Time 46m

Yield 6 servings

Number Of Ingredients 13

1 cup all-purpose flour
2 tablespoons granulated or superfine sugar
1/4 teaspoon kosher salt
1/4 pound (1 stick) very cold unsalted butter, diced
2 tablespoons ice water
1 1/2 pounds McIntosh, Macoun, or Empire apples (3 large)
1/4 teaspoon grated orange zest
1/4 cup flour
1/4 cup granulated or superfine sugar
1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground allspice
4 tablespoons (1/2 stick) cold unsalted butter, diced

Steps:

  • For the pastry, place the flour, sugar, and salt in the bowl of a food processor fitted with a steel blade. Pulse a few times to combine. Add the butter and pulse 12 to 15 times, or until the butter is the size of peas. With the motor running, add the ice water all at once through the feed tube. Keep hitting the pulse button to combine, but stop the machine just before the dough becomes a solid mass. Turn the dough onto a well-floured board and form into a disk. Wrap with plastic and refrigerate for at least 1 hour.
  • Preheat the oven to 450 degrees F.
  • Flour a rolling pin and roll the pastry into an 11-inch circle on a lightly floured surface. Transfer it to a baking sheet.
  • For the filling, peel, core, and cut the apples into 8ths. Cut each wedge into 3 chunks. Toss the chunks with the orange zest. Cover the tart dough with the apple chunks leaving a 1 1/2-inch border.
  • Combine the flour, sugar, salt, cinnamon, and allspice in the bowl of a food processor fitted with a steel blade. Add the butter and pulse until the mixture is crumbly. Pour into a bowl and rub it with your fingers until it starts holding together. Sprinkle evenly on the apples. Gently fold the border over the apples to enclose the dough, pleating it to make a circle.
  • Bake the crostata for 20 to 25 minutes, until the crust is golden and the apples are tender. Allow to cool. Serve warm or at room temperature.

Time 2h5m

Yield 8 servings

Number Of Ingredients 11

1 1/2 cups all-purpose flour, plus more for the work surface
2 tablespoons sugar
1/2 teaspoon salt
10 tablespoons (1 1/4 sticks) unsalted butter, chilled, cut into 1/2-inch pieces
3 tablespoons ice water
2 small Golden Delicious apples, peeled, halved, cored and cut into 1/8-inch-thick slices
1 Pippin apple, peeled, halved, cored and cut into 1/8-inch-thick slices
1/4 cup plus 1 tablespoon sugar
1 teaspoon fresh lemon juice
1 large egg white beaten with 1 tablespoon of water (for egg wash)
2 tablespoons sliced almonds, toasted

Steps:

  • Mix the flour, sugar and salt in a food processor. Add the butter. Pulse until the mixture resembles a coarse meal. Add the ice water and pulse until moist clumps form. Gather the dough into a ball; flatten into a disk. (If the dough still crumbles and does not form into a ball, add another tablespoon of ice water.) Wrap the dough in plastic and refrigerate until firm, about 1 hour.
  • Position the rack in the center of the oven and preheat the oven to 400 degrees F.
  • Combine the apples, 1/4 cup of the sugar and lemon juice in large bowl; toss gently to blend. Set aside for 10 minutes.
  • Meanwhile, dust a large sheet of parchment paper with flour and roll out the dough on the paper to an 11-inch round. Transfer the dough and parchment paper to a large heavy baking sheet. Spoon the apple mixture over the dough, leaving a 2-inch border. Fold the dough border over the filling to form an 8-inch round, leaving the apples exposed in the center. Pleat loosely and pinch the dough to seal any cracks. Brush the crust with the egg wash and sprinkle with the remaining 1 tablespoon of sugar.
  • Bake the crostata until the crust is golden and the apples are tender, about 40 minutes. Transfer the baking sheet to a rack; cool for 10 minutes. Slide a metal spatula under the crust to free the crostata from the parchment. Cool the crostata to lukewarm. Sprinkle with the almonds and serve.

Categories     dessert

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 17

5 medium apples, peeled, cored and sliced into 1/8-inch-thick slices (about 4 cups)
1/2 cup plus 3 tablespoons lightly packed dark brown sugar
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
2 teaspoons ground cinnamon
1/4 cup old-fashioned rolled oats
3 tablespoons unsalted butter, melted
2 tablespoons all-purpose flour
1/4 teaspoon kosher salt
One 9-inch piecrust, store-bought or homemade, such as Butter Pie Crust, rolled to an 11- to 12-inch diameter, recipe follows
1 egg, lightly beaten
1 tablespoon raw (turbinado) sugar
1 3/4 cups all-purpose flour, plus more for dusting
1/2 teaspoon salt
2 tablespoons sugar
12 tablespoons (1 1/2 sticks) unsalted butter, diced and chilled
4 teaspoons apple cider vinegar or white vinegar

