1 Royal Gala apple - peeled, cored and sliced
1 cup white wine
¼ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon vanilla extract
⅓ cup golden raisins

Steps:

  • Melt butter in a skillet over low heat. Add apples, and increase the heat to medium-high. Cook for 5 minutes, stirring occasionally. Stir in the white wine, brown sugar, cinnamon, vanilla, and golden raisins. Cook over medium heat until the liquid has reduced and is thick.

Personally, I have never been a lamb eater. However, this recipe for grilled lamb chops is superb. The lamb is succulent and the sauce is such a flavor combination you will want to make this frequently. This is a recipe for those people who don't even like lamb -- as it made a true convert out of me. It is a great sauce for beef and poultry as well, with a definite East Indian flavor.

¼ cup butter
1 tablespoon olive oil
3 cups chopped onion
1 clove garlic, crushed
2 tablespoons curry powder, or to taste
1 tablespoon ground coriander
1 tablespoon ground cumin
2 teaspoons salt, or to taste
2 teaspoons white pepper
1 teaspoon dried thyme
½ lemon (including peel), seeded and finely chopped
3 cups apples - peeled, cored, and chopped
1 cup applesauce
⅔ cup dark raisins
⅔ cup golden raisins
1 tablespoon water, if needed
6 (4 ounce) lamb chops
1 teaspoon seasoned salt

Steps:

  • In a saucepan over medium heat, melt the butter with olive oil, and cook the onions and garlic until the onion is translucent, about 8 minutes. Stir in curry powder, coriander, cumin, salt, white pepper, thyme, lemon, apples, applesauce, dark raisins, and golden raisins until thoroughly combined. Bring the mixture to a boil, turn down the heat to a simmer, cover, and simmer the sauce until it has the consistency of applesauce and the raisins are plump and starting to break apart, about 1 hour. Mix in a tablespoon of water if sauce starts to become too thick.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate. Sprinkle the lamb chops with seasoned salt.
  • Grill on the preheated grate until the chops are well-browned, cooked to your desired color of pink inside, and show grill marks, 3 to 5 minutes per side for medium-rare. An instant-read thermometer inserted into the center of a chop, not touching bone, should read about 145 degrees C (65 degrees C). Serve the lamb chops with the sauce on the side.

4 apples, cored, peeled and cubed
1 c jam, any flavor (peach/apricot)
1/2 c water
4 Tbsp brown sugar
1 c golden raisins
1 tsp cinnamon
1/3 c maple syrup
4 large thick center cut loin chops
4 Tbsp good olive oil
1 Tbsp worcestershire sauce
1/4 tsp black pepper

Steps:

  • 1. Add cubed apples to medium sauce pan. Stir in water, brown sugar, raisins, jam, cinnamon, maple syrup or jam and salt.
  • 2. Place sauce pan over medium heat and cook until tender about ten minutes.
  • 3. Season pork chops and put in a skillet with hot olive oil and add the Worcestershire sauce.
  • 4. Cook for 6-7 minutes per side. Do not over cook, only until just done in middle of the chop or the meat will be dry and tough.
  • 5. When chops are browned and almost done, add the apple mixture to the skillet and simmer for two minutes.
  • 6. Place the pork chops onto platte3r, top with the raisin mixture and drizzle any sauce left in the pan over the top of the chops!

1 cup half and half milk

The trick is to use ricotta cheese and egg whites to lighten the batter--then you'll get nice fluffy pancakes every time. Serve these with a batch of apple compote with some golden raisin action and you'll be a winner every time.

5 tablespoons unsalted butter
4 Granny Smith apples, peeled and cut into 1/2-inch dice, and tossed with the juice of 1 lemon
1 whole cinnamon stick
2 star anise
1/4 cup packed dark or light brown sugar
3/4 cup apple cider
1 cup maple syrup
1 cup golden raisins
1 cup pumpkin puree (canned is okay!)
1 cup store-bought or homemade ricotta
3/4 cup whole milk
1 teaspoon vanilla extract
4 large eggs, separated
2 cups all-purpose flour
3/4 cup granulated sugar
1 heaping teaspoon baking powder
1/2 teaspoon cinnamon
Kosher salt
Unsalted butter, as needed
Powdered sugar (optional)

Steps:

