PORK CHOPS AND APPLESAUCE

Pork Chops and Applesauce image

To mark the 50th anniversary of "The Brady Bunch," only one dinner will do.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 13

2 pounds Golden Delicious apples, peeled and chopped
3 tablespoons sugar
1 tablespoon fresh lemon juice
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon dried sage
4 bone-in pork chops (1/2-inch thick; about 6 ounces each)
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
1/2 cup low-sodium chicken broth
2 tablespoons fresh lemon juice
2 tablespoons cold unsalted butter
Chopped fresh parsley, for topping

Steps:

  • Make the applesauce: Combine the apples, sugar and 1/2 cup water in a large pot. Bring to a simmer over medium-high heat. Reduce the heat to medium low, cover and cook, stirring occasionally, until the apples are very tender but still juicy, about 15 minutes. Remove from the heat and stir in the lemon juice. Mash the apples with a fork, or puree with an immersion blender or in a food processor for a smoother sauce. Transfer to a bowl and refrigerate at least 30 minutes.
  • Meanwhile, make the pork chops: Mix the paprika, garlic powder and sage in a small bowl. Season the pork chops with salt and pepper and rub all over with the paprika mixture. Heat a large nonstick skillet over medium-high heat and add the vegetable oil. Add the pork chops, reduce the heat to medium and cook until golden brown on the bottom, about 3 minutes. Flip and cook until browned on the other side and cooked through, 2 to 3 more minutes. Remove to a plate and pour off the drippings from the skillet.
  • Add the chicken broth and lemon juice to the skillet and scrape up any browned bits from the bottom of the pan. Add any juices from the plate of pork to the skillet and simmer until the sauce is reduced by half, 2 to 3 minutes. Stir in the butter until smooth. Transfer the pork chops to a platter and top with the pan sauce; sprinkle with parsley. Serve with the applesauce.

Pork Chops with Applesauce and Grits image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 1h55m

Yield 6 servings

Number Of Ingredients 21

8 slices bacon, cut into 1/2-inch pieces
1 yellow onion, chopped
2 cups stone-ground grits (the coarser the better!)
4 cups low-sodium chicken broth
2 cups heavy cream
Dash of cayenne, or to taste
1 1/2 cups grated Monterey Jack or other cheese
Salt and freshly ground black pepper
2 tablespoons butter
2 tablespoons olive oil
Six 1/2-inch-thick boneless pork chops
Salt and freshly ground black pepper
2 cups Applesauce, recipe follows
1/2 cup dry white wine
2 teaspoons apple cider vinegar
3/4 cup pure maple syrup
6 pounds mixed apple varieties (Gala, Honeycrisp, Golden Delicious), peeled, cored and cut into eighths
1 cup apple juice or water
Juice of 1/2 lemon
1/2 cup light brown sugar
1 teaspoon cinnamon

Steps:

  • For the grits: In a large pot over medium heat, cook the bacon and onions until the bacon is chewy and the onions are translucent, about 1 minute. Pour in the grits and add the chicken broth. Stir together and bring to a boil. Reduce to a simmer, cover and cook, stirring occasionally, for 30 to 40 minutes. Add the cream and cayenne, stirring them into the grits. Cover the pot and keep cooking over very low heat, stirring occasionally to keep them from sticking, until the grits are tender but still have a bite to them, another 20 to 30 minutes.
  • Just before serving, stir in the cheese. Add salt and pepper to taste.
  • For the pork chops: Melt the butter with the oil in a large skillet over medium-high heat. Sprinkle the pork chops on both sides with salt and pepper. Add the pork chops to the skillet and cook until golden brown, about 2 minutes per side. (They'll finish cooking in the skillet later.) Remove the pork chops to a plate.
  • Put the skillet back on the heat, add the Applesauce and pour in the wine and vinegar. Cook until the liquid reduces by half, about 5 minutes. Pour in the maple syrup, stir it in and allow it to come to a bubble. Add the pork chops to the skillet, reduce the heat to low, cover and cook for another 20 minutes.
  • To serve, spoon a generous helping of grits onto a plate. Lay a pork chop on top of the grits, and then spoon the apples over the top. Be sure to get a little extra pan sauce onto the plate.
  • Throw the apples, apple juice and lemon juice into a pan and bring it to the boil over medium-high heat. Lower the heat and simmer until the apples are soft, about 15 minutes. Stir through the sugar and mix until melted. Add the cinnamon and stir through.
  • Puree the mixture in a food processor, blender or food mill. If not using right away, leave to cool and then refrigerate.

