APPLE-RASPBERRY CRUMB BARS

Apple-Raspberry Crumb Bars image

Craving both cookies and pie? A classic crumb bar is just what you need! It's got a tender, sweet, cookie base; real fruit filling; and toothsome, oaty crumbs on top. It's more portable than pie and more satisfying than a cookie. What to do when your favorite fruit is out of season? Make your way to your supermarket's frozen fruit aisle. Since frozen fruit has been picked at peak ripeness, it's reliably sweet and delicious and often a better value than fresh.

Time 2h45m

Yield 24 bars

Number Of Ingredients 11

4 small apples, peeled, cored and chopped (about 2 1/2 cups)
2 cups frozen raspberries
1/2 cup granulated sugar
2 teaspoons cornstarch
1 cup (2 sticks) unsalted butter, at room temperature, plus more for the pan
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon kosher salt
1/2 cup packed light-brown or dark-brown sugar
1 large egg
1/2 cup old-fashioned rolled oats

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-inch square baking pan and line it with parchment paper, leaving a 2-inch overhang on two sides. In a large bowl, whisk together the flour, baking powder and salt. In a medium bowl, beat the butter and the brown sugar with an electric mixture on medium speed until fluffy, about 2 minutes. Beat in the egg. Spread about two-thirds of the batter evenly over the bottom of the prepared pan with an offset spatula. Bake the bottom crust until it is golden brown, 24 to 26 minutes. Mix the remaining batter with the oats and set aside.
  • Meanwhile, in a medium saucepan, combine the apples, raspberries and sugar and cook over medium heat, stirring occasionally, until the mixture is bubbling and the fruit has broken down, 5 to 6 minutes. In a small bowl, mix about 3 tablespoons of the fruit mixture with the cornstarch until smooth. Add the cornstarch mixture to the fruit and simmer for another 2 to 3 minutes. Remove the jam from the heat and let cool slightly.
  • Top the bottom crust with the fruit and spread it out evenly. Top the fruit with the oat crumb mixture, squeezing it to make some larger clumps. Bake until the top is golden brown, 28 to 32 minutes. Transfer the pan to a rack to cool completely. Using the parchment, lift out the entire bar mixture and place it on a cutting board. Cut into squares.

Apple raspberry bars are a delicious dessert that blends the sweetness of apples with the tartness of raspberries. These bars are perfect for any occasion and are easy to bake. However, there are several tips that you can follow to make your apple raspberry bars even more delicious.

Choose the Right Apples

The key to making delicious apple raspberry bars is choosing the right apples. It's important to choose apples that are firm and tart, and that hold their shape when baked. Granny Smith apples are a good option as they are tart, firm, and hold up well when baked. Other good apple options for apple raspberry bars include Honeycrisp, Braeburn, or Jazz apples.

Picking the Right Raspberries

When choosing raspberries, it's important to choose raspberries that are fresh and plump. Look for raspberries that are deep red in color and have a firm texture. Avoid raspberries that are mushy, discolored, or have moldy spots.

Use the Right Baking Dish

The right baking dish can make a big difference in the success of your apple raspberry bars. It's important to use a baking dish that is the right size and material. A glass or ceramic baking dish are good options as they conduct heat evenly and allow the bars to bake evenly. Avoid using a metal baking dish as it can cause the bars to brown too quickly on the bottom.

Line Your Baking Dish with Parchment Paper

Lining your baking dish with parchment paper is a simple step that can make a big difference. Parchment paper prevents the bars from sticking to the dish and makes it easier to remove them from the dish. It also makes cleaning up a breeze.

Preheat Your Oven

Preheating your oven is important to ensure that your apple raspberry bars bake evenly. Preheat your oven to the recommended temperature before you start baking. This will allow your oven to reach the right temperature and bake your bars to perfection.

Don't Overmix the Batter

Overmixing the batter can cause the bars to be tough and dense. To avoid this, mix the batter until just combined. This will result in a lighter and fluffier texture.

Use Fresh Ingredients

Fresh ingredients are key to making delicious apple raspberry bars. Use fresh apples and raspberries to ensure maximum flavor. Avoid using canned or frozen fruit as it can make the bars soggy and change the texture.

Add Some Cinnamon

Cinnamon is a great spice that adds warmth and depth to apple raspberry bars. Adding a sprinkle of cinnamon to the batter or on top of the bars before baking can add a delicious flavor. You can also add nutmeg or cloves for more depth.

Let Your Bars Cool Before Cutting

Allow your apple raspberry bars to cool completely in the pan before cutting them. This will ensure that they set properly and won't fall apart when you cut them. You can also refrigerate the bars to make them easier to cut.

Wrap Leftover Bars Properly

If you have leftover apple raspberry bars, it's important to store them properly to maintain their freshness. Wrap them tightly in plastic wrap or aluminum foil and store them in the refrigerator for up to a week. You can also freeze them for up to three months.

Conclusion

Following these tips can help you make delicious apple raspberry bars that are sure to impress. Remember to choose the right apples and raspberries, use the right baking dish, preheat your oven, and use fresh ingredients. Don't overmix the batter and add some cinnamon for extra flavor. Let your bars cool before cutting and wrap leftover bars properly. Enjoy your delicious apple raspberry bars!
