APPLE-RAISIN COLE SLAW WITH SOUR CREAM DRESSING
I usually use vinaigrette dressings on my cole slaws, but I needed one that was more conventional and less pickle-y to take to an office pot-luck. This one has a more familiar creamy dressing and nice sweet and tangy flavors.

Steps:
- Combine the mayonnaise, sour cream, brown sugar, and vinegar. Whip with a fork and set aside while you prepare the salad.
- Shred or finely slice the cabbage.
- I used 1 sweet-tart Jonagold and 1 sour Granny Smith apple, but you can use any variety you like. Core and chop (I did not peel them).
- Peel and coarsely grate the carrots.
- I used half golden and half black raisins. I think dried cranberries would be even better. You can use more than 1 cup if you like.
- Toss cabbage and fruits in a large bowl. Dress and toss again to coat everything in mayonnaise-sour cream mixture. Allow to marinate in the refrigerator for a few hours.
- Garnish with nuts just before serving. (The nuts will get soggy if you add them at the same time as everything else.)

Ingredients
The ingredients for this recipe are relatively simple and easy to find at any grocery store. You will need:- 1 small head of green cabbage, finely shredded
- 2 medium apples, diced (I recommend using Granny Smith apples for their tartness and crisp texture)
- 1/2 cup of raisins
- 1/2 cup of mayonnaise
- 1/4 cup of sour cream
- 2 tablespoons of apple cider vinegar
- 1 tablespoon of honey
- Salt and pepper to taste
Preparation
To prepare the cole slaw, start by finely shredding the cabbage and placing it in a large mixing bowl. Next, add the diced apples and raisins to the cabbage, and stir to combine the ingredients. In a separate mixing bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, and honey until well combined. This will be the dressing for the cole slaw. Pour the dressing over the cabbage mixture, and stir until all of the ingredients are evenly coated. Season the mixture with salt and pepper to taste.Serving Suggestions
This apple raisin cole slaw with sour cream dressing can be served as a side dish with a variety of meals. It pairs particularly well with grilled chicken, pork chops, or pulled pork sandwiches. It can also be served as a light lunch or snack.Variations
While the apple raisin cole slaw with sour cream dressing is already a delicious and unique recipe, there are also many variations that can be made. Here are a few ideas to help you get creative with your cole slaw:- Try using red cabbage instead of green cabbage to add a pop of color to the dish.
- Add some chopped walnuts or pecans for a crunchy texture.
- Replace the raisins with dried cranberries for a slightly tart flavor.
- Instead of using honey in the dressing, try using maple syrup for a unique twist.
- Add a dash of cayenne pepper to the dressing for a bit of heat.