Pork Chops and Applesauce Brady Bunch Style image

This recipe comes from Gourmet Magazine's September 2003 Food and Television issue. It is supposed to be a take on pork chops Alice may have fed the Brady Bunch. My husband and I really enjoyed this recipe. I particularly liked the applesauce. I halved all the ingredients when I made it.

Number Of Ingredients 15

2 cups milk

2 teaspoons chopped fresh thyme (or 1/2 tsp dried, crumbled)
2 -3 tablespoons vegetable oil

1 bay leaf
1/4 teaspoon ground allspice

Discard bay leaf and mash apples with a fork. Keep applesauce warm, covered.
  • Preheat oven to 200 degrees.

PORK CHOPS WITH GOLDEN APPLESAUCE

Pork Chops With Golden Applesauce image

Wow! These are so good. I literally closed my eyes when I ate them. Your family will want them, and your guests will beg you for the recipe. This is a Rachael Ray all time hit. The fresh piece of ginger is key here (only costs about .30 or.40 cents), so don't short cut with dried or you will be missing out. You can use regular raisins if you don't have golden.

Provided by Chef Sweet Sal

Categories     Pork

Time 35m

Yield 3-4 serving(s)

Number Of Ingredients 12

4 golden delicious apples, chopped
2 teaspoons lemon juice
2 ounces golden raisins, a handful
1 inch piece fresh gingerroot
3 tablespoons light brown sugar
2 cups apple juice or 2 cups cider, plus a splash for pan sauce
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
2 tablespoons vegetable oil or 2 tablespoons olive oil, 2 turns of the pan
4 (6 -8 ounce) thick center cut boneless pork chops, 1 inch thick
salt and pepper
2 tablespoons butter

Steps:

  • Combine first 8 ingredients in a medium pot placed over medium high heat and cook until a chunky sauce forms, 10 to 20 minutes (depends on consistency you prefer), stirring occasionally. If sauce begins to spatter as it bubbles, reduce heat back a little, but it should be allowed to reduce and form quickly. Once apples are soft and sauce forms, remove it from the heat.
  • Heat a large nonstick skillet over medium high heat. Add oil to the pan. Season chops on 1 side with salt and pepper. Using a pair of tongs, add chops to hot skillet seasoned side down. Season the opposite side of the chops with salt and pepper. Brown and caramelize the chops 2 minutes on each side, then reduce heat to medium and cook another 5 to 6 minutes, turning occasionally, until juices run clear.
  • Remove chops from heat and let them rest a couple of minutes for juice to redistribute. Deglaze the pan with a splash of apple juice and 2 tablespoons of butter. Pour pan sauce over chops. Remove ginger from the sauce and top chops with generous portions of warm golden apple sauce.

DEE-LICIOUS APPLESAUCE MUSTARD PORK CHOPS

Dee-licious Applesauce Mustard Pork Chops image

When I make pork roast, a lot of times I rub it with mustard and roast it long and slow with apples and onions. I came up with this recipe about 10 yrs ago, because I wanted to add the same flavors to my pork chops. I hope you like them as much as my family does. They like milder mustard, so I use spicy brown. Feel free to add...

1/2 c plain dry bread crumbs
2/3 c applesauce, unsweetened, sweetened or homemade
3 - 4 Tbsp mustard, spicy brown. may use dijon if you like a stronger mustard flavor

Steps:

  • 1. heat oven to 425 degrees. Line baking pan with foil and set rack inside. optional: use the broiler pan, but the rack keeps the chops crisper. Sprinkle chops with lemon pepper or seasoning salt and white pepper. Let stand and marry for 20-30 minutes.
  • 2. In one pie plate mix together the 2 kinds of bread crumbs. In another, mix together the applesauce and mustard. In a 3rd one put the flour. Dredge in flour, shake off excess. Then dredge in applesauce/mustard, and then in crumb mixture. Place on rack on baking sheet.
  • 3. Bake for 20 minutes or until browned and done. I like them cooked to 150 degrees. Let rest for 10 minutes. Serve and enjoy!

