APPLE STRUDEL CHEESECAKE

Apple Strudel Cheesecake image

Our cheesecake-loving children inspired this recipe I adapted from several others. It was a hit with them because the apples make it less rich and heavy. My family eats it anytime-for breakfast or as a late-night snack-and I serve it for dessert or when company comes for coffee. -Janice White, Encampment, Wyoming

Big Apple Crumb Cheesecake image

Categories     dessert

Time 5h10m

Yield 8 to 10 servings

Number Of Ingredients 19

Nonstick cooking spray, for the pan
15 graham crackers (or 2 cups crushed graham cracker crumbs)
3 tablespoons packed light brown sugar
1/4 teaspoon kosher salt
5 tablespoons unsalted butter, melted and cooled
1 1/2 cups all-purpose flour
1/2 cup packed light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 stick unsalted butter, melted and cooled
1 tart apple, peeled, cored and diced
1 cup granulated sugar
2 tablespoons cornstarch
Pinch kosher salt
Three 8-ounce packages cream cheese, at room temperature
1 cup sour cream
3 large eggs plus 1 large egg yolk, at room temperature
2 teaspoons vanilla extract
Store-bought caramel sauce, for serving

Steps:

  • For the graham crust: Preheat the oven to 350 degrees F. Lightly spray a 9-inch springform pan with nonstick cooking spray and place on a baking sheet.
  • Add the graham crackers to a food processor and pulse until fine, then add the brown sugar and salt and pulse until well combined. Drizzle in the melted butter and stir until the mixture resembles damp sand. Press the crumbs into the bottom of the prepared springform pan in an even layer. Bake the crust until firm, about 10 minutes, then let cool.
  • For the apple crumb topping: Stir together the flour, brown sugar, cinnamon and salt in a medium bowl. Drizzle in the butter and stir until the mixture resembles wet sand, using your hands to form some clumps. Fold in the diced apple.
  • For the cheesecake filling: Stir together the granulated sugar, cornstarch and salt in a small bowl. Pulse together the cream cheese and sour cream in a food processor until smooth. With the processor running, add the sugar mixture 1/2 cup at a time until the mixture is smooth. Add the eggs and yolk one at a time, pulsing until well combined, then add the vanilla, scraping down the sides of the processor and giving it another pulse to make sure everything is incorporated. Pour the cheesecake filling over the top of the graham cracker crust.
  • Sprinkle the crumb topping over the filling. Bake the cheesecake until it is mostly set but still has a bit of a jiggle in the center, 60 to 70 minutes. Turn off the oven and leave the oven door slightly open for 1 hour. Remove the cheesecake from the oven and allow to cool to room temperature, about another hour, then refrigerate for 1 hour more. Run a paring knife around the outside before unmolding and slicing. Serve drizzled with the caramel sauce.

Apple Strudel Cheesecake recipes are a wonderful blend of two classic desserts. Apple strudels are a traditional Viennese pastry made from layered pastry dough and apple filling. On the other hand, cheesecake is a creamy dessert made with cream cheese, sugar, and a base of graham cracker crust. Combining apples and cheesecake creates a unique flavor that is both tangy and sweet.

Ingredients

Some of the basic ingredients required to prepare apple strudel cheesecake include the following:

For the base
  • Graham crackers
  • Melted butter
  • Sugar
For the filling
  • Cream cheese
  • Sugar
  • Vanilla extract
  • Lemon juice
  • Sour cream
  • Eggs
  • Apples
  • Cinnamon
  • Nutmeg
  • All-purpose flour

Preparation

The first step in preparing apple strudel cheesecake is to preheat the oven to 350 degrees F.

For the crust:
  • Crush the graham crackers to form fine crumbs.
  • Mix the graham cracker crumbs, melted butter, and sugar in a bowl.
  • Press the mixture onto the bottom of a greased 9-inch springform pan.
  • Bake the crust for about 10 minutes until it is lightly golden, then remove it from the oven.
For the filling:
  • Beat the cream cheese and sugar in a large bowl until smooth.
  • Add the vanilla extract, lemon juice, and sour cream, then beat again.
  • Add the eggs one at a time and beat until they are fully incorporated into the mixture.
  • In a separate bowl, mix the diced apples, cinnamon, nutmeg, and flour. Then add this mixture to the cream cheese mixture and stir well.
  • Pour the combined mixture over the crust in the springform pan.
  • Bake for 60 minutes. After that, turn off the oven and let the cheesecake sit inside for another 30 minutes, then remove.
  • Allow the cheesecake to cool completely before serving.