  • For the compote: Melt the butter in a large saucepan over medium heat. Add the apples, cinnamon stick, star anise, and brown sugar. Cook until the apples are softened, about 4 minutes, then add the cider. Bring the mixture to a boil and reduce to a simmer (BTB, RTS), then continue cooking until the liquid has reduced by half.
  • Add the maple syrup and raisins. Simmer for another 3 to 4 minutes or until slightly thickened. Remove from the heat and serve spooned over the pancakes, dusted with powdered sugar if desired. Try not to eat too many.
  • For the pancakes: Preheat the oven to 200 degrees F.
  • In a medium bowl, combine the pumpkin, ricotta, milk, vanilla, and egg yolks. In a large bowl, combine the flour, granulated sugar, baking powder, cinnamon, and a pinch of salt. Make a hole in the center of the flour mixture and add the pumpkin mixture and mix gently to combine.
  • In a medium bowl, combine the egg whites with a pinch of salt. Using an electric mixer or whisk, beat the egg whites until they hold stiff peaks and look very fluffy, like snowdrifts.
  • Using a rubber spatula, add a small scoop of the egg whites and mix it into the batter to lighten the mixture. Once combined, scoop a third of the egg whites into the pumpkin batter and fold to gently combine. Repeat this process two more times until all the whites have been added. Do this gently but quickly--the idea is to not squish the air out of the egg whites. This is the secret to keeping the pancakes fluffy!
  • Place a griddle over medium-high heat. When the pan is hot, drop a pat or two of butter onto the griddle. Once melted, schmear the butter around and wipe up any excess with a paper towel.
  • Using a medium ice cream scoop or a small ladle, pour the batter onto the buttered griddle to create 3-inch pancakes. Let the pancakes cook until bubbles appear on the surface, burst, and then stay open--this will take about 5 minutes. Flip the pancakes and cook the second side until golden brown. Place the cooked pancakes on a sheet tray and place in a warm oven. Re-butter the griddle and repeat until all the batter is gone or everyone is full. Hold the finished pancakes in the warm oven.

1/2 pound whole wheat shells or penne pasta
4 golden apples, cored and chopped
1 cup cloudy apple cider
3 tablespoons brown sugar
A handful golden raisins
1 teaspoon ground cinnamon
4 large center cut pork loin chops, 1 1/2-inch thick
Black pepper
2 tablespoons extra-virgin olive oil
2 tablespoons butter
1 rounded tablespoon all-purpose flour
2 cups milk
1/2 pound extra-sharp white cheddar
A few grates nutmeg, to taste
Dash hot sauce
2 cups broccoli tops, cut into small florets
2 tablespoons spicy brown or grainy Dijon mustard
1/4 cup maple syrup

Steps:

  • Heat a large pot of water for pasta. Season water with salt and cook pasta to al dente.
  • Add apples to a medium pot and stir in cider, sugar, raisins, cinnamon and a pinch of salt. Place pot over medium-high heat and cook until tender, about 12 minutes.
  • Season chops with salt and pepper. Heat 2 tablespoons extra-virgin olive oil in a skillet over medium-high heat. Add chops and cook 6 to 7 minutes on each side.
  • While chops cook, heat 2 tablespoons butter in a sauce pot over medium heat. Whisk in flour and cook a minute then whisk in milk and season with salt and pepper. Grate cheese and stir into sauce and season with nutmeg, to taste, and a dash of hot sauce. Reduce heat to low.
  • Add broccoli to pasta last 2 minutes of cook time. Drain and return to pasta pot. Add cheese sauce and stir to coat.
  • Add mustard and syrup to chops and glaze, 1 minute.
  • Serve pork with apple sauce, macaroni and cheddar with broccoli along side.

1/2 c butter, softened
1 1/3 c brown sugar
2 large eggs
2 c musselman's apple sauce
2 c flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt

1 c dark seedless raisins

Steps:

  • 1. In a mixing bowl equipped with a paddle, mix softened butter on medium speed until creamy and light. Add brown sugar and beat until well blended. Add eggs, one at a time, beating on medium until smooth. Stir in apple sauce. In a separate bowl, mix flour, baking soda, spices and salt. Add flour mixture to butter mixture and combine just until smooth. Plump raisins in hot water for about 10 minutes. Stir in raisins.
  • 2. Pour batter into greased half size sheetpan. Bake at 350 degrees for 20 - 25 minutes or until a toothpick inserted in center comes out clean. Remove from oven and cool on wire racks.
  • 3. Icing: 1/4 c. butter, 1 qt. powdered sugar, 1/4 c. milk, 1 tsp. vanilla. In a saucepan, heat butter until lightly browned. Remove from heat and whisk in powdered sugar and beat until smooth, adding milk as needed to produce a spreadable consistency. Stir in vanilla. Spread the icing evenly over the cooled cake and cut into 24 bars. ENJOY!

4 whole cloves
1 pinch kosher salt

Steps:

  • Heat vegetable oil in a saucepan over medium heat. Cook and stir garlic and shallot in hot oil until fragrant, 1 to 2 minutes.

2 medium oranges
1 medium apple, cored,chopped
2 tablespoons finely chopped onions
2/3 cup fine dry breadcrumb
1 cup unsweetened apple juice
1 tablespoon cornstarch
1/4 teaspoon ground cinnamon
1/4 cup raisins
