EASY CINNAMON APPLE RAISIN BREAD

Easy Cinnamon Apple Raisin Bread image

This is an easy and delicious bread to prepare. Even better you only need one mixing bowl because you can throw all of the ingredients right in! Feel free to tweak the ingredients to your liking...add more cinnamon...add nuts, etc. I hope you enjoy it! Edited: I have also tried out the bread by using 1/2 whole wheat pastry flour and 1/2 regular flour, a tbl of wheat germ and less sugar to make it a tiny bit "healthier". It came out just as nice as the original.

CINNAMON RAISIN AND APPLE BREAD (ABM / MACHINE)

Cinnamon Raisin and Apple Bread (Abm / Machine) image

This is the nicest spicy fruit loaf I ever made. It is wonderfully moist and really scrumptious! (I make a fruit loaf of one sort or another every other day, and change things a bit from time to time. This is my absolute favourite combination). A note regarding my ingredients - my dried raisins and peel are really quite dry so I increase the water to about 244g (about an extra 3/4 tsp). This means I deliberately make it with the dough looking like it's way too wet during kneading, but the very dry fruit soaks up the excess water. My loaves work out fine despite looking over-moist to start with. I've found through experience that for any bread that will have dried ingredients added late in the kneading process it can be necessary to adjust the water quantity subtly according to how dried the fruit/grains etc are. I use part margarine part butter to reduce fat content slightly. No reason really not to use all butter instead. Butter is nicer :) Makes a loaf of approx 1 1/2 lbs.

Categories     Yeast Breads

Time 1h

Yield 10-12 serving(s)

Number Of Ingredients 17

240 ml water (at Room Temperature)
350 g white bread flour
1/4 teaspoon vitamin C powder (a flour improver, required if using the wheat bran)
5 g salt (1 TSP, I use 'Lo-Salt')
8 g firm margarine
5 g butter
13 g nonfat dry milk powder (1 1/2 TBLSP approx.)
4 g wheat bran (2 TSP, very heaped)
18 g demerara sugar (1 TBLSP, Brown sugar, basically)
3 1/4 g bread machine yeast
100 g dried seedless raisins
16 g dried mixed citrus peels (2 TSP Heaped)
4 g ground cinnamon (1 TSP heaped)
1 dash nutmeg, to taste (freshly grated)
1 pinch ground cardamom, next to nothing
40 g apples (peeled & chopped into 1/3 inch chunks)
4 g ground cinnamon, mixed with the apple (1 TSP heaped)

Steps:

  • Remove pan from bread machine and place on electronic scales and zero them.
  • Pour in the water (240ml water weighs 240 grams) and weigh in the rest of the dough ingredients in order.
  • Replace the pan in the bread machine and start machine on a raisin or equivalent 'speciality' setting. I prefer 'normal' crust for this.
  • In small bowl weigh the raisins and dried mixed citrus peel. Add the spices and mix together.
  • Into a second small bowl, peel about 1/3 of an average size eating apple (I usually have Braeburn apples handy but pretty much any apple is fine except the tasteless ones like Golden Delicious and Gala). Chop into small chunks somewhere between roughly 1/4 and 1/3 inch in size. Once in the bowl, sprinkle with another teaspoon of ground cinnamon and stir with spoon to cover the bits well (to take the moistness off the sides of apple bits so they mix in better).
  • Add dried fruit & spice mix at 4 minutes before end of final kneading or at the beep if you trust your machine not to mash the fruit like mine always does. (My LG machine beeps nine minutes before end of final kneading which is far too soon - it can reduce dried fruit to the size of grains of sugar during that time!).
  • If you trust your machine not to mash the apple then you could maybe add it a minute or so before kneading finishes. I don't trust mine in the slightest so here's what I do --
  • Wash hands in very cold water and dry well just before the final kneading completes then --.
  • -- when kneading has completed, quickly add the chopped apple and quickly mix it well by hand. (Shouldn't need to remove pan from bread machine to do this (unless it's in an awkward place! :).
  • Slightly more stuff to do for this loaf than usual, but it's absolutely worth it!