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, combine the apples with 1/2 cup of the brown sugar, the cornstarch, lemon juice and cinnamon. In another small bowl, combine the remaining 3 tablespoons brown sugar, the oats, butter, flour and salt.
  • Place the piecrust on the prepared baking sheet. Spoon the apple mixture in the middle of the pie, leaving about a 1-inch border. Fold the crust edges over the filling, pleating occasionally. Spoon the oat mixture over the apples. Brush the crust with the egg and sprinkle with the raw sugar. Bake until the crust is golden brown and the apples are tender, 40 to 45 minutes.
  • Pulse the flour, salt and sugar in a food processor. Add about one-third of the butter; process until the butter is combined. Pulse in the remaining butter in 5 or 6 pulses to form coarse crumbs. Add the vinegar; pulse quickly a few times while adding 1/3 cup ice water. Squeeze some dough between your fingers. It should just hold its shape; if it's still crumbly, quickly pulse in more ice water by the tablespoonful. (Do not overwork the dough.)
  • Turn the dough out onto a large piece of plastic wrap. Wrap the dough, then press and flatten into a thin round. Refrigerate 1 hour.
  • Roll out the dough into an 11-to-12-inch round, about 1/8 inch thick, on a lightly floured surface. Center over a 9-inch pie plate. Fold in the edges and crimp as desired. Refrigerate at least 30 minutes before using.

APPLE CRUMB CROSTATA

Apple Crumb Crostata image

When I saw my mother making her apple turnover, I knew company was coming. I also knew the dough scraps would be my treat. She'd roll them in sugar and cinnamon, bake them and we'd enjoy the flaky, light, buttery morsels together with a cold glass of milk. My mom's specialty was that apple turnover. Mine, apple crostata. I love its organic shape, and fact that it doesn't require a dish or pie pan. And because the crostata is baked directly on a sheet pan, it retains its flakiness better than a pie.

Time 2h

Yield 8 to 12 servings

Number Of Ingredients 19

1 1/4 cups all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, chilled and cut into small pieces
1/3 cup ice cold water, more as needed
1 egg, beaten
Raw sugar, for garnish
6 to 8 Granny Smith or other tart apples, peeled and cut into 16 slices each (about 6 cups total)
1/4 cup brown sugar
1 teaspoon cornstarch
1/4 teaspoon ground cinnamon
1/4 teaspoon lemon zest
1/4 teaspoon vanilla extract
1/4 cup granulated sugar
1 1/2 cups all-purpose flour
1/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/2 cup (1 stick) unsalted butter, melted and cooled to room temperature
Bacon toffee, for serving (optional)

Steps:

  • Make the crust: Combine flour, sugar, and salt in a food processor and blend for 5 seconds. Add butter, pulsing, until mixture resembles small peas. Add ice water and continue to pulse until mixture comes together in moist clumps; if mixture is too dry add a bit more water a tablespoon at a time. Gather dough into a ball, flatten into a disc, wrap in plastic and chill for at least 1 hour or freeze for up to a month.
  • Make the filling: In a large bowl toss together sliced apples, brown sugar, cornstarch, cinnamon, zest and vanilla. Set aside.
  • Make the crumble: In a medium bowl, mix together granulated sugar, flour, brown sugar, and cinnamon. Drizzle in melted butter and, using a fork, stir until mixture is crumbly and all the flour is incorporated; the crumbs should be smaller than 1 inch.
  • Heat oven to 375 degrees and line a baking sheet with parchment paper. Remove dough from refrigerator and let sit at room temperature for 10 to 15 minutes. On a lightly floured surface, roll the dough into a 14-inch circle. Transfer to baking sheet and chill until firm, about 15 minutes.
  • Remove baking sheet from refrigerator and let soften for 1 to 2 minutes. Arrange filling evenly in the center of the dough, leaving a 4-inch border all around; reserve the juices. Brush exposed dough border with beaten egg and fold edge in up over fruit, making pleats every 2 inches. Pour remaining juices over exposed fruit, brush the folded outer edge with beaten egg, and sprinkle with raw sugar. Cover exposed fruit with about 1 cup crumble.
  • Bake crostata until crust is golden brown and filling is bubbling, about 40 to 50 minutes. Remove and let cool before serving. Serve with bacon toffee sauce, if desired.

AMAZING APPLE CROSTATA

Amazing Apple Crostata image

There's an Italian restaurant famous for their family-style eating. You'd think something as simple as apple pie wouldn't be as decadent or exotic as this, but you would be very, very wrong. I'm not a dessert lover but I took one of these home and ate it even after it was all soggy from melted ice cream and savored every morsel. There are no words for how good this is. This crust is to die for!

