Number Of Ingredients 15

1 cup applesauce
1 cup sugar
1/2 cup butter at room temperature or 1/2 cup shortening
1 egg
2 teaspoons vanilla extract
2 cups flour
1/2 teaspoon salt
1 teaspoon soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon cloves
2 cups rolled oats
1 cup raisins
1 cup chopped nuts
1 cup chocolate chips (opt)

Steps:

  • Beat butter and sugar together until light & fluffy. Add egg, vanilla and beat again until combined. Add the applesauce and beat again.
  • Add the flour, salt, soda, baking powder, cinnamon & cloves and beat until just combined.
  • Stir in the rolled oats, raisins, nuts & chocolate chips & mix well.
  • Drop by rounded spoonfuls or use an ice cream scoop on cookie sheets.
  • Bake in pre-heated 375 degree oven for 10-12 minutes or until golden brown.
  • Remove from cookie sheet and let cookies cool on rack or paper towels before placing in container.
  • These cookies freeze well.

2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon salt
1/2 cup butter (1 stick) or 1/2 cup margarine, softened (1 stick)
1/2 cup granulated sugar
1/4 cup packed brown sugar
1 large egg
1 cup unsweetened applesauce
1 teaspoon vanilla extract
1 medium granny smith apple, finely chopped
1 cup dark raisin
1 cup walnuts, coarsely chopped (optional)
1 cup confectioners' sugar
2 tablespoons fresh lemon juice

Steps:

  • 24Preheat oven to 375*. Grease 2 large cookie sheets.
  • On waxed paper, combine flour, baking powder, baking soda, cinnamon, allspice, and salt.
  • In large bowl, with mixer at medium speed, beat butter and sugars until light and fluffy. Reduce speed to low; beat in egg, applesauce, and vanilla until well combined. Beat in flour mixture just until blended. With spoon, stir in apple, raisins, and walnuts if using.
  • Drop dough by rounded measuring tablespoons, 1 inch apart, on prepared cookie sheets. Bake cookies on 2 oven racks 20 to 22 minutes or until lightly browned around edges and set, rotating cookie sheets between upper and lower racks halfway through baking.
  • While cookies bake, prepare Lemon Glaze:
  • In small bowl, stir confectioners' sugar and lemon juice until smooth.
  • Transfer cookies to wire racks. With pastry brush, brush glaze over warm cookies; cool completely.

My grandchildren love these in their lunches..if they last that long!! This recipe was originally tweaked from my very first and still referenced Fannie Farmer paperback cookbook.

2 cup(s) all purpose flour
1 cup(s) sugar
1 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1 teaspoon(s) cinnamon
1 teaspoon(s) nutmeg
1 - egg
1/4 pound(s) butter, softened
1 cup(s) applesauce
1 can(s) raisins (rehydrated)

Steps:

  • Preheat oven to 375. Fit parchment paper to cookie sheet Rehydrate raisins in 11/2 cup of hot water,until plump.(Raisins can be done ahead and drained) Soften butter @ room temperature
  • Add all dry ingredients into food processor bowl. Pulse 5-6 times. This aerates the dry mixture. Mix egg,applesauce and softened butter together, add to food processor bowl. Pulse until well mixed.
  • Remove blade.Drain and stir in raisins. Arrange by spoonfuls on the cookie sheets and bake for 5-7 minutes or until lightly browned

2 eggs
2 cups thick applesauce, drained
½ cup cold, brewed coffee
3 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda

1 teaspoon baking powder
1/2 teaspoon baking soda
