Provided by Food Network Kitchen

Categories     dessert

Time 1h15m

Yield 12 to 15 sandwiches

Number Of Ingredients 12

1 tablespoon fresh lemon juice (from 1/2 lemon)
1/2 teaspoon apple pie spice
2 Golden Delicious, Gala or Fuji apples (about 1 pound), peeled, cored and cut into 1/4-inch dice
1 cup sugar
14 tablespoons (1 3/4 sticks) unsalted butter, at room temperature
1 teaspoon cornstarch
1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon fine salt
1 large egg
1/4 teaspoon vanilla extract
1 pint vanilla ice cream, slightly softened

Steps:

  • Toss together the lemon juice, apple pie spice, apples and 1/3 cup of the sugar in a medium bowl.
  • Melt 2 tablespoons of the butter over high heat in a medium skillet. Add the apple mixture and stir to coat with the butter. Lower the heat to medium, cover and cook, stirring occasionally, until the apples are tender and translucent, about 20 minutes; if the mixture becomes too dry and begins to brown before that, add 1/4 cup water and continue to cook.
  • Mix the cornstarch with 1 teaspoon water in a small bowl and pour into the apple mixture. Bring the mixture to a boil to activate the starch and cook until the thick and bubbly, about 1 minute more. Transfer to a bowl and reserve.
  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Whisk the flour, baking powder and salt together in a bowl. In another bowl, whip the remaining 12 tablespoons butter and 2/3 cup sugar with a hand-held mixer until fluffy, about 5 minutes. Beat in the egg until just combined, then mix in the vanilla. Slowly beat in the dry ingredients in 2 additions, mixing just until incorporated.
  • Scoop 1 tablespoon of the dough for each cookie and roll into a ball. Place about 2 inches apart on the prepared baking sheets and press down into flat discs about 1/4 inch thick. Bake the cookies until just set on top but still pale, about 15 minutes. Cool the cookies on the baking sheets.
  • When the cookies are cool, flip them over. On half of the cookies, spread each with 1 teaspoon apple filling. On the other half of the cookies, spread each with 1 tablespoon vanilla ice cream. Sandwich each apple filling-topped cookie with an ice cream-topped cookie and press together gently.
  • Serve immediately or store in the freezer for up to 3 months. Let soften 5 minutes before serving from frozen.

These recipes are made by slicing up apples and using them as bread, filling them with a variety of sweet or savory ingredients. Apple sandwich recipes are not only delicious but also healthy, making them a perfect option for breakfast, lunch, or snack time.

Why Choose Apple Sandwiches?

Apples are packed with essential nutrients that promote good health. They are rich in fiber, which helps to keep the digestive system healthy and prevent constipation. Additionally, apples contain antioxidants that help to boost the body’s immune system and reduce the risk of chronic diseases.

Apple sandwiches are an excellent alternative to traditional bread-based sandwiches. They are lighter and less starchy, making them a healthier and more nutritious option. They can be customized to a wide range of flavors, so they offer plenty of options for people following specific diets, such as vegan or gluten-free diets.

How to Make Apple Sandwiches

The process of making apple sandwiches is simple and straightforward. All you need is a sharp knife or a mandoline cutter to slice the apples thinly. Once you have the apple slices, you can prepare the filling of your choice and assemble the sandwich.

Some popular filling options for sweet apple sandwiches include peanut butter, honey, cinnamon, and raisins. For savory apple sandwiches, you can use cheese, ham, turkey, avocado, or hummus as a filling. You can also add some extra crunch to your apple sandwich by topping it with some nuts or seeds.

Tips for Making Perfect Apple Sandwiches

  • Choose apples that are firm and not overripe – this will make it easier to slice them without them falling apart.
  • Slice the apples as evenly as possible – this will ensure that the sandwich is balanced and that all the ingredients are distributed evenly.
  • Use creamy or wet filling instead of dry fillings – this will help the sandwich to stay together and not fall apart.
  • Wrap the apple sandwiches tightly – this will help to keep the apple slices fresh and prevent the filling from falling out.

Benefits of Eating Apple Sandwiches

  • Apple sandwiches are a healthy snack option that is low in calories and high in nutrients.
  • They are an excellent source of dietary fiber, which helps to keep the digestive system healthy and prevent constipation.
  • They contain antioxidants that help to reduce the risk of chronic diseases such as heart disease and certain types of cancer.

Try making your own apple sandwich and discover the many ways you can enjoy this versatile fruit.

When it comes to making apple sandwich recipes, there are a few valuable tips that can make the process easier and more delicious. From choosing the right type of bread to selecting the perfect spread, here are some tips to keep in mind when making your next apple sandwich. 1. Choose the right type of bread When making apple sandwiches, it's important to select the right type of bread. A sturdy bread with a tight crumb, such as sourdough or multigrain, will work best. This will help prevent the sandwich from getting too soggy, as the moisture from the apple slices can be absorbed by the bread. Avoid using white bread, as it can become mushy quickly. 2. Slice your apples thinly When it comes to slicing your apples, it's important to slice them thinly. This will ensure that they are evenly distributed throughout the sandwich, and that they don't overpower the other flavors. Use a mandolin to achieve perfectly thin slices, or slice them with a sharp knife. 3. Choose the right type of apple Different types of apples have different flavors and textures, so it's important to choose the right type for your sandwich. Crisp and tart apples, such as Granny Smith or Honeycrisp, work well in savory sandwiches, while sweeter apples, such as Gala or Fuji, are better suited for sweet sandwiches. Whichever type you choose, make sure they are firm and ripe. 4. Add a spread A spread can add flavor and moisture to your apple sandwich. Consider using cream cheese, nut butter, honey, or a flavored jam. Experiment with different combinations to find the perfect spread for your sandwich. 5. Consider adding other ingredients While apples are the star of the show in apple sandwiches, other ingredients can complement their flavor and add texture. Consider adding sliced cheese, roasted turkey, bacon, or arugula. This will make your sandwich more interesting and satisfying. 6. Don't forget the spices Spices can add depth and complexity to your apple sandwich. Consider using cinnamon, nutmeg, ginger, or cardamom. These spices pair well with apples and can make your sandwich even more delicious. 7. Use a panini press or grill To achieve a crispy, golden-brown exterior on your apple sandwich, consider using a panini press or grill. This will also help melt any cheese you may have added. If you don't have a panini press or grill, you can also use a skillet or griddle. 8. Keep it simple While it's tempting to add lots of different ingredients and spices, it's important not to overload your sandwich. Keep it simple and let the flavors of the apples and other ingredients shine through. A few well-chosen ingredients can make a delicious sandwich. 9. Toast your bread first To prevent your sandwich from getting too soggy, consider toasting your bread first. This will create a barrier between the bread and apple slices, keeping the sandwich together and preventing the bread from becoming too moist. 10. Serve immediately Apple sandwiches are best when served immediately, as the bread can become soggy over time. If you need to make your sandwich ahead of time, consider keeping the apple slices and other ingredients separate until you are ready to assemble and serve the sandwich. In conclusion, apple sandwiches can be a fun and delicious way to incorporate this versatile fruit into your meals. By following these valuable tips, you can create a sandwich that is flavorful, satisfying, and easy to make. Whether you prefer savory or sweet flavors, there is an apple sandwich recipe out there for everyone.
