Apple sausage puffs are a delicious combination of savory sausage, sweet apples, and flaky puff pastry. These puff pastry bites are perfect for a quick breakfast, an appetizer for a party, or a snack any time of day. This recipe is a tasty way to use up leftover sausage and apples and can be customized to suit different tastes and dietary restrictions.

The Ingredients

To make apple sausage puffs, you'll need the following ingredients:
Puff Pastry
Puff pastry is a crispy, flaky pastry that's perfect for making appetizers and desserts. It's made by layering butter and dough, which gives the pastry its light, airy texture. You can find puff pastry in the freezer section of most grocery stores.
Sausage
Sausage is the perfect protein for this recipe. You can use bulk sausage or remove the casing from sausage links. Choose a mild or spicy sausage, depending on your preference.
Apples
Apples add a sweet and slightly tart flavor to the sausage puffs. Use a firm apple, such as Granny Smith, for the best results.
Seasonings
To add flavor to the sausage mixture, use a combination of spices like thyme, salt, pepper, and nutmeg.
Egg Wash
Egg wash is used to give the pastry a glossy, golden brown finish. To make egg wash, whisk together one egg and a tablespoon of water.

The Process

Making apple sausage puffs is a simple process that requires minimal prep time. Here's how it's done:
Step 1: Prepare the Filling
Start by preheating your oven to 400°F. In a large skillet, cook the sausage over medium-high heat, breaking it into small pieces with a wooden spoon. Once the sausage is cooked through, remove it from the skillet and set it aside. In the same skillet, add diced apples, salt, pepper, thyme, and nutmeg. Cook until the apples are tender, stirring occasionally. Once the apples are cooked, add the cooked sausage and stir to combine.
Step 2: Prepare the Puff Pastry
Unroll the puff pastry and cut it into squares. Place a heaping tablespoon of the sausage and apple mixture in the center of each square. Fold the corners of the pastry over the filling and seal the edges with a fork.
Step 3: Brush with Egg Wash
Brush the tops of the puff pastry squares with egg wash. This will give them a nice golden brown finish.
Step 4: Bake
Place the prepared sausage puffs on a baking sheet lined with parchment paper. Bake for 15-18 minutes or until the puff pastry is golden brown and crispy.

Variations

There are plenty of variations you can make to this recipe to suit your tastes. Here are a few ideas:
Vegetarian
If you're vegetarian or looking to reduce your meat intake, you can easily swap out the sausage for a vegetarian protein source such as tofu or seitan.

2. Use high-quality sausage
The sausage is the star of the apple sausage puffs show, so it is crucial to choose high-quality sausage. Look for a sausage that has a good balance of meat and fat, as the fat adds extra flavor and moisture to the puffs.
3. Chill the dough

8. Experiment with different fillings
While apple sausage is a classic filling for this recipe, don't be afraid to experiment with different ingredients.