Cooking pork chops can be tricky as you don't want to dry them out, but you also want to ensure that they are cooked through. One of the ways to make pork chops more flavorful is to add a sauce that will enhance the taste. Applesauce is a classic condiment that pairs well with pork chops, and in this article, we will be providing you with some valuable tips on how to make the perfect applesauce pork chops recipe.

Choose the Right Cut of Pork

Choosing the right cut of pork is essential to making delicious applesauce pork chops. The best cut for this recipe is a bone-in pork chop, which tends to be juicier and more flavorful than boneless cuts. The thickness of the pork chop is also important, as thicker cuts will take longer to cook, and thinner cuts can become dry and tough. Look for pork chops that are at least 1 inch thick for the best results.

Brine the Pork Chops

One way to ensure that your pork chops are juicy and flavorful is to brine them before cooking. Brining involves soaking the pork chops in a solution of salt, sugar, and water for a period of time before cooking. This process helps to tenderize the meat, infuse it with flavor, and keep it moist during cooking. You can also add other herbs and spices to the brine to enhance the flavor even further.
Ingredients for a basic pork chop brine:
  • 4 cups cold water
  • 1/4 cup kosher salt
  • 1/4 cup brown sugar
  • 1 tablespoon whole peppercorns
  • 2 bay leaves
To brine the pork chops, mix together the brine ingredients in a large bowl or container. Add the pork chops and ensure that they are fully submerged in the brine. Refrigerate for at least 2 hours, but no more than 4 hours. Remove the pork chops from the brine and pat them dry with paper towels before cooking.

Season the Pork Chops

Before cooking the pork chops, season them generously with salt, pepper, and any other herbs or spices that you like. Rosemary, thyme, and garlic are all excellent options that pair well with applesauce. Be sure to season both sides of the pork chops so that the flavor is evenly distributed.

Sear the Pork Chops

To get a nice brown crust on the pork chops and seal in the juices, it's essential to sear them before baking or grilling. Heat a large skillet over medium-high heat and add a tablespoon of oil. When the oil is hot, add the pork chops and let them cook undisturbed for 2-3 minutes until they are browned on one side. Flip them over and repeat on the other side. Remove the pork chops from the skillet and set them aside.

Make the Applesauce

Homemade applesauce is quick and easy to make, and it's much tastier than store-bought versions. Plus, you can customize it to your liking by adjusting the sweetness and spice level. To make applesauce, start by peeling and chopping 4-6 medium apples into small pieces. In a saucepan, add the apples, 1/4 cup of water, 2 tablespoons of sugar, 1 teaspoon of cinnamon, and a pinch of nutmeg. Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for 15-20 minutes until the apples are soft and the liquid has thickened. Use a potato masher or immersion blender to mash the apples until they reach your desired consistency.

Add the Applesauce to the Pork Chops

Once the applesauce is ready, spoon it over the pork chops, covering them evenly. You can also use a brush to apply the sauce if you prefer a thinner layer. Make sure that the applesauce covers the entire surface of the pork chops, as this will help to keep them moist during cooking.

Bake or Grill the Pork Chops

Now it's time to cook the pork chops until they are fully cooked and tender. There are two main methods for cooking pork chops - baking and grilling. Baking is a good option if you want a more hands-off approach, while grilling will give you that nice charred flavor. Here's how to cook the pork chops using both methods:
Baking Method:
  • Preheat your oven to 375°F.
  • Place the pork chops in a baking dish and bake for 20-25 minutes, or until the internal temperature reaches 145°F.
  • Remove the pork chops from the oven and let them rest for 5 minutes before serving.
Grilling Method:
  • Preheat your grill to medium-high heat.
  • Place the pork chops on the grill and cook for 6-7 minutes per side, or until the internal temperature reaches 145°F.
  • Remove the pork chops from the grill and let them rest for 5 minutes before serving.

Serve and Enjoy

Once the pork chops are cooked, it's time to serve them up and enjoy! You can garnish them with chopped herbs or serve them alongside your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh side salad. The sweet and tangy flavor of the applesauce will pair perfectly with the savory pork chops, making this a winning recipe for any dinner occasion.

Conclusion

Making delicious applesauce pork chops requires a few key steps, such as choosing the right cut of pork, brining the pork chops, seasoning them well, searing them before adding the sauce, and cooking them to the correct temperature. Homemade applesauce is quick and easy to make and is a great way to add flavor and moisture to your pork chops.
