AUTUMN CHEESECAKE

This is a delicious Apple Cheesecake that I usually make in the fall.

1 cup graham cracker crumbs
½ cup finely chopped pecans
3 tablespoons white sugar
½ teaspoon ground cinnamon
¼ cup unsalted butter, melted
2 (8 ounce) packages cream cheese, softened
½ cup white sugar
2 eggs
½ teaspoon vanilla extract
4 cups apples - peeled, cored and thinly sliced
⅓ cup white sugar
½ teaspoon ground cinnamon
¼ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a large bowl, stir together the graham cracker crumbs, 1/2 cup finely chopped pecans, 3 tablespoons sugar, 1/2 teaspoon cinnamon and melted butter; press into the bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes.
  • In a large bowl, combine cream cheese and 1/2 cup sugar. Mix at medium speed until smooth. Beat in eggs one at a time, mixing well after each addition. Blend in vanilla; pour filling into the baked crust.
  • In a small bowl, stir together 1/3 cup sugar and 1/2 teaspoon cinnamon. Toss the cinnamon-sugar with the apples to coat. Spoon apple mixture over cream cheese layer and sprinkle with 1/4 cup chopped pecans.
  • Bake in preheated oven for 60 to 70 minutes. With a knife, loosen cake from rim of pan. Let cool, then remove the rim of pan. Chill cake before serving.

8 ounces cream cheese, softened (can use light)
1 cup powdered sugar
1 teaspoon fresh lemon juice (or rind)
1 cup heavy cream
1 graham cracker crust
2 tablespoons butter
2 apples, peeled and diced (tart)
1/3 cup maple syrup
1 tablespoon brown sugar
1 teaspoon cornstarch
1/4 teaspoon cinnamon
1/4 cup pecans, toasted

Steps:

  • In a large bowl, whip cream cheese for about 30 seconds.
  • Add powdered sugar and lemon juice. Mix well.
  • In a separate bowl, whip cream until stiff peaks form.
  • Fold gently into cream cheese mixture.
  • Pour into graham cracker crust.
  • Chill for 2 to 3 hours.
  • For Maple Apple Topping in a large skillet, melt butter over medium heat.
  • Add apples for 5 minutes until tender.
  • In a small bowl, combine maple syrup, sugar, cornstarch, and cinnamon. Add to apples in skillet.
  • Cook for an addition 4 minutes or until the sauce is thickened. Remove from heat and let cool about 10 minutes.
  • Cut cheesecake into individual slices and spoon sauce over each piece.
  • Sprinkle with toasted pecans.

CRUST
1-1/4 cups graham cracker crumbs
1/2 cup chopped pecans, toasted*
1/4 cup firmly packed brown sugar
1/4 cup butter melted
FILLING
3 (8-oz) pkg. cream cheese softened
1 cup sugar
2 Tbls flour
3 eggs
1 cup applesauce
1/2 tsp cinnamon
1/8 tsp nutmeg

Steps:

  • Heat oven to 350. In medium bowl, combine all crust ingredients and mix well. Press in bottom of 10 inch springform pan. In large bowl combine cream cheese sugar and flour. Beat until fluffy and light. Add eggs one at a time beating well after each addition. Add remaining ingredients, beat until well blended. Pour into crust lined pan. Bake at 350 for 50-60 minutes. ( to minimize cracking place shallow pan half full of water on lower oven rack during baking). Cool. Refrigerate for several hours.

1/2 cup butter, softened
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1 cup all-purpose flour
1/4 cup quick-cooking oats
1/4 cup finely chopped walnuts
FILLING:
2 packages (8 ounces each) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1/2 cup thawed apple juice concentrate
3 large eggs, lightly beaten
TOPPING:
1 tablespoon butter
2 medium tart apples, peeled and sliced
1 teaspoon cornstarch
1/4 teaspoon ground cinnamon
1/4 cup thawed apple juice concentrate

Steps:

  • Preheat oven to 325°. In a bowl, beat butter, brown sugar and cinnamon until blended. Beat in flour, oats and walnuts until well blended. Press onto bottom and 1-1/2 in. up sides of a greased 9-in. springform pan. Place on a baking sheet. Bake 10 minutes. Cool on a wire rack., In a large bowl, beat cream cheese until fluffy. Gradually beat in milk and juice concentrate until smooth. Add eggs; beat on low speed just until blended (mixture will be thin). Pour into crust. Return pan to baking sheet. , Bake until center is almost set, 40-45 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., To serve, in a large skillet, melt butter over medium heat; saute apples until crisp-tender, about 5 minutes. Cool slightly., For glaze, in a small saucepan, mix cornstarch, cinnamon and juice concentrate until smooth; bring to a boil. Reduce heat; cook and stir until thickened, about 1 minute. Add 1 tablespoon glaze to sauteed apples; toss to coat., Remove rim from springform pan. Top cheesecake with apples. Drizzle with glaze. Serve immediately or refrigerate until serving.