The Perfect Apple Streusel Crostata

Creating the perfect apple streusel crostata is easier than you might think. Start with a homemade pie crust that's light, flaky, and easy to work with. You'll need all-purpose flour, salt, sugar, cold butter, and ice water to create your crust. Combine the ingredients in a food processor, and then chill the dough for at least 30 minutes before rolling it out. Once your pie crust is chilled, roll it out into a large, thin circle. Transfer the crust onto a parchment-lined baking sheet, and then add your apple filling. You can create your apple filling by combining sliced apples, cinnamon, nutmeg, sugar, and a bit of lemon juice in a bowl. Spread the filling over the crust, leaving a bit of space along the edges. To make your delicious streusel topping, combine flour, brown sugar, cinnamon, salt, and melted butter in a bowl. Mix the ingredients together until they form a crumbly, streusel-like texture. Sprinkle the streusel topping over the apple filling, and then fold the edges of the pie crust over the filling. Bake your crostata in a preheated oven for about 30 to 40 minutes, or until the crust is golden brown and the filling is bubbly. Allow your apple streusel crostata to cool for 10 to 15 minutes before serving it with a scoop of vanilla ice cream or a dollop of freshly whipped cream.

Apple streusel crostata is a delicious and easy-to-make dessert that combines the sweetness of apple filling with the crunchiness of streusel topping. A crostata is an Italian dessert that is typically made with a pastry crust and a fruit filling. When combined with a streusel topping, it adds a nice texture and subtle sweetness to the dessert. In this article, we will provide useful tips for making apple streusel crostata recipes that will help you create a delicious and impressive dessert that your friends and family will love.

Tip 1: Use fresh and quality ingredients

The key to making a delicious apple streusel crostata is using fresh and high-quality ingredients. For the apple filling, choose firm, tart apples like Granny Smith that hold their shape when baked. Make sure they are ripe and free from any bruises or blemishes. For the streusel topping, use fresh flour, brown sugar, and unsalted butter. These ingredients will ensure that your crostata has the best flavor and texture possible.

Tip 2: Keep the pastry dough cold

The pastry dough is the foundation of any crostata recipe, including apple streusel crostata. It should be flaky and tender, not tough and dense. To achieve this, make sure to keep the dough cold throughout the process. The butter in the dough should be cold, and the dough itself should be chilled before baking. This will prevent the butter from melting into the dough, resulting in a tough crust.

Tip 3: Pre-cook the apple filling

To prevent the apple filling from becoming watery, it is essential to cook it before placing it into the pastry shell. This step will also help to concentrate the flavors and soften the apples. Sauté the apple pieces in butter and sugar until they are tender and slightly browned. Allow the mixture to cool to room temperature before adding it to the pastry shell. This step will also help to keep the pastry crust crisp.

Tip 4: Use a shallow pan

When making apple streusel crostata, it is important to use a shallow pan. A shallow pan will help to promote even baking and prevent the filling from becoming too soggy. A deeper pan will trap the steam and make the filling mushy. Be sure to use a pan that is at least 1 inch deep, but no deeper than 2 inches.

Tip 5: Make a ruffled edge

A ruffled edge is a great way to make your apple streusel crostata look more attractive and appetizing. To make a ruffled edge, use your fingers to create a series of small indentations along the edge of the dough. Then, using your thumb and forefinger, pinch the dough to make a ruffled appearance. This will not only make the crostata look more pleasing but will also help to seal the edges and keep the filling inside.

Tip 6: Add texture with streusel topping

The streusel topping is what makes the apple streusel crostata unique and flavorful. To make streusel topping, mix flour, brown sugar, and butter together until they form crumbs. Add cinnamon and chopped nuts if desired. Sprinkle the streusel topping over the top of the apple filling before baking. This will add texture and crunch to the dessert.

Tip 7: Cool completely before serving

After the crostata has finished baking, it is important to let it cool completely before serving. This will allow the filling to set and the streusel topping to become crisp. Serve the crostata at room temperature with a dollop of whipped cream or a scoop of vanilla ice cream. This will make for a delightful and satisfying dessert.
Conclusion
Apple streusel crostata is a delicious dessert that is perfect for any occasion. By following these useful tips, you can create a delicious and impressive dessert that your friends and family will love. Remember to use fresh and high-quality ingredients, keep the pastry dough cold, pre-cook the apple filling, use a shallow pan, make a ruffled edge, add texture with streusel topping, and cool completely before serving. With these tips, your apple streusel crostata will be a hit every time.
