Time 20m

Number Of Ingredients 11

1 cup applesauce
3 tbsp oil OR applesauce or mashed banana
2 tbsp milk of choice
2 tsp pure vanilla extract
2 tsp white or cider vinegar
1 cup spelt,
1/4 cup sugar or unrefined sugar
1/2 tsp salt
1/2 tsp each: baking soda and baking powder
1/4 tsp cinnamon
optional handful raisins, (crushed walnuts, shredded coconut, etc.)

Steps:

  • *If you want to make mini muffins, bake only 10 minutes. I recommend this mini muffin pan.Whisk all liquid ingredients together. Preheat oven to 350, and line a muffin tin. In a new bowl, stir remaining ingredients very well. Pour dry into wet, and stir until just evenly mixed. Fill each liner about 2/3 of the way, leaving a little room because they will rise. Bake on the center rack, 20 minutes or until muffins have domed and a toothpick inserted into the center of a muffin comes out mostly clean. Let cool. (If you loosely cover overnight on the counter or refrigerated, the liners peel off easily the next day and flavor and texture are even better.) Leftovers can be frozen if desired. Unsweetened applesauce, whole-wheat flour and toasted walnuts make these warmly spiced muffins a wholesome breakfast or afternoon snack. They are best served warm the day they are baked, but since they are made with oil, they will also stay soft and moist for a couple of days in an airtight container on the counter.

Time 40m

Yield 12 muffins

Number Of Ingredients 13

3/4 cup plus 1 tablespoon/165 grams granulated sugar
2 teaspoons ground cinnamon
2 large eggs
1 cup/250 grams unsweetened applesauce
1/2 cup/105 grams canola or other neutral oil
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon kosher salt (Diamond Crystal)
1 cup/128 grams all-purpose flour
1 cup/130 grams whole-wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup/90 grams toasted walnut halves, finely chopped
1 small honeycrisp or other baking apple, peeled and cut into roughly 1/4-inch pieces, about 3/4 cup/80 grams (optional)

Steps:

  • Set a rack in the center of the oven and heat to 350 degrees. Line a 12-cup standard muffin tin with paper liners. In a small bowl, combine 1 tablespoon sugar and 1/2 teaspoon cinnamon, and set aside.
  • In a large bowl, whisk the eggs and remaining 3/4 cup/150 grams sugar until light and foamy.
  • Add the applesauce, oil, remaining 1 1/2 teaspoons cinnamon, nutmeg and salt, and whisk to combine.
  • Add the all-purpose flour, whole-wheat flour, baking powder and baking soda to the bowl. Fold until a few streaks of flour remain, then add two-thirds of the walnuts and all of the chopped apple, if using. Fold until well combined and no streaks of flour remain.
  • Divide the mixture among the 12 liners; they will be almost full to the top. Sprinkle with the remaining one-third of the walnuts and reserved cinnamon sugar.
  • Bake until muffin tops are puffed and golden, and a skewer inserted into the center comes out clean, 15 to 22 minutes. Let cool slightly before removing from the pan. These are best the day they are made, but will last a day or two on the counter in an airtight container. Alternatively, let the muffins cool completely, then transfer to an airtight container and freeze.

Muffins are a popular snack option for many people because it is easy to prepare and can be eaten on the go. Applesauce adds natural sweetness to the muffins without using refined sugars. Cardamom is a spice that adds a unique flavor to the muffins. In this article, we will discuss some valuable tips to keep in mind when making applesauce cardamom muffins recipes.

Tip 1: Choose the right type of applesauce:

The quality and type of applesauce you use in your muffin recipes can make a big difference in the final product. When making applesauce cardamom muffins, you want to choose a high-quality unsweetened applesauce. Avoid using sweetened or flavored applesauce, as they can make the muffins too sweet or overpower the cardamom flavor.
Tip 1.1: Homemade applesauce:
If you have the time and resources, consider making your own applesauce from scratch. Homemade applesauce is healthier and contains no added sugars or preservatives. It can also add a unique flavor to your muffins, depending on the apples you use.
Tip 1.2: Store-bought unsweetened applesauce:
If you are short on time, store-bought unsweetened applesauce is a good option. Read the label carefully and choose a brand that contains only apples and water. Avoid using applesauce that contains added sugars or preservatives.