Variations

The recipe for apple strudel cheesecake can be varied in many ways. Here are some examples:

  • Instead of using a graham cracker crust, you can use a traditional pastry crust.
  • You can add chopped pecans or walnuts to the cheesecake mixture.
  • To make it extra indulgent, you can top the cheesecake with whipped cream or caramel sauce.

Conclusion

Apple strudel cheesecake is a heavenly dessert that combines the best of both worlds. The creamy filling adds richness, while the apple filling provides a natural sweetness and a punch of flavor. This dessert is perfect for serving at fall gatherings or winter holidays. With a little bit of fuss and care, you can prepare a perfect cheesecake that will impress your family and friends.

Apple strudel cheesecake is a decadent dessert that combines the best of two delicious worlds; apple strudel and cheesecake. The dessert is a crowd-pleaser and perfect for any occasion. However, making the perfect apple strudel cheesecake can be quite challenging, especially if you are a beginner. In this article, we provide valuable tips to follow when making an apple strudel cheesecake.

1. Use the right ingredients

Using the right ingredients is essential when making apple strudel cheesecake. To make a perfect apple strudel cheesecake, you need cream cheese, sugar, sour cream, butter, apples, cinnamon, vanilla extract, and lemon juice. Use high-quality ingredients that are fresh and have not expired.

2. Read the recipe carefully

Before you start making the apple strudel cheesecake, read the recipe carefully to make sure you understand all the steps involved. Get familiar with the ingredient measurements and prepare all the ingredients in advance. It is also advisable to preheat the oven before you start making the cheesecake.

3. Press the Crust Firmly

The crust of the apple strudel cheesecake is one of the crucial elements. It is the foundation of the dessert, so make sure you press the crust firmly. You can use a flat-bottomed glass to press the crust against the sides of the pan to ensure it is even.

4. Chill the Crust

Chilling the crust before you add the cheesecake filling is essential. It helps the crust maintain its shape and prevents it from crumbling when you cut the cheesecake. Additionally, it helps the crust set and bake evenly.

5. Use a Water Bath

To prevent the cheesecake from cracking, use a water bath when baking. A water bath ensures the cheesecake bakes evenly, and the moisture in the oven prevents the cheesecake from drying out, leading to cracks.

6. Don't Overmix the Filling

When making the cheesecake filling, it is essential not to overmix the ingredients. Overmixing can incorporate air into the batter, leading to cracks when baking. Mix the ingredients till they are just blended, and the batter is smooth.

7. Add Flavor Enhancers

To make the apple strudel cheesecake even more delicious, add flavor enhancers like apple pie spice or nutmeg. It adds depth and complexity to the dessert, making it more flavorful.

8. Add Lemon Juice to the Apples

Adding lemon juice to the apples before incorporating them into the cheesecake helps prevent them from turning brown. It also adds tanginess to the apples, making them more flavorful.

9. Bake Until the Center is Just Set

Bake the apple strudel cheesecake until the center is just set. Overbaking the cheesecake can lead to dryness and cracks. It is better to take the cheesecake out of the oven when the center is slightly jiggly as it will continue to cook and set as it cools.

10. Cool Overnight

After baking, let the cheesecake cool down to room temperature before chilling it in the refrigerator. Once chilled, let the cheesecake cool overnight in the refrigerator to set completely. Cutting the cheesecake prematurely can lead to the dessert falling apart.

Conclusion

Making an apple strudel cheesecake can be challenging, but following the above tips can help ensure you get the perfect dessert every time. Remember to use quality ingredients, read the recipe thoroughly, press the crust firmly, and use a water bath when baking. Do not overmix the filling, add flavor enhancers, and bake until the center is set. Chill the cheesecake overnight to set it completely, and enjoy a slice of delicious apple strudel cheesecake.
