Time 1h50m

Yield 8 serving(s)

Number Of Ingredients 13

2 tart apples, peeled, halved, cored, and sliced about 1/8 inch thick (Granny Smith)
1/2 cup golden raisin
2 tablespoons dark rum
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
12 tablespoons unsalted butter, softened
3/4 cup sugar
3 large eggs
1/2 teaspoon vanilla extract
2 tablespoons milk
1 cup powdered sugar
2 tablespoons dark rum

Steps:

  • Line bottom of a 9-inch springform pan with parchment paper; butter parchment paper and sides of pan.
  • Set a rack in the middle of the oven; preheat oven to 350°.
  • Combine all the filling ingredients in a bowl (glass or stainless); let stand while you prepare the batter.
  • In another bowl, combine the flour, baking powder, and salt; mix well and set aside.
  • In the bowl of a heavy-duty mixer fitted with the paddle attachment, beat the butter and sugar on medium speed for 5 minutes, until light and fluffy.
  • Beat in the eggs one at a time, beating until smooth after each addition.
  • Beat in vanilla; using a rubber spatula, fold in half the flour mixture.
  • Drain the apples in a colander set over a bowl; add the milk to any rum that drains into the bowl and stir the liquids into the batter, then fold in the remaining flour mixture.
  • Spread half the cake batter evenly in the prepared pan; scatter with the sliced apple mixture.
  • Scrape remaining batter onto the filling and smooth out.
  • Slide a foil-lined cookie sheet onto the rack below the middle one to catch any drips.
  • Bake for 55-65 minutes or until cake is risen, firm, and deep golden and the apples are cooked through and tender.
  • Let cake cool in pan for 15 minutes, then loosen the cake by running a sharp paring knife around the inside of the pan, scraping the knife against the pan, not the cake.
  • Remove the sides and slide the cake off the base to a rack to finish cooling.
  • When the cake has cooled completely, invert the cake onto a plate, remove the paper, and invert the cake onto the rack again so it is right side up.
  • Make the glaze: stir together the powdered sugar and rum in a small saucepan; mix well.
  • Place over medium heat until warm and fluid.
  • Drizzle half the glaze over the top of the cake in a series of parallel lines.
  • Rewarm the glaze if necessary and drizzle another series of lines on a diagonal to the first ones.
  • Wait until the glaze dries, then slide the cake onto a platter.
  • Serve with ice cream or whipped cream; this cake is best served on the day it is made.

The Low GI Diet

The glycemic index (GI) is a measure that assesses how quickly a food increases blood sugar levels. Foods with high GI values cause a rapid increase in blood sugar levels, while foods with low GI values result in a slower and steady increase. The low GI diet recommends the consumption of foods with low GI values, helping to prevent or manage health issues such as diabetes, heart disease, and obesity.

Baking a cake is an art, and it is even more challenging when you are trying to make it gluten-free and low GI. However, when it comes to Apple Rum Raisin Cake, these challenges can be overcome easily. This article will provide you with valuable tips on how to make a gluten-free low GI Apple Rum Raisin Cake. Tip #1: Choose The Right Flour: The key to making a gluten-free cake is to choose the right flour. There are a variety of gluten-free flour options available in the market, such as rice flour, almond flour, coconut flour, oat flour, and many more. Each flour has its own unique texture and flavor. So when selecting flour, pick the one that pairs well with the recipe and desired texture. Additionally, using flours with a lower GI will help maintain stable blood sugar levels, making them a great option for a low GI cake. Tip #2: Use Fresh Apples: Apples are the centerpiece of the Apple Rum Raisin Cake, and using fresh apples can add a lot of flavor and texture to the cake. When using fresh apples, it is important to peel, core, and chop the apples into small pieces for the best results. Additionally, you can use a variety of apples, such as Granny Smith, Honeycrisp, or Red Delicious, depending on your personal preference. Tip #3: Soak Raisins In Rum: The rum-soaked raisins are what make this cake unique and flavorful. Soaking the raisins in rum not only adds flavor but also makes the raisins tender and adds a bit of moisture to the cake. It is important to soak the raisins for at least an hour before adding them to the batter. Tip #4: Use Low-GI Sweetener: Instead of using regular sugar, which is high in GI, try using a low GI sweetener like honey, maple syrup, or agave nectar. This will help to keep the cake's GI low, which is great for people who are watching their blood sugar levels. Tip #5: Add Flavor With Spices: To give the cake a depth of flavor, add spices like cinnamon, nutmeg, and allspice. These spices also add a warm aroma to the cake, making it more inviting. Tip #6: Don't Overmix The Batter: When it comes to baking any cake, overmixing the batter can be a big mistake. Overmixing the batter can cause the cake to be tough and dense. So be gentle when mixing the batter, and mix it only until everything is combined. Tip #7: Use A Bundt Pan: Using a bundt pan can make the Apple Rum Raisin Cake look more impressive and beautiful. Additionally, it can help to distribute the heat evenly, resulting in a moist and tender cake. Tip #8: Let It Cool Completely: Once the cake is done, let it cool completely before you start slicing it. This will ensure that the cake has set completely, and slicing it too soon can cause it to fall apart. Tip #9: Add A Glaze: To make the cake even more appealing, add a glaze on top. A simple glaze made of rum, icing sugar, and butter can add an extra dimension of flavor to the cake. Tip #10: Serve With Whipped Cream: The final touch to Apple Rum Raisin Cake is to serve it with a dollop of whipped cream. The whipped cream adds a creamy texture to the cake and pairs perfectly with the sweet, fruity flavors of the cake. Conclusion: Making a gluten-free low GI Apple Rum Raisin Cake may seem daunting at first, but with the right tips and tricks, it can be easily accomplished. From choosing the right flour, using fresh apples, and soaking raisins in rum to adding flavor with spices and not overmixing the batter, each step is important in creating a delicious cake that everyone can enjoy. So, follow these tips, and you will be on your way to making a perfect Apple Rum Raisin Cake.