APPLE CINNAMON RAISIN PITAS (BREAD MACHINE)

Apple Cinnamon Raisin Pitas (Bread Machine) image

I used to buy these breakfast "pitas" from the grocery store, but figured out how to make them at home - for a heck of alot less. They're more like small, flatbreads, and I slice them in half, toast them, and spread them with peanut butter, honey, or jam. Yum! They're not very sweet, as there isn't much sugar in them.

Provided by Katzen

Categories     Yeast Breads

Time 3h10m

Yield 12 pitas, 12 serving(s)

Number Of Ingredients 9

2 cups whole wheat flour
1 1/2 cups bread flour or 1 1/2 cups all-purpose flour
1 tablespoon dry yeast
1 1/4 cups warm water (120-130F degrees)
1/2 teaspoon salt
1 tablespoon sugar or 1 tablespoon honey
1/2 teaspoon cinnamon
1 cup apple, chopped
1 cup raisins

Steps:

  • 1. Place ingredients except apples and raisins in bread machine in order that your machine specifies.
  • 2. Set to "dough" setting and allow to complete cycle, adding the apples and raisins when your machine alerts you to add nuts/fruit. I actually have found that kneading these in by hand is actually easier, as they're a bit finicky to get worked through the dough.
  • 3. Separate into 10 balls. Press each ball into a 4" round with your hands - you'll likely need to stuff some raisins and apples back in - it's worth it. Place on nonstick cookie sheets and allow to rise for 30 minutes.
  • 4. Preheat oven to 500. Flip rounds, then place in oven for 5 minutes, flip again; turn oven down to 350 and bake for 15-20 minutes longer, until cooked through.
  • 5. Remove from pan onto clean towel and cover while cooling.

75g sourdough starter (1/4 cup)
For Coating the Proofing Basket
2-3 Tbsp bran flakes (simply flouring the proofing basket to prevent sticking is fine too)

Steps:

  • Addition Prep
  • You can use pre-made apple sauce, or you can peel and core two apples, and then cook and mash the pieces. If using the microwave to cook the apples, simply put small pieces in a glass bowl, cover, and cook until they're soft enough to mash. If using a saucepan, you can cook the apple pieces in the 50g of water listed under Additions, rather than adding that water in later when mixing up the Addition.
  • Combine all of the ingredients in the Additions list in a small bowl, and set it aside to cool. The raisins and nuts will soak up some of the liquid.
  • Dough Mixing and Bulk Fermentation
  • In a large bowl, mix together the flour, water, and starter. Note the time and temperature as this is the start of bulk fermentation. Don't add the additions yet.
  • Cover and let the dough rest for about 30 minutes, and then stretch and fold the dough, going around the bowl several times until the dough is tighter. Click here to see a video of stretching and folding, as well as other forms of gluten development.
  • Cover and let the dough rest another 20-30 minutes, then add the Additions to the dough by folding or laminating them in (see the previous link for a lamination video as well).
  • Let the dough ferment until it's puffy and close to doubled. For my dough, this was about 10.5 hours at 71F room temperature.
  • Pre-shape, Bench Rest, and Shaping
  • Scrape the dough out onto a floured countertop. Sprinkle flour on the top of the dough and press it into a rectangular shape about 3/4 inch thick. Fold the dough in thirds and then in half. (See the gallery below for photos.)
  • Cover the dough with an inverted bowl and let it rest about 20 minutes.
  • Prepare a tea towel with flour and a layer of bran flakes in a circle or oval, depending on the shape of your baking vessel and final loaf. You can also spray your banneton with oil and coat it with bran flakes, or simply flour your banneton/liner and skip the bran flake coating on the bread crust.
  • Flip over your dough and shape it into a boule, batard, or oblong loaf. Shaping videos can be found here.
  • Using a bench scraper, flip the shaped dough onto the tea towel (or into your prepped banneton). Then lift the towel and place it into your banneton. The base of the bread should be facing up.
  • Final Proof and Baking
  • Cover and proof the dough at room temperature for 1-2 hours, or in your refrigerator overnight (8-14 hours).
  • Preheat your oven and baking vessel to 500F for 30 minutes.
  • Gently flip the dough out of the banneton and into the bottom of your baking vessel or onto parchment paper first for an easier transfer.
  • Score the top of the dough, then cover the vessel and return it to the oven.
  • Bake at:
  • 500F for 20 minutes lid on
  • 450F for 10 minutes lid on
  • 450F for 10 minutes lid off
  • The internal temperature of the bread should be at least 205F when it's done.
  • Remove the bread from the oven and let it cool a minimum of 2 hours before cutting.

