SAUSAGE AND APPLE STUFFED PORK ROAST

Sausage and Apple Stuffed Pork Roast image

Provided by Melissa d'Arabian : Food Network

Categories     main-dish

Time 1h55m

Yield 8 servings

Number Of Ingredients 14

1/2 pound mild Italian sausage (or 2 links, casings removed)
1 yellow onion, chopped
2 stalks celery, chopped
1 tart apple, peeled and diced
Salt and freshly ground pepper
2 cloves garlic, minced
2 pieces white bread
2 teaspoons chopped fresh sage
2 teaspoons chopped fresh rosemary
1 teaspoon chopped fresh thyme
2 tablespoons butter
One 3-pound boneless pork loin
1 tablespoon vegetable oil
1/2 cup white wine

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large saute pan over medium heat, saute the sausage until no longer pink. Remove the sausage (leave in the fat), and set aside. To the pan, add the onion, celery, and apple and sprinkle with salt and pepper. Cook until the apple is no longer crisp, about 5 minutes. Add the garlic and cook an additional couple of minutes. Remove from the heat, stir the sausage back in and set aside.
  • In a food processor, pulse the bread with the sage, rosemary, and thyme into coarse crumbs.
  • Heat the butter in a medium saute pan and cook the crumbs over medium-high heat until coated with butter and lightly toasted, about 3 minutes (be careful not to burn). Mix the breadcrumbs into the sausage mixture.
  • Prepare the roast as if making a jellyroll. Place the roast with the short side toward you, and fat facing down toward the counter or cutting board. Use a sharp knife to slice the roast open at about 1/2-inch from the bottom of the roast (parallel to the cutting board), being careful not to cut all the way through. Continue cutting, unrolling the roast as you work until you have a large, thin piece of meat. Place the rolled out piece of meat between 2 sheets of waxed or parchment paper, and lightly pound with meat mallet to increase the meat surface area by 10 to 20 percent. Be careful not to pound through the meat. Salt and pepper the pork and top with the filling, spreading evenly across the pork, leaving a 1-inch margin around the perimeter.
  • Starting with the short side, roll up tightly jellyroll style, and secure the roast with kitchen twine.
  • Heat a large saute pan over medium heat and add oil. Add the roast and brown on all sides. Place in a roasting pan fitted with a rack and add the wine in the bottom of the pan (to keep the juices from burning), and bake for 45 minutes to 1 hour, or until the internal temperature hits 145 degrees F on an instant-read thermometer. Remove the roast from the oven and allow to rest for a full 10 minutes before slicing and serving.

How to Make Apple Stuffed Pork Roast Recipes

Making apple stuffed pork roast recipes is easier than you might think. Here is a general overview of the steps involved:
Step 1: Preparing the Pork Roast
Start by preheating the oven to 350°F (176°C). Then, take the pork roast and carefully butterfly it. This involves cutting the pork roast in half lengthways and opening it up like a book.
Step 2: Preparing the Stuffing
Next, you will need to prepare the stuffing. Start by melting butter in a skillet over medium heat. Add diced apples, herbs and spices, and sauté for approximately five minutes. Then, add the bread crumbs and mix until combined.
Step 3: Stuffing the Pork Roast
Now it's time to stuff the pork roast. Take the stuffing mixture and spread it evenly over the inside of the pork roast. Be sure to leave a bit of room around the edges to fold it back up.
Step 4: Rolling the Pork Roast
Once the stuffing is evenly spread, carefully roll the pork roast back up, starting at one end and rolling tightly. Secure the seams using toothpicks and/or twine.
Step 5: Roasting the Pork Roast
Place the pork roast in a roasting pan and pour white wine or chicken broth over the roast. Cover tightly with foil and roast for approximately 1 hour and 30 minutes or until the internal temperature of the pork reaches 145°F (63°C).
Step 6: Resting the Pork Roast
After roasting, remove the pork roast from the oven and let rest for 10-15 minutes. This will allow the juices to redistribute throughout the meat and ensure it stays moist.
Step 7: Serving the Pork Roast
Once rested, remove the toothpicks and/or twine and slice the pork roast into servings. Serve with your favorite sides such as roasted vegetables, rice or mashed potatoes.

Apple stuffed pork roast recipes are a perfect blend of savory and sweet. The tender meat is filled with a mixture of apples, onions, and herbs, creating an explosion of flavors in every bite. Preparing a stuffed pork roast may seem daunting at first, but with the right tips and techniques, it can be easy to make.

Choosing the Right Pork Cut:

The key to a perfect apple stuffed pork roast recipe is selecting the right cut of meat. A boneless pork loin or tenderloin is the best cut for stuffing. These cuts are lean, making them perfect for stuffing as they hold their shape and do not have a lot of extra fat to render. You can choose a pork loin or tenderloin that is already butterflied or ask your butcher to do it for you.

Stuffing the Pork Roast:

When making an apple stuffed pork roast recipe, the stuffing plays a crucial role in creating a flavorful dish. The stuffing should complement the pork without overpowering it. For an apple stuffed pork roast, you should use apples, onions, and herbs to create a perfect stuffing. Ensure the apples are not overripe, as they might turn to mush while cooking. Chop the apples and onions into small pieces and mix them with sage, thyme, salt, and pepper. Stuff the mixture into the pork loin, ensuring you tuck the stuffing in tightly. You can use a kitchen twine to tie the roast securely and keep the stuffing in place while cooking.

Season the Pork Roast:

A well-seasoned pork roast is vital in bringing out its best flavor. To make a delicious apple stuffed pork roast, you should season the pork loin with salt, pepper, and additional herbs of your choice. Rub the seasoning generously into the meat, ensuring all sides are covered. You can also add a drizzle of olive oil to help the seasoning adhere to the meat.

Cooking Time:

The cooking time for an apple stuffed pork roast recipe varies depending on the thickness and weight of the pork loin. It is best to use a meat thermometer to ensure the pork is cooked to perfection. A fully cooked pork roast should have an internal temperature of 145°F. The cooking time also depends on the cooking method used. You can choose to bake the pork in the oven, grill or cook it in a slow cooker. Whichever the method used, ensure you follow the recipe instructions to cook the pork roast to perfection.

Resting the Pork Roast:

Resting the pork roast after cooking is essential in ensuring it stays juicy and tender. After removing the pork roast from the oven, grill or slow cooker, allow it to rest for at least ten minutes before slicing it. Resting allows the juices in the meat to redistribute, making it moist and easier to slice. You can cover the pork roast with a foil to keep it warm as it rests.

Serving Suggestions:

An apple stuffed pork roast recipe is an excellent meal to serve for a special occasion, family dinner or dinner party. It is a versatile dish that can be served with various sides, depending on your preference. Some great side dishes to serve with the pork roast include roasted vegetables, mashed potatoes, rice, salad, or steamed vegetables. You can also create a gravy using the juices left in the pan, adding more flavor to the dish.

Conclusion:

Apple stuffed pork roast recipes provide a delicious meal option that is perfect for any occasion. By following the tips discussed above, you can prepare a juicy, tender, and flavorful apple stuffed pork roast that your family and guests will love. With the right cut of pork, a well-seasoned stuffing, and proper cooking and resting techniques, your apple stuffed pork roast recipe is sure to be a success.
