Time 2h30m

Yield 24 cupcakes

Number Of Ingredients 26

3 cups cake flour
1 1/2 cups blue cornmeal
2 1/4 teaspoons baking powder
3/4 teaspoon baking soda
1 1/2 teaspoons salt
1 cup blueberry puree
1 cup buttermilk
9 ounces unsalted butter
2 1/4 cups granulated sugar
5 eggs
5 egg yolks
1 cup granulated sugar
5 ounces blueberry puree
1 ounce lemon juice
1 teaspoon salt
3 ounces cream cheese
1 tablespoon granulated sugar
1 pinch salt
1 cup heavy cream
1 cup bleu cheese crumbles
8 ounces unsalted butter
8 ounces powdered sugar
1/4 teaspoon salt
3 tablespoons blue agave nectar
Large bleu cheese crumbles
Sugar, as needed

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Use a 24 socket cupcake pan and line with paper liners. Set the pan aside.
  • In a medium bowl, whisk together the flour, cornmeal, baking powder, baking soda and salt.
  • In a liquid measure, mix together the blueberry puree and buttermilk.
  • In a large bowl of an electric stand mixer using a paddle attachment, combine the butter and granulated sugar, mixing until blended. Add the eggs and egg yolks and beat on low speed until all the ingredients are smooth and blended.
  • Decrease the speed of the mixer to slow and add one-fourth of the dry ingredients. Mix for 1 minute, scraping the sides of the bowl occasionally. In two separate additions, add the liquid mixture to the batter, beating for 30 seconds after each addition, alternating with the dry ingredients, ending with the dry ingredients. Divide the batter evenly into the prepared cupcake liners and bake on the center rack until a cake tester inserted into the center of each cake comes out clean, 20 to 25 minutes. Cool the cakes in the pans for 10 minutes. Remove from the pans and cool the cakes completely on wire racks, about 30 minutes.
  • For the blueberry caramel: Heat together the sugar and 1/4 cup water, cooking until a medium caramel stage. Slowly add the blueberry puree, lemon juice and salt. Continue to cook together until smooth.
  • For the blue Devonshire cream: Mix together the cream cheese with the granulated sugar and salt with the paddle attachment in an electric mixer. Once thoroughly combined, slowly add the heavy cream. Continue to mix until evenly distributed and fluffy. Fold in the bleu cheese crumbles.
  • For the blue agave icing: Mix together the butter, powdered sugar and salt with the paddle attachment in an electric mixer. Once thoroughly combined, slowly add the blue agave nectar. Continue to mix until evenly distributed and smooth.
  • For the bleu cheese brulee: Place the bleu cheese crumbles into the freezer for about 10 minutes. Remove from the freezer, and, working on a metal surface, generously cover with sugar. Using a blow torch, quickly brulee the tops of each bleu cheese crumble. Allow to come to room temperature.
  • To assemble: Core each cupcake and drizzle a teaspoon of the blueberry caramel into the core. Generously fill each cupcake with the bleu Devonshire cream. Using a round tip and pastry bag, ice each cupcake with blue agave icing, encasing the generous amount of Devonshire cream, creating a combination of shells on top. Use blueberry caramel as a drizzle on top of cupcakes and place a bleu cheese brulee as garnish on top.

SPICED APPLE CUPCAKES

Spiced apple cupcakes image

Make these extra special spiced apple cupcakes as a gift for family and friends at Christmastime. Kids will love getting involved in the decorating

Provided by Liberty Mendez

Categories     Dessert

Time 1h5m

Yield Makes 12

Number Of Ingredients 16

125g butter, softened
100g caster sugar
50g brown sugar
2 eggs
200g self-raising flour
1 tsp baking powder
150g apples, peeled, cored and grated (prepared weight)
2 tsp mixed spice
1 tsp ground ginger
200g butter, softened
400g icing sugar
1 tsp vanilla bean paste
green and brown fondant
2 tbsp icing sugar for dusting
red and green sanding sugar (find online or in specialist shops)
12 paper cupcake cases, 6 red and 6 green

Steps:

  • First, make the decorations. Roll out the green fondant on a surface dusted with the sugar to a ½cm thickness. Cut out 12 small 'leaves' using a cutter or knife. Set aside on some baking parchment. Roll the brown fondant into 12 x 1cm 'stalks'. Set aside with the leaves.
  • Heat the oven to 180C/160C fan/gas 4. Line six holes of a 12-hole cupcake tin with red cases, and the other six with green. For the cake batter, beat the butter and both sugars with an electric whisk until light and fluffy. Slowly mix in the eggs, then fold in the flour, baking powder, grated apple and spices until fully incorporated.
  • Fill the cases three-quarters full and bake for 30-35 mins, or until golden and a skewer inserted into the middle comes out clean. Leave to cool completely in the tin. Meanwhile, make the icing. Beat the butter until light and creamy, then add the sugar and vanilla, and beat for 5 mins more until fluffy and pale.
  • Spoon the icing into a piping bag fitted with a large round nozzle. Working from the outside towards the centre, pipe the icing in a swirl over the cupcakes, applying a good amount of pressure to the bag. Use a small palette knife to smooth the icing into neat domes, then chill the cupcakes for 30 mins to firm up.
  • Tip the red and green sanding sugars into separate bowls. Dip the tops of the cupcakes with the red cases into the red sugar, and those with green cases into the green sugar, turning to fully coat the icing.
  • Make little indentations in the top of the icing for the fondant stalks, and add the leaves around them.

Apple spice cupcakes with walnuts and blue cheese is a delicious and unique cupcake recipe that combines sweet and savory flavors. These cupcakes are perfect for fall and winter seasons when apples are in season, and the weather is chilly. If you are planning to make apple spice cupcakes with walnuts and blue cheese, there are some valuable tips you should know to ensure that your cupcakes turn out perfectly.

Tips for Making Apple Spice Cupcakes with Walnuts and Blue Cheese

1. Use Fresh Ingredients
The key to making delicious apple spice cupcakes with walnuts and blue cheese is to use fresh ingredients. Use fresh apples, high-quality walnuts, and blue cheese to give your cupcakes the best flavor. Using fresh ingredients will ensure that your cupcakes are packed with flavor, and your guests will keep asking for more.
2. Choose the Right Apples
When making apple spice cupcakes with walnuts and blue cheese, it is crucial to select the right type of apples. Apples with a firm texture, such as Granny Smith, Honeycrisp, or Braeburn, are perfect for baking. They hold their shape well and won't turn into the mushy texture during baking.
3. Toast Walnuts
Toasting Walnuts enhances their flavor and provides a crunchier texture to your cupcakes. Before adding walnuts to your cupcake batter, be sure to toast them first. You can toast walnuts in the oven or in a pan on the stove. Spread the walnuts in a single layer evenly and bake for about 5-7 minutes until nicely browned.
4. Choose the Right Type of Cheese
When it comes to choosing blue cheese for your apple spice cupcakes with walnuts, it is essential to select the right type of cheese. Use a mild blue cheese such as gorgonzola, which complements the sweet flavor of the apples in the cupcake. If you prefer a stronger blue cheese flavor, use Roquefort or Stilton.
5. Cream Cheese Frosting
Cream cheese frosting pairs well with apple spice cupcakes with walnuts and blue cheese. The tangy flavor of cream cheese complements the sweetness of the cupcake, and adds a creamy texture that perfectly balances the crunchiness of toasted walnuts. Be sure to beat the cream cheese and butter at room temperature for the smoothest, fluffiest frosting.
6. Spices
Cinnamon is the key spice in apple spice cupcakes, but you can also add nutmeg, allspice, and ginger to give the cupcakes a complex flavor profile. Use a mixture of spices for a well-rounded flavor, and don't forget to measure them correctly.
7. Texture
The texture of apple spice cupcakes with walnuts and blue cheese is important to consider. The cupcakes should have a tender crumb, with a marked crunchiness from the toasted walnuts. To achieve this, be sure to mix the batter properly and not overwork it. Overmixing will make your cupcakes tough and dry.
8. Baking Time
Baking time is crucial when making apple spice cupcakes with walnuts and blue cheese. The cupcakes should be baked for about 20 minutes at 350°F or until the toothpick comes out clean. Overbaking or underbaking can ruin the cupcakes, so be sure to check the cupcakes often and remove them from the oven at the right time.
9. Decoration
The way you decorate your apple spice cupcakes is also important. A simple dollop of cream cheese frosting on top of the cupcakes, finished with a sprinkling of walnuts, is the perfect way to decorate your cupcakes. You can also add a drizzle of caramel sauce or a dusting of powdered sugar to make them look more festive.

Conclusion

Making apple spice cupcakes with walnuts and blue cheese is easy when you know what you are doing. By applying the tips mentioned above, you can achieve the perfect balance of flavors and textures, resulting in a delicious, mouthwatering treat that your family and friends will love. So, go ahead and try this recipe today, and enjoy the goodness of fall and winter in every bite!