CROISSANT APPLE RAISIN BREAD PUDDING

Croissant Apple Raisin Bread Pudding image

I loved the use of croissants in this recipe. It made the bready part of the recipe really light and flaky. And the custard part of the recipe ... well that was just delicious. This would be a wonderful dessert during the holidays.

Categories     Puddings

Time 50m

Number Of Ingredients 10

5-6 day old croissants split in half
1 can(s) 14 oz sweetened condensed milk
14 oz milk, (can be skim, whole, 1 or 2 percent)
21 oz apple pie filling (1 can)
1 c raisins
3 large eggs
1 tsp good vanilla extract
2 tsp dark rum extract
1 tsp saigon cinnamon
1/2 tsp nutmeg

Steps:

  • 1. Preheat oven at 350 degrees. Spray a 10x12 baking pan with baking spray. Split croissants in half and place bottom half, split side up in pan. Spoon apple pie filling on croissants, sprinkle raisins on top, and place top half croissants on mixture.
  • 2. Place liquid ingredients in blender or food processor with dry spices, and mix thoroughly. It will smell just like Egg Nog!! Pour liquid ingredients into pan and press down on croissants to make sure all liquid is absorbed.
  • 3. Place aluminum foil over pan and bake for approximately 25 minutes. Remove foil and bake 10-12 minutes more until croissants puff up. Let stand for about 10-15 minutes to set up. Serve with Vanilla or Butter Pecan Ice Cream. You can use your own apples after cooking them for a bit on the stove with some sugar and spices, instead of the pie filling. This is a great dessert that will draw lots of compliments and most of the ingredients can be purchased right off the shelf! You can use different kinds of fruits. Make this your own, but the Rum Extract is an important ingredient. Please don't leave it out.

Apple Raisin Bread Recipes: A Delicious and Healthy Treat

Bread recipes are some of the most versatile and varied around. From basic white bread to sourdough, from cinnamon rolls to focaccia, there is something for every taste and occasion. One classic recipe that combines the sweetness of fruit with the comforting texture of bread is apple raisin bread. This bread is perfect for breakfast or brunch, with a cup of coffee or tea, or as a snack any time of day. Not only is it delicious, but it is also relatively easy to make and can be customized to suit different dietary needs and preferences.

Ingredients

The basic recipe for apple raisin bread typically calls for the following ingredients:

  • 3 cups of all-purpose flour
  • 1/2 cup of granulated sugar
  • 1/2 cup of brown sugar
  • 1 tablespoon of baking powder
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon of salt
  • 1/2 cup (1 stick) of unsalted butter, melted and cooled
  • 3 large eggs, beaten
  • 1/2 cup of milk
  • 1 medium-size apple, peeled and chopped
  • 1/2 cup of raisins

Additional ingredients that can be added or substituted depending on personal taste include chopped nuts, dried cranberries, grated carrots, or mashed bananas.

Directions

To make apple raisin bread, start by preheating the oven to 350°F (180°C). Grease a loaf pan or line it with parchment paper. In a large bowl, whisk together the flour, sugars, baking powder, cinnamon, nutmeg, and salt until well combined.

In another bowl, mix the melted butter, beaten eggs, and milk until smooth. Pour the wet ingredients into the dry ingredients and stir until just combined. Add the chopped apple and raisins and mix until evenly distributed.

Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Variations and substitutions

As mentioned earlier, apple raisin bread is a versatile recipe that can be adapted to suit different tastes and dietary needs. Here are some ideas for variations and substitutions:

  • For a healthier version, use whole wheat flour or a mixture of all-purpose and whole wheat flour. Replace some or all of the sugar with honey or maple syrup. Replace the butter with coconut oil or avocado oil, or use half butter and half unsweetened applesauce.
  • For a vegan version, replace the eggs with flaxseed meal or chia seeds. Mix 1 tablespoon of ground flaxseed or chia seeds with 3 tablespoons of water for each egg, and let the mixture sit for 5 minutes to thicken. Use non-dairy milk, such as almond or soy milk, instead of regular milk.
  • For a gluten-free version, use a gluten-free flour blend or almond flour. Be aware that gluten-free flours may behave differently than regular flour, so you may need to adjust the baking time or add a binding agent like xanthan gum.
  • For a fruitier version, add other fruits like chopped pears, mashed bananas, or dried cranberries. You can also replace the apple and raisins with other dried fruits like cherries, apricots, or chopped dates.
  • For a nuttier version, add chopped nuts like walnuts, pecans, or almonds. You can also replace some of the flour with ground nuts for a richer, denser texture.

