APPLE-RAISIN COLE SLAW WITH SOUR CREAM DRESSING

Apple-Raisin Cole Slaw with Sour Cream Dressing image

I usually use vinaigrette dressings on my cole slaws, but I needed one that was more conventional and less pickle-y to take to an office pot-luck. This one has a more familiar creamy dressing and nice sweet and tangy flavors.

Number Of Ingredients 9

1/3 cup(s) mayonnaise or miracle whip
1/3 cup(s) sour cream
1 tablespoon(s) brown sugar
1 tablespoon(s) apple cider vinegar
1/2 - green cabbage
2 - apples
2 - carrots
1 cup(s) raisins
1 cup(s) chopped pecans

Steps:

  • Combine the mayonnaise, sour cream, brown sugar, and vinegar. Whip with a fork and set aside while you prepare the salad.
  • Shred or finely slice the cabbage.
  • I used 1 sweet-tart Jonagold and 1 sour Granny Smith apple, but you can use any variety you like. Core and chop (I did not peel them).
  • Peel and coarsely grate the carrots.
  • I used half golden and half black raisins. I think dried cranberries would be even better. You can use more than 1 cup if you like.
  • Toss cabbage and fruits in a large bowl. Dress and toss again to coat everything in mayonnaise-sour cream mixture. Allow to marinate in the refrigerator for a few hours.
  • Garnish with nuts just before serving. (The nuts will get soggy if you add them at the same time as everything else.)

In recent years, cole slaw has become an increasingly popular side dish for many meals. It is a great way to incorporate vegetables into your diet, while still enjoying a flavorful and satisfying dish. One popular variation of cole slaw is the apple raisin cole slaw with sour cream dressing. This recipe uses a combination of crisp apples, sweet raisins, and a tangy sour cream dressing to create a unique and delicious cole slaw.

Ingredients

The ingredients for this recipe are relatively simple and easy to find at any grocery store. You will need:
  • 1 small head of green cabbage, finely shredded
  • 2 medium apples, diced (I recommend using Granny Smith apples for their tartness and crisp texture)
  • 1/2 cup of raisins
  • 1/2 cup of mayonnaise
  • 1/4 cup of sour cream
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of honey
  • Salt and pepper to taste

Preparation

To prepare the cole slaw, start by finely shredding the cabbage and placing it in a large mixing bowl. Next, add the diced apples and raisins to the cabbage, and stir to combine the ingredients. In a separate mixing bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, and honey until well combined. This will be the dressing for the cole slaw. Pour the dressing over the cabbage mixture, and stir until all of the ingredients are evenly coated. Season the mixture with salt and pepper to taste.

Apple raisin cole slaw with sour cream dressing is a refreshing and healthy salad that can be served as a side dish or a main meal. It is perfect for any occasion, from picnics to dinner parties. The combination of sweet and sour flavors of apples, raisins, and sour cream dressing makes this salad unique and delicious. In this article, we will share some valuable tips on how to make the perfect apple raisin cole slaw with sour cream dressing recipe.

Tips for Making the Cole Slaw

1. Choosing the Right Ingredients
The key to making a delicious apple raisin cole slaw with sour cream dressing recipe is to choose the right ingredients. For the cabbage, you can use green cabbage, red cabbage, or a combination of both. However, it is recommended to use a mix of both as it adds color and texture to the salad. Make sure to choose fresh and firm cabbages without any blemishes. When it comes to apples, choose firm and crisp apples such as Granny Smith or Honeycrisp. These apples have a sweet and tart flavor that balances well with the sour cream dressing. For the raisins, you can use regular raisins or golden raisins, depending on your preference.
2. Preparing the Vegetables
Before making the cole slaw, it is essential to prepare the vegetables properly. First, remove the tough outer leaves of the cabbage and cut it into quarters. Remove the core and slice it into thin strips. You can also use a food processor or mandoline to make thin and even slices. Once the cabbage is sliced, place it in a large bowl and sprinkle it with salt. Mix well and let it sit for at least 30 minutes to draw out excess water. After 30 minutes, rinse the cabbage under cold running water and squeeze out the excess water. For the apples, peel and core them, and slice them into thin strips. Sprinkle them with lemon juice to prevent them from turning brown.
3. Adding the Dressing
The sour cream dressing is the highlight of this cole slaw recipe. To make the dressing, combine sour cream, mayonnaise, apple cider vinegar, honey, salt, and pepper in a bowl. Whisk until smooth and creamy. When adding the dressing to the cole slaw, it is essential to do it gradually. You do not want the vegetables to be swimming in dressing. Add a little at a time and mix well. You can always add more if needed.

Ways to Serve the Cole Slaw

1. As a Side Dish
Apple raisin cole slaw with sour cream dressing is an excellent side dish for barbecues, picnics, and family gatherings. It complements grilled meats such as chicken, pork, and beef. You can also serve it with sandwiches, burgers, and hot dogs.
2. In a Wrap
Another way to enjoy apple raisin cole slaw with sour cream dressing is to wrap it in a tortilla. Add some sliced grilled chicken or turkey to the wrap for a complete meal.
3. As a Main Meal
Apple raisin cole slaw with sour cream dressing can also be served as a main meal. Add some grilled shrimp or salmon to the cole slaw for a healthy and delicious meal. You can also add some chopped nuts such as almonds or walnuts for extra crunch.

Conclusion

Apple raisin cole slaw with sour cream dressing is a flavorful and healthy salad that is easy to make. By following the tips mentioned above, you can create a delicious and refreshing salad that your family and friends will love. Whether you serve it as a side dish or a main meal, this cole slaw is sure to be a hit.
