KELLY'S APPLE-STRAWBERRY-RHUBARB PIE

Kelly's Apple-Strawberry-Rhubarb Pie image

I thought I had lost my recipe forever, when while packing to move, I FOUND IT!!!!!!! I was THRILLED!!!!! This is a very SWEET pie, gotta warn ya!!! LOL!!! If you prefer a sweet-tart concoction, you'll want to decrease the amount of sugar, but this is the ONLY way I'll even TOUCH rhubarb! Everyone who has tried my pie absolutely loves it, even the ones that SWEAR they won't eat rhubarb!! (This is my very own recipe.) **I once tried making it with frozen rhubarb and it did NOT work! It came out runny, so I do not recommend using anything but fresh rhubarb! (I don't think frozen strawberries would work, either.Just use fresh only.)Hope you enjoy my pie!!! Really good with vanilla ice cream, too! ;)

Provided by Wildflour

Categories     Pie

Time 1h

Yield 1 pie, 6-8 serving(s)

Number Of Ingredients 14

1 cup sugar
1 cup light brown sugar
1/3 cup flour, plus
1 tablespoon flour
1 teaspoon cinnamon
3 cups fresh rhubarb, cut lengthwise then sliced into 1/2-inch pieces
3 cups fresh strawberries, halved except the little ones
3 granny smith apples, peeled and grated
1 tablespoon lemon juice, for apples
1 teaspoon vanilla
2 tablespoons butter
pastry for double-crust deep dish pie
milk
sugar

Steps:

  • In large mixing bowl, slice strawberries and rhubarb and sprinkle with HALF of the REGULAR (white) sugar, set aside.
  • In medium/small bowl, combine rest of sugars, flour, and cinnamon.
  • In small bowl, grate peeled apples, tossing with lemon juice so they don't turn brown.
  • Pour medium bowl mixture and apple mixture along with vanilla into the large bowl of rhubarb and strawberries and fold well til mixed.
  • Pour mixture into pastry-lined 9" deepdish pie plate.
  • Cut up butter and dot evenly.
  • Cover with second pastry, seal edges well, and flute.
  • Cut slits to vent.
  • Brush top pastry crust with a little milk and sprinkle with sugar.
  • Bake in 375 degree oven for about 50-60 minutes til done. Ovens vary so much that this is the best I can tell ya! *Cover edges with foil if they start to brown too much.
  • ***You may want to set the pie on a foil-lined small cookie sheet to catch any drips if it happens to bubble over a bit. Hot bubbly sugar can create a horrible mess and can really SMOKE! LOL! Best to prevent the fire department coming when the neighbors see smoke coming out the kitchen window! ;).
  • ***If you prefer, you can also use less cinnamon and vanilla -- but we really enjoy a WOW kinda pie ourselves! ;).
  • ENJOY! :).

What is Apple Rhubarb Flummery with Strawberry Syrup Recipes?

Apple rhubarb flummery with strawberry syrup recipes is a delicious dessert that combines the tartness of rhubarb with the sweetness of apples and strawberries. Flummery is a dessert made of sweetened cream, gelatin, and fruit puree or juice that is thickened and molded into a shape. The dish has roots in British cuisine and has been enjoyed since the 17th century.

The recipe involves combining cooked rhubarb and apples with sugar and water and letting the mixture cool to form a puree. Gelatin is then added to thicken the puree, and whipped cream is folded in to give it a light and airy texture. The mixture is then poured into a mold and chilled until it sets.

To make the strawberry syrup, fresh strawberries are cooked with sugar and water until a thick syrup forms. This is then drizzled over the chilled flummery to add an extra level of sweetness and flavor.

The Ingredients

The ingredients needed to make apple rhubarb flummery with strawberry syrup recipes include:

  • 4 cups rhubarb, chopped
  • 2 cups apples, peeled and chopped
  • 1 1/4 cups granulated sugar
  • 1/2 cup water
  • 2 envelopes unflavored gelatin
  • 1/2 cup cold water
  • 2 cups whipping cream, whipped
  • 1 cup fresh strawberries, chopped
  • 1/2 cup granulated sugar
  • 1/2 cup water
The Preparation

  1. In a large saucepan, combine rhubarb, apples, sugar, and 1/2 cup of water. Cook over medium heat until the mixture is soft, stirring occasionally.

  3. In a separate bowl, sprinkle gelatin over 1/2 cup cold water and let it soften for 5 minutes. Then, stir in the hot rhubarb mixture until the gelatin is completely dissolved.
  4. Whip the cream until stiff peaks form, and then fold it into the rhubarb mixture. Pour the mixture into a mold and refrigerate until set.
  5. While the flummery is chilling, make the strawberry syrup by combining chopped strawberries, sugar, and 1/2 cup of water in a small saucepan. Cook over medium heat until a thick syrup forms.
  6. To serve, invert the flummery onto a plate and drizzle with the strawberry syrup.

Tips for making apple rhubarb flummery

1. Choose the right ingredients
The first step to making a great apple rhubarb flummery is to choose the right ingredients. You need fresh rhubarb stalks, apples, sugar, gelatin, and water. Choose fresh and firm apples and rhubarb stalks. For the gelatin, choose a brand that will set perfectly.
2. Wash and chop the fruits
Wash the rhubarb stalks and apples thoroughly. Cut them into small pieces to allow them to cook quickly and evenly. Remove the seeds and cores of the apples to avoid having coarse bits in your flummery.
3. Cook the rhubarb and apples properly
To make sure your apple rhubarb flummery is delicious, it is essential to cook the fruits properly. Place the chopped rhubarb and apples in a saucepan with water and sugar. Cook it over medium heat until the fruits become soft and mushy. Stir the mixture occasionally to avoid having it stick to the bottom of the pot. You can also use a blender or food processor to make the mixture smooth.
4. Use the right amount of gelatin
Using the right amount of gelatin is crucial in making apple rhubarb flummery. You don't want to use too much or too little as the consistency might be affected. Follow the instructions on the gelatin packaging carefully.
5. Allow the flummery to set properly
After you've mixed the fruit mixture and gelatin, allow the mixture to set properly. Refrigerate it for at least 4 hours or until it is firm. This will help attain the perfect consistency.
6. Decorate it nicely
The aesthetics of your apple rhubarb flummery are as important as its taste. You can decorate it with fresh fruits such as strawberries or blueberries or add a dollop of whipped cream on the top. You can also sprinkle some nuts or chocolate chips on it.

Tips for making strawberry syrup

1. Choose sweet and ripe strawberries
The sweetness of your strawberry syrup depends on the quality of strawberries. Choose ripe and sweet ones as they will give your syrup a natural sweetness. Avoid strawberries that are soft, moldy or discolored.
2. Wash the strawberries
Before making your strawberry syrup, make sure to wash the strawberries thoroughly. You don't want any dirt or debris in your syrup. Drain the water properly to avoid having a watery syrup.
3. Cut the strawberries into small pieces
Cut the strawberries into small pieces to ensure that they blend evenly. This allows you to achieve a smooth and velvety consistency.
4. Cook the strawberries properly
Cooking the strawberries properly is essential in creating a perfect strawberry syrup. Add the chopped strawberries in a saucepan with water and sugar. Let it simmer over low to medium heat until the strawberries have broken down and the mixture becomes thick and syrupy. You can use a blender or food processor to make the texture smoother.
5. Strain the syrup
Strain the syrup using a fine-mesh strainer to remove any lumps or bits that may have been left behind. This leaves you with a smooth, velvety syrup.
6. Store the syrup properly
Store the syrup in an airtight container in the refrigerator. It can last for up to 2 weeks.
