FOR THE PASTRY CRUST: Preheat oven to 375°F / 190°C. In a large bowl, combine flours, ground hazelnuts and salt. Grate frozen butter into flour mixture. Add cold water tablespoon by tablespoon, stirring with a fork after each addition, until dough forms (stop adding water before all of the flour mixture sticks to the ball of dough that has formed). Knead lightly until all flour is combined - you should still see lighter spots of butter though (when the dough bakes, these spots of butter will melt and create flaky layers of pastry). Roll out the dough to ½ cm thickness. Cover bottom of tart pan (with removable bottom) and blind bake the tart crust at 375°F / 190°C for 10 minutes, removing the weights after 7 minutes. Remove from oven and let cool while preparing the filling. FOR THE FILLING: Preheat oven to 375°F / 190°C. In a medium-sized bowl, combine sugar, flour and ½ cup ground hazelnuts. Beat in with a whisk eggs, whipping cream, vanilla and butter. Sprinkle 3 tbsp of ground hazelnuts on the pre-baked tart crust. Place quartered apricots on the ground hazelnuts. Pour custard over apricots, sprinkle with chopped hazelnuts. Bake for 30-45 minutes until golden brown and custard is firm.

Valuable Tips When Making Apricot Custard Tart Recipes

Apricot custard tarts are a delicious and classic dessert that is perfect for any occasion. This sweet and tangy dessert is made with apricots, pastry, and custard filling. Making an apricot custard tart can be challenging for beginners, but with the right tips and techniques, you can create a perfect tart that will impress your friends and family. In this article, we will share some valuable tips that will help you make a delicious apricot custard tart.

Tip #1: Choose the Right Apricots

When choosing apricots for your tart, it is crucial to select ripe ones. Ripe apricots are sweet and have a strong fragrance. Avoid using unripe apricots as they may not have the sweet and tangy flavor that is required in the recipe. It is also important to choose apricots that are firm and not too soft. Soft apricots may turn mushy when baked in the oven and can ruin the texture of your tart.

Tip #2: Make the Perfect Pastry

The pastry is an essential part of an apricot custard tart. A perfect pastry should be crisp and buttery. When making the pastry, make sure that all the ingredients, including flour, sugar, and butter, are cold. Cold ingredients will help create a flaky texture. To make the perfect pastry, mix the flour and sugar in a large mixing bowl, then cut in the cold butter using a pastry cutter, two knives, or your fingers until the mixture resembles coarse breadcrumbs. Add a little cold water, a tablespoon at a time, and mix until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes before rolling it out.

Tip #3: Blind Bake the Pastry

Blind baking the pastry means pre-baking the pastry without any filling. Blind baking helps avoid a soggy bottom and ensures that the pastry is cooked through. To blind bake the pastry, roll out the chilled pastry dough and transfer it to a tart pan. Prick the bottom of the pastry with a fork and line the pastry with baking parchment or foil, then fill it with baking beans or rice. Bake the pastry in a preheated oven for 10-15 minutes, then remove the baking beans and bake for another 5-10 minutes until the pastry is golden brown.

Tip #4: Make the Perfect Custard Filling

The custard filling in an apricot custard tart should be smooth, creamy, and flavorful. To make a perfect custard filling, mix together eggs, sugar, milk, cream, and vanilla extract in a bowl. For a richer and creamier filling, you can use all cream instead of milk and cream. Add a little flour or cornstarch to the mixture to help thicken the custard.

Tip #5: Prepare the Apricots

Before adding the apricots to the tart, it is essential to prepare them. Wash the apricots thoroughly and cut them in half. Remove the pit and slice the apricots into thin wedges. You can also leave the apricot halves intact for a different presentation.

Tip #6: Arrange the Apricots on the Tart

Arranging the apricots on the tart is one of the essential steps in making an apricot custard tart. Start by placing the sliced apricots on the blind-baked pastry in a circular pattern, starting from the outside and working your way in. Arrange the sliced apricots neatly so that they are not overlapping. You can also place the apricot halves on the tart for a different look.

Tip #7: Pour the Custard Over the Apricots

After arranging the apricots on the tart, pour the custard mixture over the apricots. Make sure that the custard is evenly spread throughout the tart. Do not overfill the tart with the custard as it may overflow during baking.

Tip #8: Bake the Tart Perfectly

Baking the tart perfectly is crucial to ensure that the pastry is crisp, and the custard is cooked through. Bake the apricot custard tart in a preheated oven at 180°C/350°F for 30-40 minutes. Check the tart after 30 minutes to make sure that the custard is set and not runny. If necessary, bake the tart for an additional 5-10 minutes until it is golden brown and fully cooked.

Tip #9: Serve the Tart with Garnishes

After baking the tart, allow it to cool completely before removing it from the tin. You can serve the tart as it is, or you can add some garnishes to make it look more appealing. For instance, sprinkle some powdered sugar on top of the tart or add some whipped cream or vanilla ice cream for an extra touch of indulgence.

Conclusion

Making an apricot custard tart is a delicious and satisfying experience. By following these valuable tips, you can create a perfect tart that will impress your guests. Remember always to use ripe apricots, make the perfect pastry, blind bake the pastry, prepare the custard filling, arrange the apricots on the tart, pour the custard over the apricots, bake the tart perfectly, and serve the tart with garnishes. With a little practice and patience, you can create an apricot custard tart that is the perfect ending to any meal.