Whichever variation or substitution you choose, apple raisin bread is sure to be a hit with friends and family. It is a comforting, homey treat that is both satisfying and nourishing. So next time you want to bake something special, try making a loaf of apple raisin bread and enjoy the delicious results!

Valuable Tips When Making Apple Raisin Bread Recipes

Making apple raisin bread is a delightful treat for those who love the combination of sweetness, tartness, and a soft, chewy texture. It is perfect for breakfast or as a snack, accompanied by a cup of coffee or tea. Here are some valuable tips that can help you make delicious apple raisin bread at home:
Tip #1: Choose the Right Apples
Selecting the right type of apples is crucial to the success of this recipe. The ideal apples for apple raisin bread are those that are firm, tart and crisp. Granny Smith apples are a popular choice because they hold their shape and retain their tartness when cooked. However, you can also use other varieties like Honeycrisp, Braeburn, or Jonathan.
Tip #2: Soak Raisins before Mixing
Soaking raisins before adding them to your recipe helps to keep them plump and moist while baking. You can soak them for about 10 minutes in hot water or apple juice. Remember to drain them well before adding them to the dough as excess liquid can affect the texture of the bread.
Tip #3: Use Bread Flour
Bread flour is ideal for making bread as it contains more protein than all-purpose flour. This gives the bread a better structure, making it rise higher and have a chewier texture. While you can use all-purpose flour, bread flour is recommended for better results.
Tip #4: Use Cinnamon for Added Flavor
Cinnamon is a common spice used in apple raisin bread recipes. It adds a warm, sweet aroma and flavor to the bread, making it more delicious. You can sprinkle cinnamon on top of the bread before baking or mix it in the dough for an evenly distributed spice flavor.
Tip #5: Add Honey for Natural Sweetness
Honey is a natural sweetener that adds flavor and richness to the bread. It also helps to keep the bread moist, making it more enjoyable to eat. You can substitute honey for sugar or add it in addition to sugar depending on your taste preference.
Tip #6: Don't Overmix the Dough
When mixing the dough, avoid overmixing as this can lead to a tough and dense bread. Mix the ingredients until they are just combined, and there are no large lumps of flour. Overhandling the dough can also cause it to rise unevenly and affect the texture of the bread.
Tip #7: Use a Bread Pan for Shaping
Using a bread pan to shape the dough gives the bread a uniform shape and makes it easier to slice. Grease the pan well with butter or oil before transferring the dough to it. You can also sprinkle flour on the surface of the dough before placing it in the pan to prevent it from sticking.
Tip #8: Bake at the Right Temperature
Baking at the correct temperature ensures that the bread is cooked evenly and has a golden brown crust. Preheat your oven to 350°F (180°C) and bake the bread for approximately 45-50 minutes or until a toothpick inserted in the center comes out clean. Avoid opening the oven door during baking as this can cause the bread to collapse.
Tip #9: Cool the Bread Before Slicing
Cooling the bread before slicing allows it to set and makes it easier to cut into neat slices. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. You can slice it once it has cooled down to your desired temperature.
Tip #10: Store Properly to Maintain Freshness
Proper storage ensures that the bread remains fresh for a longer time. Store the bread in an airtight container at room temperature for up to 3 days. You can also freeze the bread for up to 3 months by slicing it and wrapping it tightly in plastic wrap before placing it in a freezer bag. In conclusion, making apple raisin bread is an enjoyable and rewarding activity that yields delicious results. By following these valuable tips, you can create a perfect loaf that is soft, chewy, and packed with flavor. So get ready to whip up a batch of apple raisin bread and enjoy the scrumptious flavors of this mouth-watering treat!
