CINNAMON DUMPLINGS WITH APPLE-CIDER SYRUP

Cinnamon Dumplings With Apple-Cider Syrup image

This dessert is as sweetly comforting as pulling on a sweater on the first chilly fall day. It features cinnamon dumplings that are generously drizzled with warm, golden apple-cider syrup. They're easy to make: Just drop dough into a simmering sugar-cider mixture. These are best served warm with a cool dollop of creme fraiche.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Number Of Ingredients 10

1 1/2 cups all-purpose flour
2 1/4 teaspoons baking powder
1 teaspoon ground cinnamon
3/4 teaspoon coarse salt
2 cups sugar
6 tablespoons cold unsalted butter, cut into 1/2-inch pieces
1 large egg, plus 1 large egg yolk
1 1/2 tablespoons whole milk
4 cups apple cider
Creme fraiche, for serving

Steps:

  • Sift flour, baking powder, cinnamon, and salt in a medium bowl; set aside. Stir together sugar and 3/4 cup water in a large saucepan over medium heat. Cook, without stirring, until sugar begins to melt and turn light amber, about 14 minutes. Continue to cook, stirring occasionally, until sugar has melted and mixture turns medium amber, about 2 minutes more.
  • Meanwhile, work butter into the flour mixture using your fingers or a pastry blender until flour is incorporated but mixture is still crumbly. Whisk together egg, egg yolk, and milk in a medium bowl. Form a well in the center of flour mixture; pour in egg mixture. Stir gently with a fork until combined.
  • Remove sugar mixture from heat; slowly whisk in cider. Return to heat; bring to a simmer. Using your hands or a small spoon, divide the dough evenly into 12 pieces, and roll into balls about 1 1/2 inches in diameter. Carefully drop 6 balls of dough into the simmering cider syrup. Cook, turning once or twice to coat fully, until dumplings have tripled in size and are deep golden brown, about 20 minutes. Using a slotted spoon, transfer dumplings to a platter, and cover. Repeat with remaining balls of dough. Divide dumplings among 6 bowls, and drizzle with the remaining cider syrup. Serve with creme fraiche.

Apple syrup recipes are a collection of delicious and nutritious recipes that are made using various types of apples, which are boiled in water until they become soft and pulpy. The resulting pulp is then strained and mixed with sugar, cinnamon, and other spices to make a sweet, fragrant syrup that can be drizzled over pancakes, waffles, yogurt, oatmeal, or used as a natural sweetener in cocktails, sauces, marinades, and dressings.

The Origins and Benefits of Apple Syrup

The use of apple syrup dates back to ancient times when the Greeks and Romans used it as a natural medicine to treat respiratory problems, such as coughs and sore throats, thanks to its high content of vitamin C, antioxidants, and anti-inflammatory compounds. Today, apple syrup is still recognized as a healthy alternative to refined sugar and corn syrup, which are linked to obesity, diabetes, and other chronic diseases.

Types of Apples for Making Syrup

There are many types of apples that can be used for making syrup, each with its own flavor, texture, and color. Some of the most popular varieties include:
Gala
Gala apples are sweet, juicy, and firm, with a yellow/red skin and a mellow flavor. They are excellent for making syrup that has a delicate, fruity taste and aroma.
Honeycrisp
Honeycrisp apples are crunchy, juicy, and slightly tart, with a green/red skin and a honey-like flavor. They are ideal for making syrup that has a rich, caramelized flavor and a hint of tartness.
Granny Smith

Valuable tips for Making Apple Syrup Recipes

Apples are a staple fruit in many households around the world. They are versatile and can be used in a myriad of ways from making pies, juices, or even apple syrup. Apple syrup is an excellent substitute for maple syrup or any other sweetener you desire. It is easy to make, and you only need a few ingredients. However, like any other recipe, apple syrup requires some tips you should follow to ensure your end product is perfect. Here are some valuable tips for making apple syrup recipes:

Choose the Right Apples

When making apple syrup, choosing the right apples is essential. The best apples for apple syrup should be sweet and tart. Examples of apples that meet this criterion include Honeycrisp, Braeburn, and Granny Smith. Avoid using soft or mealy apples as they will not give you the desired thickness or sweet taste. Additionally, it's essential to use fresh apples to make your syrup. Using apples that have been in storage for some time may affect the texture and flavor of your syrup.

Wash Your Apples Thoroughly

After picking the right apples, you should clean them thoroughly before using them to make your syrup. Washing the apples helps to remove any dirt, debris, or residue from the apples' skin, which can affect the purity of the syrup. You can clean the apples using a soft-bristled brush or a damp cloth. After cleaning, rinse the apples with cold water and pat them dry using a clean towel. Be sure to remove any visible blemishes or bruises from the apples.

Chop the Apples into Small Pieces

The next step after cleaning the apples is to chop them into small pieces. This process encompasses peeling the apples, removing the core, and slicing them into small pieces. Chopping the apples into small pieces ensures that they cook evenly during the syrup-making process. Additionally, chopping the apples increases their surface area, which helps with flavor extraction.

Use the Right Sweeteners

One of the significant ways to enhance the taste of your apple syrup is by using the right sweeteners. Depending on your preference, you can use honey, sugar, or brown sugar as sweeteners. However, different sweeteners will provide varying flavors and consistency to your syrup. For instance, honey will give your syrup a distinct flavor and a slight thickness. However, it is essential to use sweeteners in moderation to avoid overpowering the natural taste of the apples.

Add Spices and Flavors

Addition of spices and flavors can transform an ordinary apple syrup into a delightful sweetener. You can add cinnamon, nutmeg, ginger, cloves, or vanilla extract to your apple syrup to enhance its flavor and aroma. Additionally, spices give the syrup a warming effect, which is excellent for cold mornings or winter holidays. It is essential to add the spices after the apples have cooked, and then let the flavors simmer for about five minutes.

Monitor the Cooking Temperature and Time

The cooking temperature and time are critical aspects to consider when making apple syrup. Using high heat while cooking the apples will result in caramelization, which can affect the syrup's taste and thickness. Therefore, it is essential to use low heat during the cooking process. Additionally, it is recommended to cook the apples for about an hour to extract as much flavor as possible from the apples. Keep stirring the apples during the cooking process to prevent sticking or burning.

Strain the Apple Mixture

After cooking the apples for the recommended time, you should strain the mixture to remove the pulp and any seeds. Using a cheesecloth or fine-mesh strainer will ensure the syrup is smooth and free from any lumps or pulp. After straining, return the syrup to low heat and let it simmer for about 10 to 15 minutes until it thickens to your desired consistency. Remember to keep stirring the syrup during this process to prevent scorching or sticking.

Store the Apple Syrup Properly

Once you have made your apple syrup, it is essential to store it appropriately to ensure longevity. The best way to store apple syrup is by using a mason jar or any other airtight container. Store the syrup in a cool, dry place away from direct sunlight or heat. Apple syrup can last up to six months if stored correctly.

Conclusion

Making apple syrup is a simple process that requires a few ingredients and some essential tips. Choosing the right apples, cleaning them thoroughly, using the right sweeteners, adding spices and flavors, monitoring the cooking temperature and time, straining the mixture, and proper storage are vital aspects of making apple syrup recipes. By following these tips, you can create a delightful apple syrup that is perfect for pancakes, waffles, French toast, or any other sweet dish you desire.
