1 lb boneless skinless chicken breast (sliced into small chunks)
2 tablespoons olive oil
1/4 cup stir-fry sauce
1/2 cup asian toasted sesame dressing (for marinade)
2 tablespoons asian toasted sesame dressing (for coleslaw)
2 tablespoons soy sauce
2 tablespoons teriyaki sauce
1 cup coleslaw mix
10 wonton wrappers
oil (for frying)
1/4 cup green onion (sliced)
1/4 cup cilantro (chopped)
1/4 cup red onion (diced)

Steps:

  • Step 1: In a bowl or seal-able plastic bag. Combine stir fry sauce, Asian toasted sesame dressing, soy sauce, and teriyaki sauce. Add chicken and mix well with the sauce. Cover and refrigerate for 1 hour.
  • Step 2: In a medium bowl toss coleslaw mix with 2 tablespoons of Asian sesame dressing. Set aside.
  • Step 3: Heat olive oil in a wok over high heat. Add chicken with the marinade and stir fry until the chicken is fully cooked. Remove from the wok and transfer to a bowl. Add about 1/2 inch of oil to the wok over medium high. Fold the wonton wrappers into a triangle formation but do not seal. Place into the hot oil and fry until golden brown on one side. Turn once and fry until golden brown on the other side. Drain on paper towels.
  • Step 4: To make tacos- place a small amount of the chicken mixture into the bottom of the fried wonton. Top with coleslaw mixture, green onion, cilantro and red onion.

For the Egg Wash
1 1/3 cups milk
1 1/3 eggs
For the Dusting
2/3 cup whole wheat flour
2/3 cup all-purpose flour
2/3 teaspoon garlic granules
2/3 teaspoon onion powder
1/3 teaspoon salt
1 teaspoon baking powder
2/3 teaspoon paprika
2/3 teaspoon black pepper
For the Batter
1/2 cup all-purpose flour
2/3 cup whole wheat flour
2/3 teaspoon garlic granules
2/3 teaspoon onion powder
1 teaspoon salt
1 teaspoon baking powder
1 1/3 teaspoons paprika
2/3 teaspoon black pepper
1 tablespoon vegetable oil
2/3 cup milk
1 1/3 eggs
1 cup water
For the Coating
2/3 cup whole wheat flour
2/3 cup all-purpose flour
2/3 teaspoon garlic granules
2/3 teaspoon onion powder
1/3 teaspoon salt
1 teaspoon baking powder
2/3 teaspoon paprika
2/3 teaspoon black pepper
For the Country Gravy
2 cups milk
2/3 cup chicken broth
1/3 teaspoon garlic granules
1/3 teaspoon onion powder
1 teaspoon black pepper
2/3 to taste salt (to taste)
1/4 cup cornstarch
1/4 cup cold water

Steps:

  • Directions: 1 Simmer milk and chicken broth for gravy over low heat, being careful not to scorch. 2 Add garlic, onion powder, pepper and salt to gravy. 3 In a small dish, stir together cold water and cornstarch. 4 Stir cornstarch slurry into gravy, stirring constantly, and increase heat, cooking until gravy is thickened. 5 Set gravy aside and keep warm. 6 Heat 2-3 inches of oil in a deep skillet to 350F. 7 Mix ingredients for dusting and coating in separate bowls. 8 Stir together dry ingredients for batter in a bowl. 9 Add oil, eggs, milk, and water, stirring with a whisk until mixture is smooth. 10 Place a chicken breast into the dusting mixture and cover both sides. 11 Then dip chicken breast in the batter and allow excess batter to drain. 12 Then place battered chicken breast in the coating mixture, covering batter evenly but not too thick. 13 Fry chicken at once for 6-8 minutes or until chicken reaches 165F. 14 Do the same with the other breasts, but do not crowd pan. 15 Drain Chicken when cooked and serve hot with Country Gravy. TIPS: May want to spice up the gravy with poultry seasoning, etc...

4 chicken breasts
2 c all purpose flour
1 Tbsp baking powder
1 tsp pepper
3/4 tsp kosher salt
1 1/2 c buttermilk
1 egg
1 Tbsp garlic powder
3 c shortening for deep frying
FOR GRAVY
1/4 c all purpose flour
1 c cream
salt and pepper to taste
1 Tbsp tabasco (optional)

Steps:

  • 1. Pound the chicken between two sheets of wax paper, large baggie or celophane. Sprinkle on the kosher salt, garlic powder and pepper on the chicken breast.
  • 2. Place 2 cups of flour in a shallow bowl. I add more seasonings to the flour. Stir together the baking powder, pepper, garlic powder salt.
  • 3. Place in another bowl the buttermilk and the egg. Add a dash of Tabasco sauce optional.
  • 4. Than dredge each chicken piece into the flour. Do this 2 and it is called double dipping.
  • 5. Heat the shortening to 325 degrees. Fry each chicken until golden brown 3 to 5 minutes per side. Place on a paper towel to drain.
  • 6. Drain the fat from the skillet, reserving 1/4 cup of the liquid and solids for the gravy. Stir in milk and cream heat to medium, and bring the gravy to a simmer. Cook until thick. Season. Spoon gravy over chicken. Done!
  • 7. You have saved yourself $25.00 plus drinks and tip for 2 people.

When I make these, I use Lea & Perrins White Wine Worcestershire Sauce For Chicken instead of regular Worcestershire sauce.

3 dozen chicken wings (1st and 2nd wing pieces)
12 fluid ounces louisiana hot sauce
6 tablespoons unsalted butter
3 tablespoons white vinegar
1 tablespoon Worcestershire sauce
1 1/4 teaspoons cayenne pepper
1/4 teaspoon garlic powder
1 1/2 tablespoons flour

Steps:

  • Bake or deep-fry the wings until they are done.
  • Mix all the sauce ingredients except flour in a saucepan.
  • Cook over medium-low heat.
  • When warm, add flour to thicken sauce; stir frequently.
  • When sauce is thick, cover bottom of 9 x 13-inch baking dish with sauce.
  • Mix the rest of the sauce with wings and place in baking dish.
  • Bake at 300°F for about 20 minutes or until warm.
  • Serve with celery sticks and blue cheese dressing.
  • These are great reheated, but be warned that they get hotter each time!