Tip 2: Use the right type of flour:

The type of flour you use in your muffin recipes can also affect the texture and flavor of the final product. For applesauce cardamom muffins, use all-purpose flour or whole wheat flour. Both types of flour work well in muffin recipes and provide a good texture.
Tip 2.1: All-purpose flour:
All-purpose flour is a good option for muffin recipes because it provides a tender and light crumb. It is also readily available in most grocery stores.
Tip 2.2: Whole wheat flour:
Whole wheat flour is a healthier option for muffin recipes. It contains more fiber and nutrients than all-purpose flour. However, it can make the muffins denser and heavier. If you are using whole wheat flour, be sure to measure it accurately and mix it thoroughly with the other dry ingredients.

Tip 3: Mix the wet and dry ingredients separately:

To ensure that your muffins are moist and tender, it is important to mix the wet and dry ingredients separately before combining them. This allows you to mix the ingredients thoroughly without overmixing the batter.
Tip 3.1: Wet ingredients:
The wet ingredients for applesauce cardamom muffins usually include applesauce, eggs, melted butter or oil, and vanilla extract. Whisk these ingredients together in a large mixing bowl.
Tip 3.2: Dry ingredients:
The dry ingredients for muffins usually include flour, baking powder, baking soda, salt, sugar, and spices. Whisk these ingredients together in a separate mixing bowl.

Tip 4: Add the cardamom spice:

Cardamom is a unique spice that adds a warm and slightly sweet flavor to the muffins. It is an essential ingredient in applesauce cardamom muffins. You can use ground cardamom or grind whole pods yourself.
Tip 4.1: Ground cardamom:
Ground cardamom is readily available in most grocery stores. It is easier to use than whole pods and adds a uniform flavor to the muffins. Use about 1/4 to 1/2 teaspoon of ground cardamom in your muffin recipe.
Tip 4.2: Whole cardamom pods:
If you have whole cardamom pods, you can grind them yourself for a fresh and flavorful spice. Crush the pods with a rolling pin or mortar and pestle to release the seeds. Remove the husks and grind the seeds into a fine powder. Use about 1/4 to 1/2 teaspoon of ground cardamom in your muffin recipe.

Tip 5: Do not overmix the batter:

Overmixing the muffin batter can make the muffins tough and dense. Once you have combined the wet and dry ingredients, mix the batter gently and only until the dry ingredients are moistened. Some lumps in the batter are fine.
Tip 5.1: Muffin batter consistency:
The muffin batter for applesauce cardamom muffins should be thick but still pourable. It should not be too stiff or too runny. If the batter is too stiff, add a tablespoon of milk or water at a time until you get the right consistency.
Tip 5.2: Filling the muffin cups:
Fill the muffin cups about three-quarters full. Do not fill the cups to the top as the muffins will rise during baking. Use a spoon or scoop to fill the cups evenly.

Tip 6: Bake the muffins correctly:

Baking the muffins at the right temperature and time is crucial to getting the perfect muffins. Do not overbake the muffins as they can become dry and tough.
Tip 6.1: Baking temperature:
Preheat your oven to 400°F (200°C). This temperature allows the muffins to rise and cook evenly without burning.
Tip 6.2: Baking time:
Bake the muffins for about 15 to 20 minutes, or until a toothpick inserted in the center comes out clean. The exact baking time may vary depending on your oven and muffin tin. Start with the minimum time and check the muffins for doneness. If they are not done, continue baking for a few more minutes.

Applesauce cardamom muffins are a delicious and healthy snack option that can be made easily at home. By following these valuable tips, you can make the perfect muffins every time.
